This is THE most fabulous party appetizer. I had this at an after holiday party and it was by far the most requested recipe (my Recipe #163601 was the second!) Be sure to make ahead because it should chill at least 4 hours.

2 (8 ounce) packages cream cheese, softened
2 cups sharp cheddar cheese, shredded (room temperature)
6 tablespoons sherry wine
2 tablespoons Worcestershire sauce
1 teaspoon curry powder
1/2 teaspoon salt
1 (8 ounce) jar mango chutney
1/2 cup peanuts, chopped
1/2 cup green onion, chopped
1/2 cup coconut, grated

Steps:

  • Blend pate ingredients together until combined.
  • Line an 8" cake pan with plastic wrap and fill pan with cheese mixture. Cover with plastic wrap and chill 4 hours.
  • NOTE: Can be frozen at this point. Defrost at room temperature before proceeding.
  • Unmold pate on a large platter. Pour chutney over, then sprinkle with peanuts, onions, and coconut.
  • Serve with crackers. ENJOY!

Yield Makes about 3 1/2 cups

Number Of Ingredients 9

1 onion, thinly sliced
2 1/4 sticks unsalted butter, cut into 1-tablespoon pieces
1 lb chicken livers, trimmed and rinsed
2 teaspoons curry powder
2 teaspoons paprika
1 1/4 teaspoons salt, or to taste
1/2 teaspoon black pepper
3 tablespoons brandy
Accompaniment: baguette slices oven-toasted with olive oil, salt, and pepper

Steps:

  • Cook onion in 4 tablespoons butter in a large heavy skillet over moderate heat, stirring, until softened. Stir in livers, curry powder, paprika, salt, and pepper and cook, covered, over moderately low heat, stirring occasionally, until livers are barely pink inside, about 10 minutes. Remove from heat and add brandy. Purée warm mixture in a food processor with remaining butter until smooth. Pour into a 3 1/2-cup terrine and cover surface with plastic wrap. Chill until firm, at least 3 hours.

This is one of those so-good-you-can't-stop-eating-it party nibbles; you might even want to double the recipe. Use any combination of herbs you like; I like fresh thyme and parsley but oregano, chives or basil could be used, too. I like this served with whole-grain crackers or crispy breadsticks.

1 tablespoon butter
1 clove garlic, minced
3 green onions, white and about an inch of green,minced
1 (8 ounce) container soft cream cheese
2 tablespoons mixed chopped fresh herbs (thyme, parsley, oregano, chives or basil)
1 1/2 cups freshly grated parmesan cheese or 1 1/2 cups romano cheese (about a 3 to 4 ounce chunk)

Steps:

  • Melt butter in a small skillet and saute garlic and green onions together for about 5 minutes, until softened.
  • Cool.
  • Combine the soft cream cheese with the cooled garlic and green onions, then mix in the herbs and Parmesan or Romano.
  • Cover and chill until ready to serve.
  • Serve with wholegrain crackers or breadsticks; also good with bagel chips or melba toast.

1 (8 ounce) package cream cheese, softened
1/4 lb cheddar cheese, shredded
3 tablespoons dry sherry
3/4 teaspoon curry powder
1/4 teaspoon salt
1/2 cup mango chutney
1/2 cup green onion, finely chopped

Steps:

  • Blend cream cheese with the shredded cheese until well mixed. Do this by hand or in a food processor using a plastic blade.
  • Mix in the sherry, curry powder and salt until well blended.
  • Shape into a cake, about 5 inches in diameter, onto serving plate. Cover and chill at least 1 hour or as long as overnight.
  • Before serving, pile mango chutney and green onions on top. Surround with crisp sesame or whole wheat crackers. Guests can either dip into the cheese or spread it with a knife.

1/2 stick (1/4 cup) cold unsalted butter
1/4 cup chopped onion
5 ounces chicken livers (about 1/2 cup), rinsed, patted dry, and chopped coarse
3/4 teaspoon curry powder
1/2 teaspoon paprika
1/2 teaspoon salt
1 tablespoon brandy
Accompaniments: crackers and fresh pear slices

Steps:

  • In a 9-inch skillet heat 1 tablespoon butter over moderate heat until foam subsides and cook onion and chicken livers with curry powder, paprika, and salt, stirring, 1 minutes. Cover skillet and cook mixture, stirring occasionally, 8 minutes more, or until livers are just cooked through. Add brandy and cook,stirring, 1 minute.
  • Remove skillet from heat and in a food processor purée mixture with remaining 3 tablespoons butter, cut into pieces, until smooth. Transfer pâté to a 3/4-cup ramekin and smooth top. Pâté may be served immediately (texture will be mousse-like) or chilled, its surface covered with plastic wrap, at least 2 hours and up to 5 days. Bring pâté to room temperature before serving.
  • Serve pâté with crackers and pears.
