- Drain fruit.
- Remove pits& puree in blender.
- Pour into a slow cooker.
- Stir in remaining ingredients.
- Cover.
- Cook on High 8-10 hours.
- Remove cover during last half of cooking.
- Stir occasionally.

- Place apple slices in a slow cooker. Stir sugar and apple pie spice with the apples.
- Cook on High for 4 hours; stir. Remove cover and continue cooking until the apples are very tender and most of the liquid has evaporated, 2 to 2 1/2 hours.
- Scrape apple butter into a bowl; refrigerate 8 hours to overnight.
- Blend apple butter with an immersion blender until smooth. Alternately, you can run the butter through a food mill or blend in a blender.

Steps:
- Cut the beef into 2cm (1 3/4 inch) cubes and toss in seasoned flour to coat.
- Place in crockpot or slowcooker with the remaining ingredients.
- Cover and cook on low for 7 to 8 hours, or high for 4-5 hours until the meat is very tender.
- Serve with boiled rice and a green salad.
- TO COOK IN THE OVEN;- Place the flour coated beef in a casserole dish with the remaining ingredients, cover and cook in a moderately low oven, (160c/325f/gas 3) for 2 to 2 1/2 hours until tender.
APRICOT HONEY BUTTER
This lovely butter is perfect on pancakes, toast, and bagels. It makes 1 pint, so it's perfect for trying and tasting before investing the time for a large batch.

Steps:
- Grate rind and squeeze juice from lemons; you'll need 2 tablespoons grated rind and 1/2 cup lemon juice.
- Combine apricots, lemon rind, water, lemon juice in a medium saucepan. Don't use aluminum; stainless steel is good.
- Bring to a boil over high heat, cover, reduce heat to low and STIRRING FREQUENTLY, keep at a low boil for 35 - 40 minutes or until apricots are tender.
- CAREFULLY pour into blender or food processor and process until smooth. Return to saucepan.
- Add honey; stir and return to boil. Again reduce heat and cook, UNCOVERED, at a low boil until very thick. STIR FREQUENTLY.
- Ladle into hot sterilized jars. Remove air bubbles, wipe rims, add hot lids and rings.
- Process in boiling water bath for 5 minutes OR refrigerate and use within 1 month.
CROCKPOT APRICOT STUFFING AND CHICKEN
Did I mention I love apricots? Here they are with chicken for a tasty meal. I haven't made this yet so I'm guessing at the preparation time. I want to be able to find this recipe so am storing it here! Recipe is from Fix-It and-Forget-It best slow-Cooker recipes magazine, 2010.

Steps:
- In a mixing bowl, make stuffing using 4 tablespoons of the butter and amount of water called for in package directions.
- Cut chicken into 1-inch pieces. Place in bottom of 5-quart slow cooker. spoon stuffing over top.
- In microwave or on stovetop, melt remaining 4 tablespoons butter with preserves. Pour over stuffing.
- Cover and cook on HI heat 2 hours or on HI heat 1 hour and LO heat 2 hours or until chicken is tender.
