A delightful Shortbready type cookie with a lovely orange cream filling, I got this recipe out of one of my older cookbooks and thought I would share.

Number Of Ingredients 11

220 g butter
1/2 cup icing sugar
2 tablespoons grated orange rind
1 tablespoon cornflour
1 cup plain flour
1/2 cup self raising flour
icing sugar, extra
60 g butter
1 cup icing sugar
2 tablespoons orange juice
orange food coloring

Steps:

  • Cream butter, sifted icing sugar and rind till fluffy, Add cornflour mix well. Add sifted flours gradually, beat well till smooth.
  • Fill into a piping bag with star tube and pipe 2.5cm stars onto lightly greased oven trays, Bake in mod oven for 15 minutes until pale golden brown. Cool on racks.
  • Sandwich cookies together in pairs with orange cream filling, dust with icing sugar.
  • Orange Cream, beat soft butter with sifted icing sugar till smooth, add a few drops orange food colour and orange juice.

Chocolate Viennese Kisses image

This is my yearly cookie exchange recipe. They are easy, delicious and best of all I can fit 4 mini muffin tins in my oven at ones, so I can knock out 4 dozen at one baking. I love these with the special dark kisses, but you can use the milk chocolate ones, or even the hugs that Hershey makes. My kids love to help with these and they can even participate at a young age, they are that simple to make!

1 1/2 cups all-purpose flour
3/4 cup butter, chilled and cut into 1 inch pieces
1/4 cup granulated sugar
3 tablespoons sour cream
1 teaspoon vanilla
24 chocolate Hershey chocolate kisses, unwrapped

Steps:

  • Preheat oven to 350.
  • Grease two, 12 cup mini muffin pans and set aside.
  • In a large mixing bowl, combine flour, butter, and sugar. Beat at medium speed until mixture resembles coarse crumbles.
  • Add sour cream and vanilla. Beat at low speed until soft dough forms.
  • Shape dough into 1 inch balls. Place 1 ball into each prepared muffin cup.
  • Bake for 20 to 25 minutes or until edges are golden brown.
  • Remove from oven and immediately press kiss into center of each cookie. Let cool in pan 1 minute. Transfer to wire racks to cool completely.

NUTELLA KISSES

I love Nutella, so when I came across this cookie, I had to try it! The cookie tastes great, but I wanted it to be less crispy, more chewy. It has a chocolate kiss in the center-I made the recipe as is, but next time I will leave out the kisses in some (not a huge fan of plain milk chocolate).

1 3/4 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup nutella
1/2 cup butter, softened
1/2 cup sugar
1/2 cup light brown sugar
1 egg
1 teaspoon vanilla
24 Hershey chocolate kisses
sugar, for rolling cookie dough

Steps:

  • Preheat oven to 375*.
  • In a medium bowl, combine the flour, baking soda and salt, whisk to combine.
  • In a mixing bowl, combine the Nutella, sugars and butter. Cream for about 3 minutes, then add the vanilla and egg. Blend until combined.
  • Stir in dry ingredients just until combined.
  • Shape cookie dough into walnut-sized balls, then roll into the extra sugar. Place on cookie sheet about 4 inches apart.
  • Bake for 8 minutes, pull rack out and place a kiss into the center of each cookie. Cookie will get the cracks from this. Push rack back in and bake an additional 3 minutes.
  • Remove to a wire rack to cool.

GINGER KISSES

This is a yummy recipe that makes for a great treat. The original recipe calls for cream or 'mock' cream to sandwhich the kisses together with, but I have a slight variation and I use a nice custard filling to sandwhich them together! :)

50 g butter
1/2 cup sugar
1 tablespoon golden syrup
2 eggs
1 1/4 cups standard grade flour
1 teaspoon baking powder
1 teaspoon cinnamon
2 teaspoons ground ginger
1 tablespoon custard powder
6 tablespoons icing sugar
1 tablespoon butter
milk

Steps:

  • Preheat oven to 200°C.
  • Combine the butter, sugar and golden syrup in a medium saucepan.
  • Stir over a low heat until butter has melted and mixture is smooth.
  • Beat eggs until thick and mix in alternately with sifted flour, baking powder, cinnamon and ginger.
  • Bake small spoonfuls on greased trays for 10-12 minutes.
  • Let them cool down completely then sandwhich together with custard filling.
  • For the custard filling, mix icing sugar, custard powder and butter in a bowl until combine.
  • Add little bits of milk into the bowl to make the mixture turn into an icing. Don't make it too runny, but if you do, simply add in more icing sugar.
  • I found that when I sandwhiched the kisses together they didn't stay together and the custard filling ran a little bit but it tasted so good! So I wrapped the kisses with cellophane and let the filling set! : ).

1 1/2 cups water
4 tablespoons butter
4 cups white bread flour
1 tablespoon orange rind, dried
4 tablespoons sugar
1 teaspoon salt
2 teaspoons fast rise yeast or 4 teaspoons active dry yeast
3/4 cup butter, softened
3 tablespoons orange rind, freshly grated
1 cup sugar

Steps:

  • Remove dough from your machine after the dough or manual cycle is completed.
  • Turn dough out onto a lightly floured surface and form a large ball.
  • Divide into 16 portions.
  • Form into balls, and coat each ball with softened butter.
  • Roll in orange-sugar mixture.
  • Place 8 balls into a 9" pie pan.
  • Allow to rise until dough doubles, about one hour.
  • Bake at 350 degrees or until just golden brown.
  • Success HInts: Use only the orange portion of the orange rind.

2/3 cup unsalted butter
1/3 cup sugar
1 egg yolk
2 eggs
1 1/3 cups flour
1/3 cup nuts, finely chopped
1/3 cup raspberry jam

Steps:

  • Pre heat oven to 350 degrees.
  • Cream butter and sugar, beat well then add yolk and 1 egg; mix just until flour is blende.
  • Cover dough with plastic wrap, chill for 45 minutes.
  • Pinch off walnut-size pieces of dought and shape into balls with floured hands. Put on ungreased cookie sheet, with a clean pencil or finger make a deep depression in the center of each ball. Beat remaining egga nd brush cookies with it, sprinkle with nuts.
  • Bake for 15 minutes or until golden, cool then fill depression with jam.
