Like fried cabbage? Then you are in for a treat. This is easy and most kids are actually surprised that it tastes better than it looks! I add about 2 tablespoons sugar simply to soften the taste and make my kids happy. But it is delicious without the sugar, and when I leave it out, I don't tell them and they never say a word!

- Place bacon pieces in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain on paper towels, leaving grease in the skillet.

- Wash the brussels sprouts and cut them in half.
- In a pan, add the bacon lardons and fry until brown.
- Remove from the pan and set aside.
- In the same pan, add the oil and brussels sprouts and leave to cook for 2-3 minutes, shaking the pan now and then.
- Add the garlic and half of the water, place a lid on and leave to cook on a medium heat until the water evaporates, that should take 1-2 minutes.
- If the brussels sprouts are not tender enough at this point, add the remaining water, and cook again with the lid on; once the vater evaporates, the sprouts are tender, and slightly caramelised on the edges.
- Add the cooked bacon, and parmesan, and remove from the heat.

- Place the bacon slices onto a large, cold saute pan on the stove. Turn heat to medium. Fry bacon for a few minutes on each side, until crispy.
- Remove bacon and set aside to drain on paper towels. Leave the bacon grease in the pan.
- Add 2 tbsp (30 mL) olive oil to the pan and swirl around. Add brussels sprouts. Season with sea salt and black pepper, and stir to distribute.
- Increase heat to medium-high. Arrange brussels sprouts in a single layer in the pan, with as many surfaces touching the pan as possible. Sear for about 3-4 minutes, without moving, until well browned on the bottom. Flip or stir, and repeat on the other side. Repeat as necessary to brown all sprouts.

- Clean and half the brussel sprouts.
- Heat up your pan on medium - hot heat. Add butter and garlic. Once garlic butter starts to sizzle, add your Brussel sprouts.
- Turn down to medium heat and stir/shake the Brussel sprouts around in the pan until golden and slightly soft. This is a bit of a slow process and takes around 15 min to get them perfect. - Remove the dark outer leaves from the brussels sprouts. Trim the ends of each brussels sprout making sure not to cut too much, otherwise the leaves might fall apart. Slice the brussels sprouts in half (see the picture) and set aside. Peel the pomegranate if needed.
- Heat a large cast iron or a nonstick skillet over medium heat. Add a lug of olive oil (about 1 tablespoon) and arrange the brussels sprouts on the skillet one by one, cut side down. You will need to do it twice, since they won’t fit all at once. Cook them for 5-6 minutes until slightly charred on the cut side (see the picture).
- Blend together balsamic vinegar, maple syrup, 3 tablespoons olive oil and garlic in a mini food processor or a blender. You don’t need a very smooth consistency, small pieces of garlic are OK. Alternatively, use garlic powder instead of fresh garlic and combine the rest of the ingredients for the glaze in a medium bowl.
- Add 1/3 of the glaze to the pan. It will sizzle a lot but that’s OK. Move the brussels sprouts around the pan to coat them with the glaze using a spatula. Cook for 1 more minute and remove from the pan.
