Because it seems to appeal to so many, this creamy salad is one of my favorite crowd-size recipes. I've taken it to potlucks and picnics...and it's always a hit.

Number Of Ingredients 7

5 pounds red potatoes
4 celery ribs, sliced
1 bunch green onions, sliced
2 tablespoons dill weed
2 teaspoons salt
2 cups mayonnaise
1 bottle (16 ounces) cucumber ranch salad dressing

Steps:

  • Place potatoes in a large kettle; cover with water. Bring to a boil. Reduce heat; cover and simmer for 20-25 minutes or until tender. Drain and cool. Cut potatoes into small cubes. , In a large serving bowl, combine the potatoes, celery, onions, dill and salt. In a small bowl, whisk mayonnaise and salad dressing until blended. Pour over potato mixture and stir gently to coat. Cover and refrigerate for at least 6 hours before serving.

2 to 3 tablespoons mayonnaise
1 tablespoon dill pickle relish
1 tablespoon diced pimientos
1/2 teaspoon celery seed
1/2 teaspoon dill weed

1 medium cucumber, sliced
2 tablespoons chopped pecans, toasted

Steps:

  • In a large bowl, combine the first seven ingredients. Place cucumber slices in a fan shape on two salad plates; top with potato salad. Sprinkle with pecans.

1/2 teaspoon salt
1/2 teaspoon fresh ground black pepper
6 tablespoons olive oil
2 tablespoons cider vinegar
3 cups sliced boiled potatoes
1 cup sliced peeled cucumber
1 onion, sliced in rings
3/4 cup mayonnaise
3 tablespoons heavy cream
1 tablespoon fresh basil
1 teaspoon lemon juice
paprika

Steps:

  • Place salt, pepper, oil and vinegar in a plastic bowl with a lid.
  • Add sliced potatoes, cucumbers and onion rings.
  • Cover and tumble, coating everything.
  • Place in refrigerator for one or two hours.
  • Drain.
  • Add remaining ingredients to the vegetables and mix well.
  • Add salt and pepper to taste and garnish with paprika and basil.
  • Chill until ready to serve.

1 1/2 pounds baby red-skinned or Yukon Gold potatoes, halved or quartered if large
Kosher salt
1/4 cup white wine vinegar
Freshly ground pepper
2/3 cup plain Greek yogurt
1/4 cup mayonnaise
1 shallot, very thinly sliced
1 1/4 pounds peeled and deveined large shrimp
2 teaspoons paprika
5 tablespoons extra-virgin olive oil
4 cloves garlic, thinly sliced
3 Persian cucumbers, sliced
1/2 cup roughly chopped fresh mint (or 1/4 cup each chopped fresh parsley and mint)

Steps:

  • Put the potatoes in a medium saucepan and cover with cold water by 1 inch. Season generously with salt and bring to a boil; reduce the heat to a steady simmer and cook until tender, 12 to 15 minutes. Drain and transfer to a bowl. Toss with 1 tablespoon vinegar and season with salt and pepper. Refrigerate until cooled.
  • Meanwhile, whisk together the yogurt, mayonnaise, shallot, remaining 3 tablespoons vinegar and 2 tablespoons water in a small bowl. Season with salt and pepper and set aside.
  • Season the shrimp with salt, pepper and the paprika. Heat the olive oil in a large nonstick skillet over medium-high heat. Add the shrimp and cook until browned on the bottom, about 2 minutes. Flip the shrimp and add the garlic to the pan; cook until the shrimp are just cooked through and the garlic is golden, 1 to 2 minutes. Remove from the heat.
  • Add the cucumbers, yogurt mixture and about half of the mint to the potatoes. Toss well and season with salt and pepper. Divide among plates. Add the shrimp and any juices from the skillet to the plates. Top with the remaining mint.

Did not see this recipe anywhere on Allrecipes and, as it's been a huge favorite here for years, I decided to post it. Dazzling with a nice steak! Serve year round. Turkey bacon and fat-free mayo may be substituted, though keep in mind that both will sacrifice a bit of taste. :)

8 red potatoes
6 slices bacon
1 cup mayonnaise
1 cucumber, chopped
½ cup chopped red onion
3 hard-cooked eggs, chopped
1 cup celery, chopped
½ cup chopped fresh parsley
1 tablespoon paprika
salt and pepper to taste
1 hard-cooked egg, sliced
3 sprigs fresh parsley, or as desired
1 pinch paprika, for garnish

Steps:

  • Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 20 minutes. Drain and cool. Chop potatoes and transfer into a large salad bowl.
  • Place the bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain the bacon slices on paper towels. Crumble bacon when cool.
  • Stir mayonnaise, crumbled bacon, cucumber, red onion, 3 chopped eggs, celery, 1/2 cup parsley, and 1 tablespoon paprika into the potatoes until thoroughly combined. Season to taste with salt and black pepper. Garnish salad with slices of hard-cooked egg, 3 sprigs of fresh parsley, and a pinch of paprika.

Although it's called cucumber potato salad, the recipe doesn't even call for cucumbers. It calls for cucumber dressing. I think next time this would be good if you threw in a few cucumbers too. This recipe serves 36 and is designed for large gatherings. I made 1/5th of the recipe or so and was pleasantly surprised at the flavor of the cucumber dressing. I must confess that I added a few hard-boiled eggs, used the celery ribs and the leaves, threw in some dill pickle juice, and I couldn't resist a few crunchy garlic dill pickles in the mixture. The recipe is great just by itself, but I love dill pickles and eggs in potato salad. 2 1-pound English hothouse cucumbers, very thinly sliced
1/2 cup plus 3 tablespoons chopped fresh dill
3 1/4 pounds Yukon Gold potatoes (about 10 medium), unpeeled
Additional coarse kosher salt
1 cup very thinly sliced white onion
8 radishes, trimmed, thinly sliced
3/4 cup mayonnaise
Small radishes with green tops

Steps:

  • Stir vinegar and 4 teaspoons coarse salt in small bowl until salt dissolves. Place cucumbers and 1/2 cup dill in heavy 1-gallon resealable plastic bag. Add vinegar mixture; seal bag. Turn several times to coat. Refrigerate overnight, turning bag occasionally.
  • Pour cucumber mixture into large sieve set over bowl. Drain at least 1 hour and up to 3 hours. Discard brine.
  • Cook potatoes in large pot of boiling salted water until tender, about 30 minutes. Drain. Cool potatoes completely. Peel potatoes; quarter lengthwise. Cut crosswise into 1/2-inch-thick slices. Place potatoes in large bowl; sprinkle generously with coarse salt and pepper. Add drained cucumbers, onion, sliced radishes, and remaining 3 tablespoons dill; toss to blend. Let stand 1 hour. Stir mayonnaise into salad. Season generously with salt and pepper, if desired. (Salad can be made 1 day ahead. Cover and refrigerate.)
  • Mound salad in bowl; garnish with whole radishes. Serve cold or at room temperature.
