SPLIT PEA SOUP (CROCK POT) - DAIRY FREE
Very little prep, just layer in crock pot/slow cooker, leave it for the day and a filling, delicious soup will be ready for dinner. This recipe is a very versatile base split pea soup. For a Vegan option, omit the meat. I have made this recipe using ham, ham hock, and bacon. I have used veggie broth, chicken broth and water... each tasting different but yummy! I have reduced the salt but have not adjusted the recipe as written. This soup is even better the next day, it freezes well. This tends to be a thicker soup (especially once it has cooled) so adjust liquid after cooking to desired thickness.

CROCK POT INTERNATIONAL SPLIT PEA SOUP
In Canada, it is a traditional Quebec dish, made with split yellow peas and flavoured with salt pork. Citizens of the Middle East are likely to enjoy a vegetarian version, seasoned with cumin and lemon. This recipe borrows a bit from each of these cuisines. I like to serve this soup steaming hot with plenty of fresh, dark bread, coleslaw and sliced Cheddar cheese. It makes a great winter meal.

- Cover and cook on Low for 12 hours or on High for 6 hours, until vegetables are tender and broth is well flavoured.
- Remove ham hock and stir in lemon juice.
- Ladle into bowls an garnish with parsley.
- TIPS: Traditionally, yellow split peas are not soaked before cooking, but I have found that they can be tough unless they are pre-soaked.
- To be safe, I suggest the following: Bring the peas and 6 cups water to boil.
- Boil rapidly for 1 minute, then let sit while you prepare the rest of the ingredients.
- Drain and rinse before adding to the recipe.
- Smoked ham hocks are available from butchers and can often be found in the meat section of well-stocked supermarkets.
- They are wonderful flavour enhancers, particularly for legumes.
- VARIATION: South-western-Style Split Pea Soup: In a heatproof bowl, soak 2 New Mexico chillies in 2 cups boiling water for 30 minutes.
- Drain and discard liquid and stems.
- Chop finely.
- Add to soup along with onions and other ingredients.
- For a spicier version, add 1 finely chopped jalapeno pepper along with the reconstituted chillies.
- To serve, top with sour cream and garnish with finely chopped cilantro instead of parsley.
- MAKE AHEAD: This soup can be cooked overnight, then refrigerated until ready to serve.

CROCK POT YELLOW PEA SOUP WITH CHORIZO
This is a different soup rather than the usual green pea soup that we are all used to. It has a southwest zing to it and it is very hearty. The chorizo sausage gives the soup a smokey flavor and the corn and peppers give it a nice texture.

CHICKPEA AND CHORIZO SOUP
This simple Spanish-style Chickpea and Chorizo soup is a favorite at our house, making an appearance at least once a month (if not more!) during the chilly months. The recipe starts off simply--sliced Spanish-style chorizo sauteed with onions and garlic until fragrant. Then you add some rinsed canned chickpeas, tomatoes, a few spices, and chicken broth, and let the whole thing simmer for about half an hour or so. And that's really it! Serve it up right away or divide into batches for lunch tomorrow. This thing can be heated and reheated half a dozen times, and it always tastes fantastic. A chunk of crusty bread is optional, but definitely recommended.

Steps:
- Heat the oil in a large pot over medium heat. Add the chorizo and onion and cook until the chorizo crisps slightly and the onion softens, 3 to 4 minutes. Stir in the garlic, paprika, cumin and cayenne until combined. Stir in the chickpeas, tomatoes with their liquid and chicken broth until combined. Bring the liquid to a boil, then lower the heat and simmer until the liquid has reduced slightly, about 20 minutes. Season to taste with the salt and black pepper. Serve with crusty bread, if desired.
GOLDEN YELLOW SPLIT PEA SOUP (CROCKPOT / SLOW COOKER)
I modified this from a Food and Wine recipe--and I think it is a keeper! We like to have it with grilled ham and cheese (or just cheese for Lent). I especially like this as the seasoning is a little different and makes a nice change from our usual split pea and ham soup.
