1 tablespoon vegetable oil
2 lbs beef flank steak
1 cup beef broth
1 (8 ounce) can tomato sauce
1 small onion, sliced
1 green bell pepper, seeded and sliced into stripes
2 garlic cloves, chopped
1 (6 ounce) can tomato paste
1 teaspoon cumin
1 tablespoon fresh cilantro, chopped
1 tablespoon olive oil
1 tablespoon white vinegar

Steps:

  • Heat vegetable oil in a large skillet over medium-high heat.
  • Brown the flank steak on each side, about 4 minutes per side.
  • Transfer beef to slow cooker.
  • Pour in the beef broth and tomato sauce, then add the onion, bell pepper, garlic, tomato paste, cumin, cilantro, olive oil and vinegar.
  • Stir until well blendedl.
  • Cover, and cook on High for 4 hours, or on Low for up to 10 hours.
  • When ready to serve, shred meat, and serve with tortillas or rice.

1 (2 pound) beef chuck pot roast
3 cloves garlic
2 red bell peppers, cut into large wedges
2 green bell peppers, cut into large wedges
1 yellow onion, cut into wedges
1 sweet onion, cut into wedges
½ (6 ounce) can tomato paste, or to taste
¼ cup red wine vinegar
⅛ teaspoon garlic powder, or to taste
⅛ teaspoon seasoned salt, or to taste
salt and ground black pepper to taste

Steps:

  • Pierce the beef roast to tenderize it and let the flavors in, and place it into a slow cooker with the garlic, red bell peppers, green bell peppers, yellow onions and sweet onions. Stir in the tomato paste and red wine vinegar. Sprinkle with the garlic powder, seasoned salt, salt, and ground black pepper.
  • Cover, and cook on Low until the beef is tender, 7 to 8 hours. Remove beef, and shred into long strands using two forks. Return the meat to the slow cooker and combine with the vegetables.
  • Cook on Low until the meat and vegetables are very tender, about 30 minutes.

6 whole cloves garlic
2-2 1/2 lbs. beef chuck roast or flank steak
1 tablespoon oil
2 (8 ounce) cans tomato sauce
1 green bell pepper, thinly sliced
1 medium onion, thinly sliced
1 (4 ounce) can chopped green chilies
2 tablespoons tomato paste
2 teaspoons EACH dried oregano AND salt
1 tablespoon EACH ground cumin AND white vinegar
1/2 teaspoon red pepper flakes
1/4 cup chopped cilantro + more for serving
white rice + cuban-style black beans

Steps:

  • SEARING THE MEAT: Take the beef chuck roast and using a small paring knife, make 3 small 'x' marks into the meat. Take 3 cloves of garlic and insert them into the 3 'x' marks so that the clove is completely inserted into the thickness of roast. Season both sides of the meat with a pinch of salt and pepper. Heat the oil in a large, deep skillet. Add the beef in one piece and fry on each side for 5 minutes, turning only when the exterior is browned. This will splatter a bit but don't cover the pan as the meat will end up steaming rather than searing.
  • FOR THE ROPA VIEJA: Chop the remaining 3 cloves of garlic into thin slices and add to the slow cooker along with all the remaining ropa vieja ingredients. I used a 6-quart slow cooker but a 3-quart slow cooker will work too. Cover and let cook on the low setting for 7-8 hours. When the beef falls apart easily when pulled with two forks, it's done. Shred the beef with the forks and give it a stir. Taste for seasonings, season with additional salt and pepper as desired.
  • TO SERVE: Serve over a bed of rice with cuban-style black beans on the side topped with additional cilantro and a few lime wedges. You can also use the shredded beef for burritos, breakfast quesadillas, or tacos! The possibilities are endless!

Steps:

  • Rub each side of the steak with Adobo seasoning. Place in slow cooker.

  • When cooked, remove the meat from the slow cooker and finely shred with 2 forks. Return the shredded beef to the sauce in the slow cooker and stir.

1 beef flank steak
1 onion, chopped
1 green bell pepper, chopped
2 clove garlic, minced
1 tsp dried oregano leaves
1/2 tsp ground cumin
salt and pepper
1 tsp sazon seasoning or sub 1/2 tsp accent
1 can(s) 15 oz can diced tomatoes
1 can(s) tomato sauce, small can
2 Tbsp tomato paste

Steps:

  • 1. Place everything in a crock pot and cook on low about 8 hours. The meat should pull apart with a fork.
  • 2. When done, move the meat to a serving bowl. Pour sauce into a sauce pan and bring to a boil on the stove. Reduce by about 1/2.
  • 3. While the sauce is reducing shred the meat with a fork. Pour the sauce over the meat and serve with rice.

  • To cook from frozen: Thaw in refrigerator if desired (or put in frozen). Cook as directed above. If cooking from frozen add time for thawing.

1 tablespoon olive oil
2 pounds (900g) skirt steak (cut into 2 pieces)
3 cloves garlic (minced)
1 onion (thinly sliced)
2 red bell peppers (deseeded and thinly sliced)
2 teaspoons dried oregano
1 ½ teaspoons paprika
1 ½ teaspoons ground cumin
2 bay leaves
4 tablespoons white wine
14 ounces (400g) tomato sauce
1 ⅓ cups (320ml) beef broth
2 bay leaves
½ cup (90g) green olives (cut in half)
Squeeze of fresh lime juice
Salt and black pepper (to taste)

Steps:

  • Set the Instant Pot to sauté and add the oil. Brown the meat on both sides, then set aside. Sauté the onion and peppers for about 5 minutes. Stir in the garlic, oregano, paprika, ground cumin, and bay leaf and switch off the heat.
  • Deglaze the bottom of the Instant Pot insert with the white wine, then stir in tomato sauce and beef broth before returning the beef to the pot.
  • Seal and cook at high pressure for 37 minutes. When done, allow for a natural pressure release.
  • Remove the beef and shred with a fork before returning it to the Instant Pot and adding the olives and lime juice.
  • Adjust seasonings as needed and serve.

I found this recipe in our local newspaper. It is an easy crock pot version the Cuban Ropa Vieja which requires several hours of simmering on the stove top. This dish is essentially a stew and will be wonderful served with a side salad, corn muffins or tortillas and rice. NOTE: Sirloin steak or chuck roast can be used instead of the skirt or flank steak called for in the ingredients list. the exact seasonings for the canned diced tomatoes doesn't matter as long as you choose a type that includes garlic. Petite diced tomatoes and no-salt added varieties also work.

8 ounces tomato sauce
1/2 cup water
3 bay leaves
1 tablespoon red wine vinegar
2 tablespoons garlic, minced (bottled)

2 lbs skirt steaks (or flank)

Steps:

  • Put the tomato sauce, water, bay leaves, vinegar, garlic, cumin, salt and black pepper into the crock pot. Stir to combine.
  • Peel the onion and cut it into quarters. Thinly slice the onion quarters, and add them to the crock pot.
  • Place the beef over the onions, and spoon some of the liquid over the meat. (If ou are using skirt steak or flank steak, there will be several thin pieces, and they will overlap in the pot.).
  • Rinse bell peppers and discard the seeds and membranes.
  • Cut the peppers into quarters, thinly slice them, and add the pieces to the crock pot.
  • Pour the diced tomatoes with their juice evenly on top.
  • Cover the pot and cook on low until the meat is so tender that it practically falls apart, about 8 hours if using skirt or flank steak or 10 hours if using sirloin or chuck.
  • About 20 minutes before serving, cook the rice.
  • Before serving, removed the beef and vegetables from the crock pot to a large serving bowl.
  • Use two forks to pull the beef into shreds. There should be some cooking juices in the bowl, but if not, add about 1/2 cup juices.
  • Stir to mix the beef and vegetables.
  • Season with additional salt and pepper if desired.
  • Serve all but two cups of the beef vegetable mixture over hot rice.
  • Refrigerate leftovers, skim off fat and store in the refrigerator for up to to 3 days or a month in the freezer. Use the leftovers in a beefy tortilla soup.

  • In a skillet, heat olive oil at medium heat. Add green pepper, onion, and pimientos. Sauté for 1-2 minutes. Add garlic and sauté for 30 seconds.
  • Add dry cooking wine, tomato sauce, ground cumin, oregano, bay leaf, salt, and pepper. Cook for 15-20 minutes, stirring occasionally.

1 large onion (sliced)
1 green bell pepper (sliced)
1 red or yellow bell pepper (sliced)

10 garlic cloves (minced)
1/2 c cilantro (coarsely chopped)
2 c chicken or beef broth
1/2 c dry white wine
1 Tbsp red wine vinegar
1-2 bay leaves
1 can(s) crushed tomatoes, 16 oz
1 can(s) tomato paste, 6 oz
1 small jar of red roasted pepper strips
2 tsp dried oregano
2 tsp cumin
1 packet of Sazon (found in the international aisle)
1 tsp smoked paprika
1 tsp adobo (optional) found in the international aisle
1/2 c olives (rinsed, drained and cut in half)
2 tsp salt
1 lime (cut into wedges to sprinkle over ropa vieja once cooked)

Steps:

  • 1. Cut meat into thin strips. Season with salt and adobo if using. Can brown meat in a heavy skillet with a few tablespoons of oil if you would like. I normally just add most of the ingredients together to slow cooker.
  • 2. Add all ingredients to slow cooker on high for 4 hours or set to low for 6 hours except cilantro and olives.
  • 3. After 4 hours stir in cilantro and olives.
  • 4. Serve with white rice. Traditionally also served with stewed black beans.
