For those of you who like a variety of flavors and levels of crunch in their broccoli salads, we present this version with Gala apples.

6 cups small broccoli florets
1 cup chopped Gala apples
1/4 cup slivered red onions
1/4 cup dried cranberries
2 oz. ATHENOS Blue Cheese, cut into 1/4-inch cubes
1/2 cup KRAFT Lite Ranch Dressing
1/4 cup slivered almonds, toasted

Steps:

  • Combine first 5 ingredients in large bowl.
  • Add dressing; mix lightly.
  • Top with nuts.

4 cups chopped broccoli in 1/2-inch pieces (from about 2 heads)
8 ounces pancetta, cut into 1/3-inch dice
1/2 cup mascarpone
1/4 cup mayonnaise
2 tablespoons apple cider vinegar
1/2 teaspoon kosher salt
1/2 cup dried cranberries
1/2 cup walnuts, toasted, chopped
1/2 cup crumbled aged gorgonzola

Steps:

  • Bring a large pot of salted water to a boil. Set up a bowl of ice water alongside. Add the broccoli to the pot and blanch for 1 to 2 minutes, just until bright green and crisp. With a slotted spoon, remove the broccoli to the ice water to shock. Drain well.
  • Place the pancetta in a medium skillet over medium heat. Cook, stirring often, until crispy and browned, about 10 minutes. Drain on paper towels, reserving 1 tablespoon of the fat.
  • Meanwhile, in a large bowl, use a rubber spatula to mix together the mascarpone, mayonnaise, cider vinegar and salt. Add the broccoli, pancetta, reserved fat, cranberries, walnuts and gorgonzola. Toss well to coat and combine.

Number Of Ingredients 13

1 bunch, large broccoli (cut florets from stems)
2 each Apples (tart apple, crispin or cortland)
3 each carrots (trimmed, scrubbed, shredded)
1/4 cup red onion (minced)
1/3 cup Vegan style mayonaise
1 tablespoon lemon zest
1/2 teaspoon natural salt
1-2 tablespoon rice wine or cider vinegar
to taste fresh ground pepper
2 Tablespoons olive oil or avocado oil
1/4 cup dried cherries or cranberries (chopped)
1/2 cup slivered almonds (toasted)
1 each Avocado, ripe (cut into medium dice)

Steps:

  • Divide broccoli florets from stems. Blanch broccoli florets in boiling salted water for 1-2 minutes, drain and rinse. Place in large mixing bowl. Trim woody stems off ends of broccoli stems, peel and grate stems. Add to blanched broccoli
  • Add apples, carrots and onions to broccoli, stir to combine.
  • In a small bowl whisk together, vegan mayonnaise, lemon zest, salt, vinegar, pepper and olive oil. Taste and adjust seasonings as needed. If you have a very large bunch of broccoli you may need to increase mayonnaise a little bit. Pour dressing over vegetables, toss to combine.
  • Add chopped dried fruit, almonds and avocado and gently stir. Serve salad as is or on top of salad greens or other leaf lettuce.

cauliflower, cut into bite size pieces (equal to amount of broccoli used)
1 bunch green onion, chopped
1/2 cup sunflower seeds
nuts (optional)
crumbled fried bacon (optional)
red bell pepper (optional)
white raisins (optional)
1 cup mayonnaise
1/4 cup sugar
3 tablespoons vinegar

Steps:

  • Prepare and chop all salad ingredients and place in bowl.
