DEPRESSION CAKE I

This was my mother's, it has sugar, but no eggs, no butter and no milk. It's from the Depression-era.

Number Of Ingredients 10

1 cup shortening
2 cups water
2 cups raisins
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
1 teaspoon ground allspice
½ teaspoon ground cloves
2 cups white sugar
3 cups all-purpose flour
1 teaspoon baking soda

Steps:

  • In a saucepan combine the shortening, water, raisins, cinnamon, nutmeg, allspice, cloves and sugar. Simmer for 10 minutes. Remove form heat and let stand until cool.
  • Preheat oven to 350 degrees F (175 degrees C). Grease one 9x13 inch baking pan.
  • Stir the flour and baking soda into the cooled raisin mixture and mix until just combined. Pour batter into the prepared pan.
  • Bake at 350 degrees F (175 degrees C) for 45 minutes.

I actually got this recipe from a mystery book. It has been a huge hit in my family and my classroom because of the many variations possible. I have done a ton of different combos: cranberries, white morsels, and almonds; milk chocolate, dark chocolate, walnuts; cinnamon morsels, white morsels, and pecans; mint morsels and rice crispies; multiple colored raisins, various chocolate morsels, etc. Almost all combos come out if you give a little thought to flavors and textures. Also, for people who do not like "nuts" of any type; You can replace the 2 cups of "nuts" with rice crispy cereal. It adds bulk but does not alter the flavor much. I have also used a little oatmeal for filler. These are a GREAT pantry clean out cookie after the holidays.

Number Of Ingredients 10

- 1 cup melted butter (2 sticks)
- 1½ cups white sugar
- ¾ cups brown sugar
- 2 teaspoons vanilla
- 2 teaspoons baking soda
- 1 teaspoon salt
- 2 beaten eggs
- 2½ cups flour
- 1½ cups morsels (any combination)
- 2 cups chopped nuts (any combination; includes coconut and dried fruits)

Steps:

  • Preheat oven to 350°. Melt butter (microwave or stove top)
  • In mixing bowl, combine butter, white sugar and brown sugar. Add vanilla, baking soda and salt; combine well. Add eggs, combine completely.
  • Add half the flour (1 ¼ cups); all chips and nuts. Combine. Add the rest of the flour and mix thoroughly.
  • Drop by teaspoonfuls onto greased cookie sheets, 12 to a standard sheet (If the dough is too sticky, chill slightly.)
  • Bake for 10-12 minutes or until lightly browned. Let cool on sheet 2 minutes, remove from cookies sheets to wire rack.

1 package devil's food cake mix (regular size)
2 eggs
2 tablespoons butter, softened
3 tablespoons water
1/2 cup miniature semisweet chocolate chips

Steps:

  • Preheat oven to 350°. In a large bowl, combine cake mix, eggs, butter and water (batter will be thick). Fold in chocolate chips. , Drop by tablespoonfuls 2 in. apart onto baking sheets coated with cooking spray. Bake 10-13 minutes or until set and edges are lightly browned. Cool 2 minutes before removing to wire racks.

I love these cookies! They are sooo good & always come out perfectly done. Evryone I've ever made them for compliments them. (The only problem is it makes 10 dozen, althought I guess that could be a good thing....) I got this recipe from Joanne Fluke's book Peach Cobbler Murder.

Number Of Ingredients 10

2 cups melted butter
3 cups white sugar
1 1/2 cups brown sugar
4 teaspoons vanilla
4 teaspoons baking soda
2 teaspoons salt
4 beaten eggs
5 cups flour (you don't need to sift it)
3 cups chocolate chips (whatever you feel like or have on hand....dried fruit works well)
4 cups chopped nuts (optional, & again whatever you feel like or have)

Steps:

  • Melt the butter.
  • Mix in the white and brown sugar.
  • Add the vanilla, baking soda, salt and mix.
  • Add the eggs and stir it all up.
  • Then, add half the flour and all the chips and nuts.
  • Stir well.
  • Add the other half of the flour and mix.
  • Drop by teaspoons onto cookie sheets.
  • Bake at 350 F for 10-12 minutes.
  • Allow them to cool for two minutes, then transfer to a wire rack to finish cooling.

FORGOTTEN COOKIES

These meringues are crispy on the outside and marshmallow-y on the inside, with bits of chocolate throughout. The best part of this recipe is that you turn off the heat once the cookies go in the oven, so you can truly forget about them until the morning. A spring-loaded ice cream scoop makes fast work of forming the meringues and you can use any size you like.

Number Of Ingredients 6

3 large egg whites, at room temperature
Pinch of fine salt
3/4 teaspoon cream of tartar
1 cup superfine sugar
1 teaspoon pure vanilla extract
1 1/4 cups mini semisweet chocolate chips, plus more for garnish

Steps:

  • Position 2 oven racks in the center of the oven and preheat to 350 degrees F. Line 2 baking sheets with parchment.
  • Beat the egg whites and salt in a large bowl on medium speed until frothy. Add the cream of tartar and increase the speed to medium high. Beat in the sugar, 1 tablespoon at a time, then add the vanilla extract. Continue beating until the meringue is thick, glossy and holds stiff peaks, about 6 minutes. Gently fold in the chocolate chips with a rubber spatula.
  • Using a spring-loaded ice-cream scoop (or 2 spoons, using one to nudge the meringue off the other), scoop the meringue into mounds about 2 inches apart on the prepared baking sheets. Sprinkle each cookie with a few more chocolate chips.
  • Put the baking sheets in the oven, then immediately turn off the oven. Let the meringues stand in the oven until dry, at least 4 hours and up to overnight.
