1 cup hot milk

Steps:

  • Melt butter in a skillet over medium-high heat; add flour, curry powder, and pepper. Cook and stir butter-flour mixture until smooth, 1 to 2 minutes. Gradually pour milk into butter-flour mixture while continuously stirring until curry sauce is smooth and thickened, about 5 minutes. Mix eggs into sauce and cook until eggs are heated, 2 to 3 minutes.
  • Serve curried eggs over toast.

½ sweet onion, minced
2 cloves garlic, chopped
1 teaspoon ground ginger
1 teaspoon ground cumin
1 ½ teaspoons ground turmeric

1 (14.5 ounce) can chopped tomatoes
1 (14 ounce) can coconut milk
1 teaspoon salt
1 pound cooked and peeled shrimp
2 tablespoons chopped fresh cilantro

Steps:

  • Heat the oil in a large skillet over medium heat; cook the onion in the hot oil until translucent, about 5 minutes. Remove the skillet from the heat and allow it to cool slightly, about 2 minutes. Add the garlic, ginger, cumin, turmeric, paprika, and ground chile (see Note) to the onion and stir over low heat. Pour the tomatoes and coconut milk into the skillet; season with salt.
  • Cook the mixture at a simmer, stirring occasionally, about 10 minutes. Stir the shrimp, fresh cilantro, and dried cilantro into the sauce mixture; cook another 1 minute before serving.

6 eggs
4 tablespoons unsalted butter
1 medium onion, peeled and chopped
1 garlic clove, peeled and crushed
2 tablespoons curry powder
2 tablespoons tomato paste
3/4 cup water
1 tablespoon lemon juice
salt & freshly ground black pepper, to taste
1 lemon, zest of
2 tablespoons fresh flat-leaf parsley, chopped

Steps:

  • Hard boil the eggs, using your favorite method. Cool slightly and peel. Cut them in half lengthwise.
  • Melt the butter in a frying pan and saute the onion and garlic, until onion is just soft.
  • Stir in the curry powder, tomato paste, water, lemon juice, salt and pepper. Allow the mixture to cook over a low heat until it is just bubbling.
  • Add egg halves to onion mixture and stir gently, until reheated through. Add a little more water if sauce gets too thick.
  • Add lemon zest and parsley. Stir again and serve while hot.

Curried eggs make their way onto my salad platters for parties and Christmas. These are a huge family favourite. This recipe was adapted from my mother's good old trusty recipe I remember as a child. To make it easier to peel your hard-boiled eggs, use older eggs and peel while still slightly warm. You can change this recipe into Devilled Eggs by replacing the curry powder and lemon juice with 2 teaspoon apple cider vinegar and 1 teaspoon Dijon mustard. My Egg Mayonnaise recipe is here, or on page 207 of 'The JOYful Table' cookbook.

2 tsp curry powder
2 tsp lemon juice
1/2 tsp Worcestershire sauce
Good pinch pink Himalayan salt

Steps:

  • Remove the egg shells while they are still slightly warm, then halve the eggs lengthwise. Carefully lift out the yolks using a teaspoon. Place the yolks into a small mixing bowl and mash with a fork. Add the remaining ingredients (except the garnish) to the bowl and mix until fluffy. Fill egg whites with the curried yolk mixture. I find it's easier to use 2 teaspoons to fill them, one for scooping up the mixture and the other to push it off with. Curried eggs can be made ahead and stored in an airtight container in the fridge for up to 4 days. Just before serving, sprinkle with a little paprika and parsley.

1 lb shrimp-already deveined
1 c butter-melted,add 1/2 flour
1 tsp salt and pepper
2 qt shrimp broth
1 tsp curry powder
1/2 tsp black pepper
1 lb rice- any kind
CONDIMENTS:
2 c each of coconut, boiled eggs, your choice of nuts, pineapple, peas, kernel corn, various onions, cheeses, mushrooms, black or green olives, and whatever else you want

Steps:

  • 1. Make the as directions say on package, or as I prefer, by browning the rice in a skillet with a little olive oil. When rice is slightly brown, turn down the heat to simmer and add enough water to rice to cover. Place laid on skillet and don't stir. Cook about 30 minutes.
  • 2. Rice should be fluffy not sticky, when all the water has been cooked out. Add your salt and pepper at this point and set aside.
  • 3. Wash the shrimp and put in pan with about two quarts of water. Cook on medium heat for about 15 minutes, then with a ladle with holes in it to drain, spoon out the shrimp. Save the shrimp broth for the sauce. Set aside.
  • 4. Add butter to saucepan and melt it on medium heat. Little bit at a time, add flour to the butter and stir with a whisk. It will get thick and that is ok.
  • 5. Pour the broth a cup at a time into the buttery mixture. Continue to whisk to smooth out the lumpy butter mixture. Turn heat down to simmer and finish adding the broth, whisking all the time. When the sauce is smooth, add the shrimp and stir it throughly. Add the curry, salt and pepper, stir. Cook about ten minutes more.
  • 6. Place shrimp curry in a bowl to set on table. If make earlier in day, place in small crockpot an set on low. In a lazy susan or small bowls add each of the condiments. Put rice in bowl too and set on table. Enjoy!!!

1/2 tablespoon tamarind paste, or a 1/2-inch ball of tamarind pulp (1/4 ounce) plus 1/4 cup warm water, or 1 tablespoon fresh lemon juice
2 teaspoons canola oil
1 shallot, chopped
1 garlic clove, minced
1 small serrano pepper, minced more to taste, or 1/2 teaspoon chili powder
1/2 teaspoon ground cumin
1/4 teaspoon ground coriander
1/2 teaspoon curry powder (optional)
1 (14-ounce) can diced tomatoes in juice
Salt
freshly ground pepper
Pinch of cayenne
1 to 2 eggs
1 tablespoon chopped cilantro
3/4 cup cooked basmati rice

Steps:

  • If using tamarind paste or a tamarind ball, soak in 1/2 cup warm water for 10 minutes, strain and reserve the water.
  • Heat the oil over medium heat in a wide, heavy saucepan or a deep, straight-sided skillet. Add the onion and cook, stirring often, until it is tender, about 3 to 5 minutes. Add the garlic and chili pepper and continue to sauté until the garlic is fragrant, about 30 seconds. Add the spices and stir together for a minute. Pulse the tomatoes with their juice a few times in a food processor or mini-chop, then add to the pan, along with salt and pepper to taste. Bring to a simmer and simmer over medium-low heat for 15 minutes, stirring often. Stir in the tamarind soaking water or lemon juice and the cayenne, taste and adjust seasonings. Simmer for 10 minutes.
  • For one serving, remove all but about 1/2 cup of the sauce from the pan and reserve for another time. Bring the sauce in the pan to a simmer. Break the egg or eggs into a teacup, and carefully tip into the tomato sauce. Cover the pan and simmer over low heat for 3 to 4 minutes, until the tops of the whites are set but the yellow yolks show through. It's important that the yolk be runny. Turn off the heat. Season the eggs with salt and pepper to taste and sprinkle with cilantro. Remove from the heat and serve over basmati rice.

  • Before You Cook If using any fresh produce, thoroughly rinse and pat dry Cooking Guidelines To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures: Steak and Pork 145° F (rest cooked meat, 3 minutes) | Seafood 145° F | Chicken 165° F | Ground Beef 160° F | Ground Turkey 165° F | Ground Pork 160° F 1 Cook the Rice Bring a small pot with 1 1/2 cups water and jasmine rice to a boil. 1/2 cup red curry paste
One 13.6-ounce can unsweetened coconut milk
1/4 cup peanut or almond butter, chunky or creamy depending on preference
2 tablespoons sugar
1 tablespoon fish sauce
Juice of 1 lime
Kosher salt
Vegetable oil, for frying
1 cup panko breadcrumbs
1 cup shredded sweetened coconut
3 large eggs
1 cup all-purpose flour
2 teaspoons garlic powder
1 1/2 teaspoons turmeric powder
Kosher salt and freshly ground black pepper
1 pound peeled and deveined jumbo shrimp, tails on and butterflied

Steps:

  • For the red curry dipping sauce: Heat the oil in a small saucepan over medium-high heat. Add the curry paste and stir frequently until fragrant, about 2 minutes. Add the coconut milk and whisk frequently until smooth and thickened slightly, about 3 minutes.
  • Whisk in the peanut butter until incorporated and the sauce is smooth. Remove the sauce from the heat and whisk in the sugar, fish sauce, lime juice and salt to taste. Let cool to room temperature, then transfer to a serving vessel, wrap with plastic and refrigerate at least 30 minutes before serving.
  • For the coconut shrimp: Heat 3 inches of oil in a deep pot or Dutch oven to 350 degrees F. Line a baking sheet with paper towels.
  • In a medium bowl, mix together the panko and sweetened coconut. In a second medium bowl, beat the eggs. In a third medium bowl, combine the flour, garlic powder, turmeric, 1 teaspoon salt and several grinds of black pepper to taste. Dredge the shrimp in the flour mixture, then the egg, then the panko mixture.
  • Working in batches, fry the shrimp until golden brown, about 3 minutes. Drain on the prepared sheet tray and immediately season with salt. Serve with the curry dipping sauce.

8 cardamom pods
2 cups unsalted tomato juice
1/2 teaspoon salt
1/3 cup nonfat yogurt
1/2 medium cucumber, peeled, seeded, and diced (1 1/2 cups)
1/4 teaspoon garam masala (a spice blend available at Indian groceries and specialty-food stores)
1/2 tablespoon fresh lemon juice
1 tablespoon chopped mint or cilantro
12 sprigs cilantro, for garnish

Steps:

  • Peel and devein shrimp, reserving shells and leaving tails intact. Cover; refrigerate.
  • Heat oil in a medium saucepan over medium-low heat. Add onions and garlic; cook, stirring often, until onions are translucent, 5 to 7 minutes. Reduce heat to low; add shrimp shells, curry, lemongrass, ginger, and cardamom. Cook, stirring often, until shells are pink and mixture is very aromatic, about 5 minutes.
  • Add 4 cups water, tomato juice, and salt. Raise heat; bring to a boil. Reduce heat to medium low and simmer, skimming off scum as necessary, about 1 hour.
  • Combine the yogurt, cucumber, garam masala, lemon juice, and chopped mint or cilantro; cover with plastic and refrigerate.
  • Strain stock, pressing on solids, into a clean medium saucepan. Return to a boil. Reduce heat so stock is at a bare simmer. Add shrimp; poach, adjusting heat as needed to maintain a bare simmer, 3 to 4 minutes. Transfer shrimp to a dish; cover with foil. Raise heat to medium high; simmer liquid until it is reduced by about half, about 20 minutes. Pour the sauce over shrimp; garnish with cilantro sprigs and serve with reserved cucumber relish.
