JAPANESE SPINACH SALAD WITH SESAME DRESSING



Japanese Spinach Salad with Sesame Dressing image

This Japanese sesame spinach salad is nutty, flavourful and a delicious way to enjoy spinach! Ready in 5 minutes, this healthy Japanese side dish is great for meal prep, too.

Number Of Ingredients 6

1 bunch of spinach (225-250g)
Pinch of salt
3 tbsp toasted sesame seeds
2 tsp sugar
4-5 tsp soy sauce
1 tsp sake or mirin

Steps:

  • Bring a pot of water to a boil and place spinach in stem side first. Cook the spinach for 30 seconds and then immediently strain and rinse with cold water.
  • Squeeze out excess moisture and water. Gather the spinach and roughly chop the spinach 3-4 times and then place it into a bowl.
  • Add the toasted sesame seeds to a suribachi (motor / grinding bowl) and grind with surikogi (pestal / wooden stick) and roughly grind the sesame seeds (does not have to all be grinded). Add the sugar, soy sauce and sake/mirin and mix together.
  • Pour the dressing over the spinach and toss together. Serve and enjoy!
  • Leftovers can be stored in an air tight container in the fridge for up to 3 days or frozen for up to 1 month.

You will need a Japanese mortar and pestle (suribachi and surikogi) for this recipe, as the sweet flavor of the roasted sesame is most intense when ground. This can also be made with asparagus instead of spinach.

2 tablespoons sesame oil
1 tablespoon brown sugar
10 cups fresh spinach leaves
4 tablespoons black sesame seeds, toasted

Steps:

  • Heat the sesame oil in a large skillet over medium heat until hot. Add the spinach 3 to 4 cups at a time. Cook and stir to wilt, then add more spinach.
  • Grind the sesame seeds into fine crumbs using a mortar and pestle. When spinach is wilted, move it to the sides of the pan and sprinkle sugar in the center. When the sugar melts, stir in the spinach to coat.
  • Transfer spinach to a serving plate and sprinkle ground sesame seeds on top.

1 tbsp toasted sesame oil
½ tbsp soy sauce
½ tsp toasted sesame seeds , crushed
½ tsp rice vinegar
½ tsp golden caster sugar
1 garlic clove , grated
225g spinach , stem ends trimmed

Steps:

  • Bring a large pot of water to the boil and fill a large bowl with cold water and a handful of ice. Meanwhile, in a medium bowl, stir together the sesame oil, soy sauce, sesame seeds, vinegar, sugar, garlic and pepper to taste, until the sugar has dissolved. Set the dressing aside.
  • Blanch the spinach in the boiling water until just wilted, then scoop straight into the cold water. Drain well and squeeze out any excess water. Gently loosen the clumps of spinach with your fingers, transfer to the bowl of sesame dressing and toss together. Cover and chill for about 1 hr to let the flavours mingle.

2 tablespoons sesame seeds
1 1/2 pounds fresh spinach
2 tablespoons peanut oil
2 tablespoons sesame oil
1 tablespoon soy sauce

Steps:

  • Toast sesame seeds by placing them in a pan in a 300-degree oven for about 10 minutes, until lightly brown. Set aside.
  • Thoroughly wash spinach, dry it and remove stems. Coarsely chop.
  • Heat peanut oil in a large skillet, add spinach and cook, stirring, from three to five minutes, until the moisture has evaporated from the pan and the spinach has just wilted.
  • Spoon spinach into a serving dish, toss with sesame oil and soy sauce and serve sprinkled with sesame seed.

1 lb spinach, stemmed and washed
3 tablespoons sesame seeds
3 tablespoons soy sauce
1 tablespoon sugar

Steps:

  • In a large saucepan cook spinach in 2 cups boiling water for 2 minutes; drain and rinse in cold water.
  • Drain again and squeeze dry.
  • Chop spinach coarsely and set aside in a deep serving dish.
  • In a small skillet over high heat toast sesame seed until light brown (2-3 minutes)and then sesame seed to a mortar and crush with pestle.
  • Stir in soy sauce and sugar.
  • Toss sesame seed mixture with spinach and serve.

20 ounces fresh spinach
2 tablespoons sesame seeds
2 teaspoons sugar
1 tablespoon soy sauce

Steps:

  • Clean the spinach and remove any tough stems. Shake off excess water and place in a pot. Set aside.
  • In a dry skillet, roast the sesame seeds for a couple of minutes until fragrant and golden. DO NOT burn them!
  • Combine sugar and soy sauce. Stir to dissolve the sugar. Add the sesame seeds.
  • Place spinach on high heat and steam for 2-3 minutes until wilted. Drain if necessary. Toss with soy-sesame mixture and serve.
