CURRIED EGG FRITTATA

Number Of Ingredients 9

5 eggs
small handful cilantro (chopped)
1 tablespoon curry powder
1 teaspoon paprika
salt and pepper (adjust to taste)
2 tablespoons coconut oil or fat of choice
1 yellow onion (diced)
1 Serrano pepper (minced)
1 14.5 ounce can diced tomatoes, drained

Steps:

  • Preheat oven to 350°F.
  • In a bowl, add egg, cilantro and spices. Mix well and set aside.
  • Add oil to cast iron skillet on medium heat. Then add onion, serrano pepper and pinch of salt.
  • Once the onions turn soft, add tomatoes.
  • Cook for about 10 minutes, or until the tomatoes soften.
  • Pour the egg mixture into the skillet and quickly stir it with the onions and tomatoes. Let it sit undisturbed for about 5 minutes and then put the skillet in an oven for 5 minutes or until the top layer of the egg is cooked (I used a convection oven).

This is a quick and easy dairy-free, gluten-free, potato-free (contains white sweet potatoes, which are no relation) breakfast, brunch or light lunch food. I invented it today, and I think it's really tasty :) I like it with salad. It also reheats really well.

1 tablespoon vegetable oil
1 onion
1 medium white sweet potato
salt
black pepper
2 tablespoons mild curry paste
6 large eggs
chopped cilantro (to garnish)
lime wedge (to garnish)

Steps:

  • Preheat the broiler.
  • Peel and slice the onion.
  • Peel and cube the sweet potato.
  • Crack the eggs into a bowl and beat them with a fork until well mixed. Add a little salt an pepper.
  • Saute the onion and sweet potato, stirring frequently, over medium-high heat in the oil until the sweet potatoes are cooked through and beginning to brown. Add a little salt and pepper.
  • Add the curry paste and stir for about a minute.
  • Add the eggs, and stir until eggs start to set.
  • Leave on the stovetop for a few minutes more until about half-way cooked.
  • Place under the broiler until the top is cooked.
  • Cut into wedges and serve with cilantro and limes, if desired.

A delicious dish best eaten cold, and can be made with or without a crust. Baked in the oven, it comes out nice and solid. It keeps very well in the fridge but does not freeze well.

10 eggs
2 tablespoons curry powder
1 tablespoon turmeric powder
2 cups spinach (thinly-sliced, lightly packed)
1 cup mozzarella cheese (grated)
1/4 cup yellow onion (caramelized)
1/4 teaspoon salt (to taste)
black pepper (to taste)
1 pie crust (thin) (optional)

Steps:

  • Whisk the eggs together, then add the spices and whisk very well.
  • Add the remaining ingredients and pour into the crust (in a greased pie mold). You can keep some of the grated cheese aside to garnish the top of the quiche.
  • Bake at 350F for 30-35 minutes. Let it rest a while before cutting. If you aren`t using a pie crust, bake for about 25 minutes.
  • ******Caramelized onions are amazing and sweet. You can make them by thinly-slicing yellow onions, then cooking them at medium-low heat on the stove top in some oil and/or margarine. The longer and lower heat the better, but you can bring up the heat to make them quicker. It can take 15-45 minutes. Don`t stir them too often, you want them to brown underneath. Once they`re getting nice and brown, add some brown sugar, stir, and then add a bit of water. This will get all that delicious sticky flavor from the pan into your onions. If you don`t want to go through the trouble, you can just add thinly-sliced yellow onion and brown sugar to your mixture instead.

4 tablespoons unsalted butter
1 medium onion, peeled and chopped
1 garlic clove, peeled and crushed
2 tablespoons curry powder
2 tablespoons tomato paste
3/4 cup water
1 tablespoon lemon juice
salt & freshly ground black pepper, to taste
1 lemon, zest of
2 tablespoons fresh flat-leaf parsley, chopped

Steps:

  • Hard boil the eggs, using your favorite method. Cool slightly and peel. Cut them in half lengthwise.
  • Melt the butter in a frying pan and saute the onion and garlic, until onion is just soft.
  • Stir in the curry powder, tomato paste, water, lemon juice, salt and pepper. Allow the mixture to cook over a low heat until it is just bubbling.
  • Add egg halves to onion mixture and stir gently, until reheated through. Add a little more water if sauce gets too thick.
  • Add lemon zest and parsley. Stir again and serve while hot.

CRAB FRITTATA

Yet another way to make use of those big blue crabs we are catching. 1 crab gave us 1 cup of beautiful meat for this.I can't do what I suggest in the last step as I don't have a griller (broiler) so I finished it with the lid on for a couple of minutes to set the top. That worked fine and would be good for camping. Just cook the onion and potato slower and longer if you can't access a microwave.

1/3 cup cream
1/2 teaspoon grated lemon rind
5 drops Tabasco sauce (or to taste)
salt and pepper, to taste
3 tablespoons grated sharp cheddar cheese
1 large potato, cut into tiny dice
1 small onion, diced
1 tablespoon oil
1/4 cup diced red capsicum (bell pepper)
1 cup crabmeat, fresh frozen, canned

Steps:

  • Mix the eggs, cream, lemon rind, tabasco, salt and pepper together. Set aside.
  • Microwave onion and potato about 3 minutes (to speed up cooking).
  • Heat oil in frying pan over medium heat and brown potato and onion and cook them through.
  • Add the capsicum and cook a few minutes more.
  • Pour over the egg mix and scatter the crab across the top.
  • Cook gently for about 5 minutes or until almost set through, then place under a griller (broiler) to brown the top. Serve at once.
