1 cup long grain Jasmine rice
8 cloves garlic
2 cups chicken stock (low sodium)
1 bunch fresh thyme
4 bone-in chicken thighs
1 1/2 teaspoons kosher salt
1 teaspoon pepper
juice of 1 fresh lemon

Steps:

  • Season chicken thighs liberally with salt and pepper on both sides.
  • Heat skillet over medium high heat. Add in 2 teaspoons olive oil and sear chicken on both sides, 2 minutes per side.
  • Stir together rice, garlic, stock and fresh thyme in slow cooker. Place chicken thighs on top of mixture.
  • Cook on high for 2 hours.
  • After 1.5 hours of cook time, check the internal temperature of your chicken. Remove from slow cooker if it has reached 165 degrees. Place on a plate and tent with foil until the rice has finished cooking.
  • Remove thyme stalk before serving and stir in fresh lemon juice.

Steps:

  • Turn a slow cooker to High. Combine chicken broth, lemon juice, garlic, garlic powder, and cayenne in the bottom of the cooker until mixture heats through, about 5 minutes.
  • In the meantime, heat oil in a skillet over medium-high heat. Season both sides of chicken thighs with salt and pepper and place in the hot skillet. Cook, turning occasionally, until crisp on both sides, 5 to 7 minutes total. Remove chicken from the pan and set aside.
  • Turn slow cooker to Low and add rice, carrots, and chicken. Cover and cook until chicken is no longer pink at the bone and the juices run clear, about 4 hours. An instant-read thermometer inserted near the bone should read 165 degrees F (74 degrees C).

This recipe is inspired from the Lemon Garlic Chicken recipe from the Chicken Dump Cookbook by Sharla Kostelyk. The idea is to quickly assemble several meals to use, freeze, or gift. The ingredients below will make one large family meal using a 2.5-3 pound bag of chicken. You can easily divide this into smaller bags for smaller families, singles, or couples.

6-8 chicken breasts or 8-10 boneless, skinless chicken thighs
4-6 cloves of garlic, minced
2 tablespoons chopped fresh parsley
⅓ cup olive oil
1½ lemons, juiced
½ teaspoon pepper

Steps:

  • Label your gallon zippy bag with the recipe name and cooking instructions.
  • Fold down top of bag so that it will stand upright while you fill it.
  • Add all ingredients to bag.
  • Press out air and seal.
  • Refrigerate for up to 2 days, or freeze flat. Cooking Instructions

1 Tbsp. garlic, (chopped)

2 lbs boneless, skinless chicken thighs ((trim any excess fat and discard))
3 Tbsp. salted butter, (sliced)

  • Add the chicken broth, lemon juice, leeks, garlic, oregano, thyme, salt and pepper to the slow cooker. Stir. Add the chicken thighs into the mixture.

1 yellow onion, diced
5 garlic cloves, minced
2 cups chicken broth
1 1/4 cups long grain brown rice
1/8 tsp salt
3 Tbsp lemon juice, divided
6 boneless, skinless chicken thighs
1 tsp lemon pepper seasoning
1 Tbsp butter
1/4 cup parmesan cheese
3 tsp lemon zest
Salt and pepper

Steps:

  • Turn your Instant Pot to the saute setting. When the display says HOT add in the olive oil and swirl it around. Add in the onion and stir. Saute the onion for about 3 minutes and then add in the garlic cloves. Saute the garlic for 30 seconds and then add in the chicken broth.
  • Add in the rice, salt, 2 Tbsp of the lemon juice. Nestle the chicken into the pot and sprinkle with the lemon pepper seasoning.
  • Cover the pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 22 minutes on high pressure. When the time is up let the pot sit there for 5 minutes and then move the valve to venting. Remove the lid.
  • Stir in the butter, parmesan and 1 Tbsp lemon juice and lemon zest. Salt and pepper to taste.
  • Scoop onto plates and serve.
