CROCK POT PORK TENDERLOIN WITH BALSAMIC SAUCE
Crock Pot Pork Tenderloin with Balsamic Sauce is a mouthwatering easy recipe. With just a little more than a handful of ingredients and a few hours you can have a tender pork roast cooked in a tasty balsamic sauce.

Steps:
- 1. Season tenderloin with salt and pepper. Heat canola oil in large skillet over medium heat. Brown the tenderloin on all sides and then place in slow cooker. In same skillet melt butter over low heat. Add minced garlic; cook for 1 minute. Whisk in balsamic vinegar and brown sugar; cook until sugar is dissolved. Pour over pork tenderloin.
- 2. Cook on low for about 3.5-4 hours basting every hour with the balsamic sauce Test to see if done after 3 hours by inserting a meat thermometer into the center. It is done when it reaches 145 degrees. Turn the crock pot to high the last 15 minutes of cooking.
- 3. Remove pork tenderloin, plate it and cover it. Blend cornstarch and water. Whisk the cornstarch mixture into the juices left in the crock pot. Cover crock pot and cook for 10-15 fifteen minutes to thicken. Slice the pork tenderloin and serve with the warm balsamic sauce

- Mix together the seasonings: sage, salt, pepper and garlic.
- Rub over tenderloin. Place 1/2 cup water in slow cooker; place tenderloin in slow cooker.
- Cook on low for 6-8 hours.
- 1 hour before the roast is finished, mix together the ingredients for the glaze in a small sauce pan: brown sugar, cornstarch, balsamic vinegar, water, soy sauce.
- Heat over medium and stir until mixture thickens, about 4 minutes.
- Brush roast with glaze 2 or 3 times during the last hour of cooking.
- For a more caramelized crust: remove from crock pot and place on aluminum lined sheet pan, glaze, and set under broiler for 1-2 minutes until bubbly and caramelized. Repeat 2 to 3 more times until desired crust is achieved.
- Serve with remaining glaze on the side.

BALSAMIC ROAST PORK TENDERLOINS

- Preheat oven to 500 degrees F.
- Trim silver skin or connective tissue off tenderloins with a very sharp thin knife.
- Place tender loins on a nonstick cookie sheet with a rim. Coat tenderloins in a few tablespoons of balsamic vinegar, rubbing vinegar into meat. Drizzle tenderloins with extra-virgin olive oil, just enough to coat. Cut small slits into meat and disperse chunks of cracked garlic cloves into meat. Combine steak seasoning blend or coarse salt and pepper with rosemary and thyme and rub meat with blend. Roast in hot oven 20 minutes.
- Let meat rest, transfer to a carving board, slice and serve.
PORK TENDERLOINS WITH BALSAMIC-RAISIN SAUCE
Very little prep for this delicious dish, but the raisins do have to soak in wine for 8 hours to plump up full of flavour. Just put them in the wine in the morning as you're leaving for work.

- Place raisins and wine in small saucepan; let stand 8 hours.
- Add brown sugar and 1 tblsp balsamic vinegar to raisins.
- Boil over high heat until liquid is reduced to 1 tblsp, about 7 minutes.
- Add broth and continue to boil until reduced by half (can be prepared 2 days ahead; chill).
- Preheat oven to 450 degrees F.
- Heat olive oil in large, ovenproof skillet over medium-high heat.
- Add tenderloins and cook until brown on bottom, about 3 minutes.
- Add onion and shallots and continue to cooking until pork is brown on all sides and onion is tender, about 6 minutes.
- Add garlic; place skillet in oven and cook until thermometer inserted into thickest part of meat registers 140F, about 4 minutes.
- Transfer pork to platter.
- Tent with foil to keep warm.
- Add raisin mixture to skillet.
- Boil, scraping up any browned bits.
- Add remaining 1 ½ tblsps vinegar.
- Remove from heat and whisk in butter, 1 tblsp at a time.
- Season and keep warm.
- Slice pork into ½ inch thick slices.
- Arrange in slightly overlapping rolls in center of a large platter.
- Surround with oven-roasted vegetables.
- Pour sauce over pork and serve.
BBQ PORK TENDERLOIN IN THE CROCK POT
I wanted to make BBQ pork tenderloin in the slow cooker, but not pulled pork. This worked out nicely so I thought I'd post the recipe so I can make it again. Hope you enjoy it too. This was easy to slice, though could have easily been shredded as well. Served with rice to put the extra sauce on, along with a veg (I used peas and carrots). I only cooked 1 pork tenderloin and had lots of sauce leftover so you might only want to double the sauce if you do 3 or more tenderloins I would guess?!?

- Melt 1/2 tablespoon butter in heavy large ovenproof skillet over medium-high heat.
- Sprinkle pork with salt and pepper.
- Sear pork on all sides, about 2 minutes.
- Place skillet with pork in oven.
- Roast pork until thermometer inserted into center registers 155°F, about 10 minutes.
- Meanwhile, melt remaining 1 tablespoon butter in heavy medium skillet over medium-high heat.

CROCK POT PORK TENDERLOIN
This is a recipe from Pillsbury's Slow Cooker Recipe book that I've altered slightly. The fennel seeds and paprika really give the tenderloin a fantastic taste! Though the Yukon Gold and sweet potatoes go great with the pork, any potato will work.

- 1. Place potatoes in slow cooker.
- 2. In a small bowl combine fennel seeds, oregano, paprika, garlic powder, salt and pepper. Mix well.
- 3. Rub mixture onto pork tenderloin. Tenderloin might have to be cut in half in order to fit into the slow cooker. (The rub can be applied to the tenderloin the night before and refrigerated to save time and add extra flavor.).
- 4. Place tenderloin on potatoes.
- 5. Pour broth over pork and potatoes.
- 6. Cover; cook on low setting for 8-9 hours.
