¼ onion, chopped
5 tablespoons curry powder, or more to taste
1 sheet puff pastry, cut into 6 squares
1 egg, beaten

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Cook and stir beef and onion in a nonstick skillet until beef is browned, about 5 minutes. Stir in curry powder until heated through and fragrant, 1 to 2 minutes.
  • Cut puff pastry squares diagonally to create 12 triangles. Fold each triangle in half, pressing the edges of one side together, and leaving an opening for the filling. Fill each triangle with curried beef and press edges to seal.
  • Coat each triangle with beaten egg using a pastry brush. Arrange triangles on a baking sheet.
  • Bake in the preheated oven until puffed up and golden brown, 15 to 20 minutes.

1 tablespoon paprika, or to taste

1 apple, cored and chopped
1 onion, chopped

1 (10.75 ounce) can cream of mushroom soup
1 cup half-and-half cream

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C).
  • Arrange the chicken pieces in a single layer in a 9x13-inch baking dish. Season the chicken liberally with salt, pepper, and the paprika; set aside.
  • Melt the butter in a skillet over medium heat. Add the apple and onion to the melted butter, season with the curry powder, and cook and stir until the apple and onion are tender, 7 to 10 minutes. Stir the mushroom soup and half-and-half into the mixture until completely combined; spoon over the chicken pieces.
  • Bake in the preheated oven until no longer pink at the bone and the juices run clear, about 75 minutes. An instant-read thermometer inserted into the thickest part of the thigh, near the bone should read 180 degrees F (82 degrees C).

3/4 cup mayonnaise
1/2 cup chopped toasted walnuts

1 1/2 teaspoons curry powder
1/2 medium Fuji apple, peeled, cored and diced (about 3/4 cup)
8 slices square, firm whole-wheat bread

Steps:

  • In a large bowl, combine the chicken, cranberries, mayonnaise, walnuts, scallions, curry powder and apple and mix to thoroughly combine.
  • Cut the crusts from the bread and set aside for another purpose.
  • Using 2 slices of the bread, make a sandwich, taking care to spread the chicken salad in an even layer all the way to the edges of the bread. With a large serrated knife, cut the sandwich diagonally in both directions to create 4 equal triangles. Repeat with the remaining bread and salad to make 16 tea sandwiches.

2 boneless, skinless chicken breast halves (about 1 pound total)
2 tablespoons vegetable oil
1 medium onion, coarsely chopped
2 garlic cloves, minced
2 teaspoons minced peeled fresh ginger
4 1/2 teaspoons curry powder
1/2 teaspoon ground cumin
1 tablespoon all-purpose flour, plus more for dusting
1 1/2 cups homemade or low-sodium store-bought chicken stock
1/2 cup plain yogurt
4 1/2 teaspoons tomato paste
1/4 cup applesauce
1/2 cup frozen peas (not thawed)
1/4 cup heavy cream
4 standard sheets puff pastry, thawed
1 large egg, lightly beaten

Steps:

  • Preheat oven to 400 degrees. Bring 1 quart water to a boil in a medium pot; add 1 tablespoon salt and the chicken. Reduce heat; simmer until chicken is cooked through, about 12 minutes. Transfer with a slotted spoon to a bowl; let cool. Shred chicken with a fork into 2-inch pieces.
  • Heat oil in a large low-sided stockpot over medium-high heat until hot but not smoking. Add onion, garlic, and ginger, and cook, stirring occasionally, until pale golden, about 8 minutes. Stir in curry powder, cumin, and flour; cook 1 minute. Add stock, and bring to a boil. Stir in yogurt, tomato paste, and applesauce; boil 1 minute. Reduce heat to medium; simmer, stirring occasionally, until mixture is thickened, about 30 minutes.
  • Stir in chicken and peas; cook until mixture is thick, about 3 minutes. Stir in cream and 2 teaspoons salt. Let cool.
  • Lay pastry sheets on a lightly floured surface; cut each into 4 squares. Spoon 2 tablespoons chicken mixture onto each square, leaving a 1-inch border. Brush edges with egg; fold squares to form triangles. Press edges to seal. (Unbaked turnovers can be frozen, wrapped in plastic and foil, 1 month; thaw before baking.)
  • Arrange on baking sheets. Bake until golden, 20 to 25 minutes. Serve with sauce.

1 pound phyllo dough, thawed
2 boneless, skinless chicken breast halves
2 tablespoons butter
1 tablespoon onion, minced
2 1/2 tablespoons flour
1 teaspoon curry powder
1 cup light cream

1/2 cup chopped walnuts
1/2 pound butter, melted

Steps:

  • Wrap chicken breasts in buttered aluminum foil and bake in a preheated oven at 375 degrees F for 45 minutes. Remove from oven, unwrap and cool. Cut into small cubes and set aside. Melt butter in a medium saucepan. Add onion and cook for 1 minute. Add flour and curry powder and cook over low heat for 2 minutes, stirring constantly until mixture is thick and smooth. Season with salt. Stir in chicken and walnuts. Remove from heat and let cool completely. To assemble, place one sheet of phyllo on a flat work surface. Cover remaining dough with a damp towel. Brush with melted butter and top with two more sheets of phyllo, buttering each. Cut sheet in half lengthwise, then cut each half crosswise into six equal parts. Spoon a heaping teaspoon of chicken filling onto the end of each of the strips and form a triangle by folding the right-hand corner to opposite side, as you would a flag. Continue folding until strip is used. Repeat until all filling is used. Place triangles on a greased baking sheet and brush lightly with melted butter. Bake at 400 degrees F until golden brown and puffed, about 10 minutes.

Steps:

  • Heat oil in a large skillet over medium-high heat. Add chicken, onion, and garlic; cook and stir until chicken is no longer pink, 5 to 10 minutes. Season with salt and pepper. 1 small onion, sliced

1 (3- pound) chicken, cut into 10 pieces
Small piece scotch bonnet pepper

1/4 cup coconut milk
1 cup water

  • Mix curry, garlic and onion with water. Add to pot with hot oil. Fry for about 2 minutes, then add meat. Fry for a little while. Then add pepper, chives and 1 tomato diced. Fry for a little while again and then add coconut milk. Simmer for about 20 minutes. Keep turning. Have a kettle of boiling water, and add some to pot to make gravy. Sprinkle with ground cumin.
  • This meal is usually served with white rice or roti skins.

500 g (1lb) ground chicken/chicken mince
1 onion (finely chopped)
4 garlic cloves (finely chopped/crushed)
1 tsp grated ginger
2 tsp green chili (finely chopped)
2 tsp curry powder
1 tsp ground coriander
1 tsp turmeric
½ tsp ground cinnamon
½ tsp ground cardamom
2 curry leaves
1½ cups chicken stock
1 tsp sugar (optional)
small handful fresh cilantro / coriander (finely chopped)
2 tsp lemon juice
salt and pepper (to taste)
samosa wrappers ((substitute with spring roll wrappers or phyllo pastry cut into strips))
3 tbsp flour mixed with 1-2 tbsp water to make a paste
oil for frying
chutney (for serving)

Steps:

  • To make the filling, fry the chicken in a large frying pan until golden brown. Remove and set aside.
  • Add the onion, ginger and garlic to the pan and allow to fry until soft and translucent. Add all the spices and allow to cook for another 30 seconds until the pan is dry then add the chicken with all its resting juices.
  • Pour in the chicken stock, lemon juice and sugar (if using) and allow the chicken to simmer until the liquid has reduced. The mixture needs to be moist but quite dry before it can be stuffed into the samosa wrappers.
  • Add the fresh cilantro/coriander and season to taste. Allow the filling to cool to room temperature before using.
  • To assemble the samosas, place a samosa wrapper lengthwise in front of you on a chopping board. Place a tablespoon of filling into the bottom left corner then fold up into a triangle and continue folding until the filling is fully encases in the pastry.
  • Spread a little flour paste onto the edges and seal the samosa. Set aside and continue with the remaining ingredients.
  • Pre heat vegetable or canola oil until hot in a deep pot then fry the samosas until golden brown and crisp. Remove with a slotted spoon and allow to drain on paper towels before serving with chutney.

1/2 cup canned unsweetened coconut milk*
Fresh cilantro sprigs
Steamed white rice
Major Grey mango chutney
Sliced peeled bananas

Steps:

  • Heat oil in heavy large pot over medium heat. Add onions and sauté until golden, about 15 minutes. Add ginger and garlic; sauté 1 minute. Add curry, cumin and cinnamon; sauté until fragrant, about 1 minute. Add flour, then yogurt and tomato paste, whisking until sauce is smooth, about 1 minute. Add broth and applesauce. Bring to boil. Reduce heat; simmer until sauce thickens slightly, stirring occasionally, about 30 minutes. (Can be made 1 day ahead. Cool slightly. Cover and chill. Bring to simmer before continuing.)
  • Add chicken and peas to sauce. Simmer until chicken is almost cooked through, about 3 minutes. Add sour cream and coconut milk. Reduce heat to medium-low. Stir until chicken is cooked through and sauce thickens enough to coat spoon, about 3 minutes (do not boil). Season with salt and pepper. Transfer to bowl. Garnish with cilantro sprigs.
  • Place rice, chutney, bananas, mangoes, coconut and peanuts in separate bowls. Serve alongside curry.

This Trinidadian version of curried chicken is an earthy, rich stew of whole chicken pieces in an aromatic, vibrant broth, spiked with hot chile and a traditional herb paste.

1 Scotch bonnet pepper or other hot red chili pepper, finely chopped
2 cloves garlic, crushed
¼ cup Trinidad Curry Powder
2 tablespoons canola oil
1 medium onion, chopped
1 cup chicken stock or water
Roti or white rice, for serving

Steps:

  • Place the chicken pieces in a bowl and toss with the lime juice. Drain, rinse the chicken with cold water, and drain again. Remove the chicken from the bowl and pat dry with paper towels.
  • Place the chicken in another bowl with the Green Seasoning, salt, chili pepper, and garlic. Toss well to coat and refrigerate for at least 30 minutes but ideally overnight.
  • Combine the curry powder with just enough water to form a thick paste. Heat the oil in a heavy-bottomed pot. Add the curry paste and onion. Cook, stirring constantly, for 1 to 2 minutes over medium-low heat-do not allow the curry to scorch. Add the chicken pieces and stir well to coat. Add the stock or water, cover, and simmer for 30 to 40 minutes, or until the chicken is tender.
  • Remove the lid and simmer for 5 minutes more over medium-high heat, until the sauce reduces by one-third. Serve with roti or white rice.
