Slow cookers get a bad rap in the world of accomplished chefs, but Mark Bittman loves his. He calls it his "Monster of Braising," and he claims to use it every day. Here is his recipe for braised short ribs with soy sauce, honey, cinnamon, star anise and ginger.

8 short ribs, about 3 pounds
1/2 cup soy sauce
1/4 cup sugar or honey
3 star anise
6 scallions, trimmed
1 3-inch piece cinnamon
5 nickel-size slices of ginger
1 teaspoon Sichuan peppercorns
Salt
Cooked white rice for serving
Chopped scallions or fresh cilantro leaves for garnish

Steps:

  • Combine all ingredients, except salt, rice and garnish, in slow cooker. Cover and cook until meat is very tender and falling from bone, 5 hours or more on high, 7 hours or more on low. Taste and add salt if necessary.
  • If you like, remove meat, strain liquid and refrigerate meat and liquid separately; skim fat from liquid, and reheat with meat. Serve hot over white rice garnished with scallions or cilantro.

I love ribs, but I'm only a marginal fan of BBQ. These ribs are a great alternative....fork tender and absolutely scrumptious! You can use either beef or pork ribs, boneless or bone-in. The sauce is delicious over steamed rice. I use Pampered Chef's Asian Seasoning Mix.

1/3 cup flour
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons Asian seasoning, divided
2 -3 lbs short ribs
1/4 cup butter
1 teaspoon sesame oil
1 large onion, diced
1 green bell pepper, diced
1 red bell pepper, diced
3 stalks celery, diced
1 (10 1/2 ounce) can beef consomme
2 garlic cloves, minced
1/2 cup rice vinegar
1/2 cup brown sugar
1/4 cup ponzu sauce
2 tablespoons catsup
1 tablespoon Thai sweet chili sauce
2 tablespoons soy sauce

Steps:

  • Turn crockpot on high and allow to preheat while preparing the food.
  • Melt the butter along with the sesame oil over medium high heat.
  • While butter is melting, combine flour, salt, pepper and 1 T of the Asian seasoning in a large plastic bag and shake to mix it up.
  • Add the short ribs to the bag a couple at a time, shaking until well coated.
  • Place the ribs in the butter and oil in the skillet and brown on all sides.
  • While ribs are browning, chop all the vegetables.
  • When ribs are brown on all sides, remove them from the skillet and place in crockpot.
  • Add the diced veggies and the garlic to the same skillet and saute until onions are clear.
  • Add all remaining ingredients, mix, then bring to a boil.
  • Pour over the ribs in the crockpot, and cook on high for 1 hour.
  • Change setting to low and cook an additional 6-7 hours.
  • Before serving, drain or skim off grease.

You can buy five-spice powder, a spice much like star anise, in most Oriental markets. Goes great with rice and steamed or stir-fried veggies for a nice Asian meal.

3 lbs short rib of beef (8)
1/3 cup all-purpose flour
1/2 teaspoon black pepper
1/4 teaspoon ground cayenne pepper
4 tablespoons cooking oil
2 medium carrots, chopped
1 large onion, chopped
1/2 cup soy sauce
1/4 cup dry sherry or 1/4 cup sake
1/4 cup brown sugar
1 teaspoon five-spice powder
1 tablespoon grated fresh ginger

Steps:

  • Place flour, black pepper, and cayenne pepper in a plastic bag.
  • Dredge ribs in flour mixture.
  • Brown ribs in oil in a large skillet.
  • Place ribs in the bottom of a crock pot and place chopped onion and chopped carrot around the ribs.
  • Mix together soy sauce, sherry, brown sugar, ginger, and five-spice powder in a bowl.
  • Pour liquid into crock pot over meat, cover and cook on low for 8 hours.
  • Discard cooking liquid and vegetables.
  • Serve meat with rice.

6 beef short ribs, or more to taste
salt and pepper to taste
½ cup soy sauce
½ cup vegetable broth
2 tablespoons rice vinegar
¼ cup brown sugar
5 cloves garlic, minced
1 tablespoon finely grated ginger
1 teaspoon crushed red pepper flakes
1 tablespoon olive oil
1 teaspoon sesame oil
1 tablespoon potato starch
2 tablespoons cold water
2 green onion tops, thinly sliced

Steps:

  • Season short ribs with salt and pepper on both sides.
  • Heat olive oil and sesame oil in a pot over medium-high heat and cook short ribs in batches until browned on all sides, 5 to 8 minutes. Place short ribs in a slow cooker.
  • Stir together soy sauce, vegetable broth, rice vinegar, brown sugar, garlic, ginger, and crushed red pepper flakes in a bowl. Pour sauce over short ribs. Cover slow cooker.
  • Cook on High until ribs are cooked through, about 4 hours. Remove ribs from sauce and keep warm.
  • Pour sauce into a pot and cook on medium-low heat until reduced, about 5 minutes. Remove as much grease as possible. Mix cornstarch and water together in a small bowl until smooth. Pour into sauce and cook until thickened, 1 to 3 minutes.
  • Pour sauce over short ribs and sprinkle sliced green onions on top.

I'm always looking for new recipes to make in my crock pot. Here's another easy and tasty one. I finally got around to making this I used pork spare ribs. I cooked them longer till they were falling off the bone. The sauce has a very good flavor. My husband was pleasantly surprised at the flavor.I found this in Family Circle Magazine.

1/2 cup low sodium soy sauce
1/2 cup packed light brown sugar
2 tablespoons sesame oil
2 tablespoons rice vinegar
2 tablespoons minced fresh ginger
4 garlic cloves, crushed
1/2 teaspoon red pepper flakes
5 lbs beef short ribs or 5 lbs pork ribs
3 tablespoons cornstarch
1 1/2 cups shredded carrots
3 scallions, trimmed and thinly sliced
1 tablespoon sesame seeds
3 cups cooked white rice

Steps:

  • Blend soy sauce, sugar, oil, vinegar, ginger, garlic and red pepper in bowl.
  • Place ribs in 5 quart slow cooker, add sauce. Cover, cook on High for 6 hours or Low for 9 hours, until meat is tender.
  • Transfer ribs to a platter. Skim and discard excess fat from liquid. Combine cornstarch and 3 tablespoons water; blend with liquid in a saucepan. Bring to a boil over high heat and cook for 2 minutes, stirring, until thickened. Stir in carrots. Top ribs with sauce, scallions and sesame seeds.
  • Serve over cooked rice.

3/4 cup sugar
3/4 cup ketchup
3/4 cup reduced-sodium soy sauce
1/3 cup honey
1/4 cup lemon juice
3 tablespoons hoisin sauce
1 tablespoon ground ginger
2 garlic cloves, minced
4 pounds bone-in beef short ribs
Optional: Hot cooked ramen noodles, sesame seeds, julienned green onions and carrots, sliced cucumber, radish, mushrooms and red chili pepper

Steps:

  • In a greased 4- or 5-qt. slow cooker, whisk together the first 8 ingredients. Add short ribs and turn to coat; cook, covered, on low until meat is tender, 6-7 hours. If desired, serve with ramen noodles and optional toppings.
