SLOW COOKER RIBS, POTATOES AND SAUERKRAUT
A one pot meal of baby back ribs, potatoes and sauerkraut in the slow cooker.

Steps:
- Remove the membrane off the back of the ribs by sticking a finger under it in the middle of the ribs, life up and pull. It may not come off in one piece. You can see how I remove this in the video.
- Preheat the oven to Broil.
- Cut the ribs into single rib pieces. Place the cut onion onto a baking sheet. Add the ribs on top of the onion. Drizzle over the oil. Sprinkle over the salt, pepper and thyme over the ribs. Add the garlic cloves.
- Place the baking sheet into the oven under the broiler. Leave in the oven until the ribs are slightly browned. Mine took about 10 minutes. Keep an eye on them so they don't burn.
- Add the sliced potatoes to the slow cooker. Add the contents of the baking sheet on top of the potatoes. Drain and rinse the sauerkraut if desired. Add the sauerkraut on top of everything.
- Pour over the chicken broth.
- Cover and cook on HIGH for 5 hours or for 7-8 on low.
- Serve and enjoy!

Living in Kansas we still get a hankering for BBQ Ribs in the winter! This was my solution to still be able to enjoy them year round.

- 1. Cut Ribs every 2 bones.
- 2. Lightly brush bbq sauce on both sides and wrap in foil.
- 3. Place wrapped ribs in a crockpot, I use an 8 qt. pot. Put 1 cup of water in bottom of crockpot
- 4. Cook on low for 4 hours. After 4 hours turn up to high and cook for 2 hours. Unwrap and enjoy!

- Remove the membrane from the back of the ribs. Just slide your fingers around the side to loosen it up and rip it right off.
- In a small bowl, stir together the ingredients for the dry rub. Rub this mixture generously over the outside of the ribs to coat.
- Put your ribs in the crockpot. Drizzle on 1 1/2 cups of barbecue sauce, reserving 1/2 cup for later.
- Cook on low for 8 to 10 hours. The more racks in the pot, the longer you'll need to cook.
- Gently remove the racks and lay them out on a foil lined baking sheet. Add the reserved barbecue sauce on top.
- Broil under a broiler for 3-5 minutes until the barbecue sauce starts to bubble and caramelize. Alternately you could wrap them in foil and throw them on a heated grill for the same effect.

SLOW COOKER BABY BACK RIBS
These are the best I've had, short of the actual grilling method of course! This is a very simple recipe that I came up with a few years ago. It's not rocket science, just ribs cooked in the slow cooker and finished in the oven. This is what I do when I want ribs during the week and have to work all day. I'm eating them within a half-hour of getting home, and they turn out perfect every time!

- Season ribs with salt and pepper.
- Pour water into slow cooker. Layer the ribs into the slow cooker. Top the ribs with onion and garlic.
- Cook on High for 4 hours (or Low for 8 hours).

- Put 4 tbsp of barbecue sauce along with the rest of the ingredients into your slow cooker. Top up with enough water to cover (roughly 1.5l). Slow cook on Low for 8 - 9 hours until very tender but not completely falling off the bone.
- Heat the oven to 220C/ 200C fan/ gas mark 7. Remove the ribs from the slow cooker using a slotted spoon or tongs. Handle them carefully as the meat will be very tender and may start to fall off. Baste with the remaining barbecue sauce and lay on a foil-lined oven tray. Cook for 20 - 30 mins until starting to crisp on outside. SLOW COOKER BARBECUE RIBS

- Spray inside of a 6-quart slow cooker with cooking spray.
- Remove inner skin (membrane) from ribs and place ribs in slow cooker. Discard skin.
- Combine bbq sauce, brown sugar, garlic, Worcestershire sauce and cayenne pepper in a small bowl. Mix well to combine and completely cover with half of the sauce.
- Season with a good amount of salt and pepper; cover with lid and cook on low setting for 7-9 hours or high setting for 3-5 hours *see notes. Refrigerate remaining sauce to use later.
- When ribs are tender and falling apart, transfer onto an oven tray (or baking sheet), lined with parchment paper. (Lift them carefully as the meat will be very tender and falling off the bone).
- Pour half of the juices from the slow cooker bowl into the remaining sauce. Baste ribs with half of the sauce and broil (grill) in preheated oven at 400°F (220°C) for about 10 minutes or until beginning to char and crisp on the edges.
- Serve ribs with remaining sauce.

- Place the flour on a plate. Salt and pepper ribs and dredge the ribs in the flour until coated. Shake off excess flour. In a large fry pan, heat the oil until hot and sear the ribs until golden on each side. Remove to paper towel to drain.
- In the crackpot layer, potatoes, carrots, onion, and sauerkraut. Pour on the apple juice, sprinkle on the spices and then add the whole apple on top. Season with salt and pepper and then snuggle the ribs on top of the ingredients. Cook on low all day.
- If you'd like, remove ingredients from crockpot and place juice in a small saucepan. Bring to a simmer combing water/flour mixture and apples. Simmer for a couple of minutes and use as gravy.
- Or serve directly from the crockpot.

During the heat wave of July 2011 we got tired of grilling and bbq. The crockpot did get more than it's fair share of use. Using what I had on hand I made this dish and was very happily surprised at the great outcome! I grew up with Mom fixing neck bones & potatoes often, so I thought this might be a close call to a trip down memory lane yet updated.

- Cut down serving size (2-3 bones per serving).

CROCKPOT BABY BACK RIBS WITH POTATOES AND VEGGIES
This is a really easy, delicious recipe for when it's to cold to do ribs on the grill and only uses your crockpot so you aren't dirtying a bunch of pots and pans! Another great thing is that this isn't a "set in stone" recipe. If you like red potatoes instead of yellow? Use them! You prefer a different bbq sauce or spice rub? Use it! NOTE: All seasonings are to taste. This site just makes me use measurements so I guessed there. I used McCormick Grill Mates Cowboy Rub for my "dry rub seasonings" it just wouldn't recognize it as a food.

- Cut your rib rack in half.
- Sprinkle both sides of the two halves with your rub, garlic, and chipotle chili pepper and rub into meat.
- Place both halves in crock pot and pour barbecue sauce over them coating well.
- Pour water into the bottom of the crockpot.
- Cut potatoes (I did 8ths) and season with season salt, garlic, and Italian seasonings

- In a small bowl combine the rub ingredients.
- Remove the silver membrane from the back of the ribs. Cut the ribs so they will fit in your slow cooker. Pat them dry with paper towels and massage the dry rub into the ribs. Evenly distribute the rub over the ribs (make sure you get both sides!).
