Steps:
- Coat a slow cooker with cooking spray. Place the bell pepper strips and pork chops into the slow cooker. Pour the teriyaki sauce, vinegar, red pepper flakes, and garlic over the pork chops.
- Cover and cook on Low until the pork is very tender, 8 to 9 hours. Once tender, remove the pork from the slow cooker, and whisk in the peanut butter until smooth. Return the pork to the slow cooker, and cook 10 minutes more.
- Pour into a serving dish and sprinkle with green onions and peanuts to garnish. Decorate with lime wedges to serve.

- Heat the oil in a large saucepan or flameproof casserole. Add the spring onions and coriander stalks and cook for 1 min. Add the pork slices and cook for 5 mins until starting to brown.
- Stir in the curry paste and peanut butter. After 30 secs, add the sugar, soy and coconut milk, plus ½ can of water. Mix well, put a lid on and leave to simmer for 15 mins, stirring occasionally.
- Remove the lid, add the baby corn and increase the heat. Bubble for 3 mins until the corn is cooked and the sauce has thickened a little. Stir in the lime juice and check the seasoning. Can now be frozen for up to 2 months. To cook from frozen: thoroughly defrost, then heat in a pan on the hob until curry is hot all the way through. Serve scattered with the coriander leaves and rice.

- Place pork and bell pepper strips in insert of slow cooker.
- In a separate bowl, whisk together the soy sauce, vinegar, garlic, red pepper flakes and ground ginger. Pour over the pork and peppers in the slow cooker.
- Cover and cook on high for 4 hours or low for 7-8 hours.
- Remove the pork and roughly chop it. (Or you can shred it if you prefer.)
- Add peanut butter to the sauce in the slow cooker and whisk to combine.
- Return pork to the slow cooker, stir to get it covered in the sauce, and let it sit on warm for at least 10 minutes.
- Squeeze fresh lime juice over the pork and serve with rice and desired toppings.

PORK SIRLOIN ROAST WITH THAI PEANUT SAUCE (SLOW COOKER)
I was going to make satay but then saw a beautiful pork roast. So I used it to make a roast that was a real hit at home. I used a 5 quart slow cooker for this. If you use a boneless roast or a different size slow cooker, your time will differ. I am guessing the number of servings. The calorie count is off, as you get a lot of bone in that roast.

- Heat large skillet with oil. Season pork roast with salt and pepper and brown on all sides in skillet. (If you are using a boneless roast, be sure to tie at 1 inch intervals with kitchen twine). This will take about 20 minutes.
- While that is browning, combine all of the sauce ingredients except for the broth in a blender or bowl, and blend until smooth in the blender or with an immersion blender.
- Remove pork roast and place in slow cooker. Reduce skillet to low.
- Pour the broth into the skillet and deglaze. Pour into the sauce and buzz briefly to incorporate.
- Pour over the pork roast.
- Cover and cook on low for about 4 hours, or until roast reads 140-145 deg F. on an instant read thermometer.
- Remove roast to a platter, cover with foil and allow to rest about 10 minutes.
- Buzz the sauce briefly to smooth it out, if you need to. (Mine just needed stirring).
- Slice pork and serve with sauce, garnished with chopped scallions and peanuts. (As I look at the sauce, I think it might be enough for about 6 servings. It's enough for me, but you might want more).

- Sprinkle the pork butt generously with salt, black pepper and about a tablespoon ground cumin. Place in a slow cooker.

- Place the sliced onion in the bottom of a slow cooker set on LOW heat.
- Pat the pork butt dry with paper towels. Set aside while you make the rub.
- In a small bowl, combine onion powder, garlic powder, smoked paprika, dried thyme, salt, cumin, and black pepper to create the rub.
- Rub the spice mixture onto the surface of the pork then place the pork on top of the onions. Cover and cook on low for 8-10 hours or until meat is tender and shreds easily with a fork.
- While the pork is cooking, make the barbecue sauce. In a small sauce, combine the Dijon mustard, honey, vinegar, Worcestershire sauce, chili powder, and smoked paprika in a small saucepan over medium heat. Whisk and bring just to a boil, stirring occasionally. Reduce the heat and simmer, uncovered, for 10 minutes or until slightly thickened, stirring occasionally. Taste and season with salt and pepper. Remove from the heat and allow to cool to room temperature. (The sauce can be made up to 5 days in advance and stored in an airtight container in the refrigerator until ready to use.)
- When the pork is done, remove the meat and onions from the slow cooker into a bowl or platter, using a slotted spoon. Shred the meat with two forks. Taste and add some of the cooking liquid and/or salt and black pepper to taste. Serve with Honey-Mustard BBQ Sauce.
