My husband and I both work long hours. This slow cooker recipe is large enough that the two of us can eat as much yummy pork as we like and still have leftovers! It's important to use low sodium or no-salt products in the recipe or the dish will be too salty.-Dawn Schmidt, Durham, North Carolina

PORK SIRLOIN ROAST WITH THAI PEANUT SAUCE (SLOW COOKER)

Pork Sirloin Roast With Thai Peanut Sauce (Slow Cooker) image

I was going to make satay but then saw a beautiful pork roast. So I used it to make a roast that was a real hit at home. I used a 5 quart slow cooker for this. If you use a boneless roast or a different size slow cooker, your time will differ. I am guessing the number of servings. The calorie count is off, as you get a lot of bone in that roast.

Provided by duonyte

Categories     Pork

Time 4h30m

Yield 6 serving(s)

Number Of Ingredients 12

5 lbs bone-in pork sirloin roast
salt and pepper
1 tablespoon vegetable oil
1/2 cup natural creamy peanut butter
4 tablespoons palm sugar or 4 tablespoons brown sugar
4 tablespoons nam pla
4 -6 large garlic cloves, roughly chopped
1 1/2 tablespoons grated fresh ginger
1 -2 tablespoon sambal oelek (to taste)
1/2 cup low sodium chicken broth
scallion, green portion chopped
chopped peanuts

Steps:

  • Heat large skillet with oil. Season pork roast with salt and pepper and brown on all sides in skillet. (If you are using a boneless roast, be sure to tie at 1 inch intervals with kitchen twine). This will take about 20 minutes.
  • While that is browning, combine all of the sauce ingredients except for the broth in a blender or bowl, and blend until smooth in the blender or with an immersion blender.
  • Remove pork roast and place in slow cooker. Reduce skillet to low.
  • Pour the broth into the skillet and deglaze. Pour into the sauce and buzz briefly to incorporate.
  • Pour over the pork roast.
  • Cover and cook on low for about 4 hours, or until roast reads 140-145 deg F. on an instant read thermometer.
  • Remove roast to a platter, cover with foil and allow to rest about 10 minutes.
  • Buzz the sauce briefly to smooth it out, if you need to. (Mine just needed stirring).
  • Slice pork and serve with sauce, garnished with chopped scallions and peanuts. (As I look at the sauce, I think it might be enough for about 6 servings. It's enough for me, but you might want more).

CROCKPOT PULLED PORK WITH HONEY-MUSTARD BBQ SAUCE

Crockpot Pulled Pork with Honey-Mustard BBQ Sauce image

Tender shredded pork gets a generous drizzle of sweet-tangy Honey Mustard BBQ Sauce for the ultimate set-it-and-forget-it meal the entire family will love.

Provided by Jessica Beacom

Number Of Ingredients 21

1 small yellow onion, thinly sliced
3 lb. boneless pork butt (Boston butt), netting removed if wrapped
1 teaspoon onion powder
1 teaspoon garlic powder
¾ teaspoon smoked paprika
½ teaspoon dried thyme
½ teaspoon fine salt
¼ teaspoon ground cumin
¼ teaspoon black pepper
½ cup Primal Kitchen Dijon Mustard
¼ cup honey
2 tablespoons apple cider vinegar
½ teaspoon Worcestershire sauce (may substitute soy sauce or coconut aminos)
1 teaspoon chili powder
¼ teaspoon smoked paprika
Fine salt and black pepper to taste
Optional: Liquid smoke, a few drops to taste
Baked sweet potatoes or potatoes
Buns (gluten-free, if needed)
Sliced green onions
Primal Kitchen Golden BBQ Sauce (for a convenient pre-made option, use this in place of the homemade Honey-Mustard BBQ Sauce recipe above, if desired)

Steps:

  • Place the sliced onion in the bottom of a slow cooker set on LOW heat.
  • Pat the pork butt dry with paper towels. Set aside while you make the rub.
  • In a small bowl, combine onion powder, garlic powder, smoked paprika, dried thyme, salt, cumin, and black pepper to create the rub.
  • Rub the spice mixture onto the surface of the pork then place the pork on top of the onions. Cover and cook on low for 8-10 hours or until meat is tender and shreds easily with a fork.
  • While the pork is cooking, make the barbecue sauce. In a small sauce, combine the Dijon mustard, honey, vinegar, Worcestershire sauce, chili powder, and smoked paprika in a small saucepan over medium heat. Whisk and bring just to a boil, stirring occasionally. Reduce the heat and simmer, uncovered, for 10 minutes or until slightly thickened, stirring occasionally. Taste and season with salt and pepper. Remove from the heat and allow to cool to room temperature. (The sauce can be made up to 5 days in advance and stored in an airtight container in the refrigerator until ready to use.)
  • When the pork is done, remove the meat and onions from the slow cooker into a bowl or platter, using a slotted spoon. Shred the meat with two forks. Taste and add some of the cooking liquid and/or salt and black pepper to taste. Serve with Honey-Mustard BBQ Sauce.
