CURRIED EGG SALAD SANDWICH RECIPE
Curry and onion powder add an exotic heat to the traditional egg salad sandwich, making it fit for an every day breakfast, lunch or elegant brunch.

Steps:
- Place the eggs in a saucepan and fill with water to cover the eggs by 1/2 inch or up to the first knuckle on your finger. Bring to a boil, cover and reduce to simmer for 12 minutes. Immediately transfer eggs to a bowl filled with ice and water and cool. Peel the eggs as you run them under cold water.
- Slice the eggs and place in a large bowl. Mash the eggs with a fork and set aside.
- In a small bowl mix the mayonnaise with the curry powder, onion powder, kosher salt and ground pepper. Add more seasonings to taste.
- Mix the curry mayonnaise into the mashed eggs and season to taste.
- Toast the bread and spread with butter if desired. Divide the egg salad evenly among the 4 pieces of bread and top with the watercress and radish sprouts. Top with bread if desired.

Found this recipe while browsing the sunmaidraisin.com website;- with a little bit of fine tuning. Whole milk plain yogurt replaces some of the mayonnaise. Skip the coconut if you don't like it. It's good either way.

- Combine the yogurt, mayonnaise, coconut (if using), green onion, curry powder, salt and black pepper.
- Stir in eggs and cashews.
- Divide and spread the egg salad mixture between four slices of raisin bread. Add the spinach leaves and top with the other four bread slices.
- Serve with fresh sliced mangoes and papayas!

- Preheat the oven to 400 degrees F.
- Heat the oil in a large ovenproof skillet over medium-high heat until smoking. Sprinkle the chicken breasts on both sides with salt and pepper. Put them in the pan in a single layer, and brown them 2 minutes on each side. Put the skillet in the oven and roast until the chicken is just cooked through, about 15 minutes. Remove from the oven and cool.
- Chop the cooled chicken and put it into a large bowl. Add the rest of the ingredients and toss. Season with salt and pepper.
- Spread 4 bread slices with mayonnaise, if you like, and spread with the curried chicken. Top with another slice of bread and serve.
