A sweet and tart cherry chicken summer dish that's built in a single pan, making for minimal cleanup! Tender, juicy chicken thighs with crispy skin are topped with a sweet-sour fresh cherry sauce.

Number Of Ingredients 10

6 chicken thighs (possible to use breasts too)
1 tablespoon kosher salt
1/4 cup balsamic vinegar
2 tablespoons honey
1/2 cup olive oil
1 cup minced shallots (about 2 large or 4 medium)
handful fresh rosemary springs
2 cups cherries (any kind, pitter)
kosher salt (to taste)
black pepper (to taste)

Steps:

  • Pat the chicken thighs (or breasts) dry with a paper towel and season with kosher salt. Let it sit out while you prep the rest of the ingredients.
  • Whisk together the balsamic, honey, olive oil, shallots, salt and pepper. Place the chicken in a re-sealable plastic bag and pour in the marinade. Seal the bag and make sure all the chicken is coated. Let sit at least 30 min and up to overnight in the fridge. Take out of the fridge 30 minutes before placing in hot oven.
  • Meanwhile, pit the cherries and set aside.
  • To cook chicken: about 30 min before, take it out of the fridge so chicken can come to room temperature. Preheat oven to 400 degrees F. Place chicken thighs (or breasts) skin side up in a shallow roasting dish or cast iron skillet. Nestle the rosemary springs in between the chicken pieces of top with the pitted cherries, moving them around so they fall in between the chicken pieces leaving as much as the skin exposes as possible. The pour the marinade over the chicken. The marinade should generously cover the bottom of the pan.
  • Slide the pan into the oven and rotate every 10-12 minutes.
  • Cooking times; for breasts: cook 20 minutes; for thighs: cook 45minutes. If using both remove the breasts while the dark meat continues cooking.
  • When the dark meat is tender at the bone and cooked through, return breasts to the pan and increase oven to 450 F. Let the sauce reduce and the chicken skin get dark and crispy, about 12 minutes. Move the cherries around again in needed to expose more chicken skin. Brush the chicken with the marinade from the pan every 3-4 minutes to glaze them.
  • Serve warm, with crunchy sea salt and freshly grinded black pepper.

1 cup jarred sweet cherries
1/4 cup balsamic vinegar
1 tablespoon Dijon mustard
1 teaspoon fennel seed, toasted
1 teaspoon kosher salt
1 clove garlic, smashed and peeled
One 3 1/2-pound chicken, cut into 8 pieces
2 tablespoons olive oil
1/2 teaspoon fennel pollen or ground toasted fennel seed

Steps:

  • Combine the cherries, vinegar, mustard, fennel seed, salt and garlic in a blender. Puree until smooth. Place the chicken pieces in a resealable plastic bag and pour the marinade over the chicken. Seal the bag and toss to coat. Marinate in the refrigerator for 2 hours.
  • Remove the chicken from the refrigerator 30 minutes before grilling. Preheat a grill to 450 degrees F or medium-high heat with indirect heat on one side.
  • Remove the chicken pieces from the marinade and place on a baking sheet; reserve the marinade. Drizzle with the olive oil. Place the chicken on the grill over direct heat and cook undisturbed for 4 minutes. Flip the chicken, move to indirect heat and baste with the marinade. Cover the grill and roast until the chicken is cooked through, about 30 minutes. Remove to a platter and sprinkle with the fennel pollen.

3 tablespoons vegetable oil
1 stick butter
12 (6-ounce) boneless skinless chicken breasts
1 Spanish onion, thinly sliced
4 cloves garlic, chopped
2 pints cherry tomatoes, quartered
6 tablespoons balsamic vinegar
2 cups red wine
2 teaspoons salt
Freshly ground black pepper
3 tablespoons parsley, chopped for garnish

Steps:

  • Preheat the oven to 350 degrees F.
  • Put the vegetable oil and butter into a large skillet and place over high heat. Once the butter and oil are bubbling, add the chicken breasts to the skillet 4 at a time. Sear on each side until the chicken is golden, about 1 minute per side. Remove to a large baking dish. Repeat with the remaining breasts and set aside.
  • Add the onion and garlic and cook, stirring occasionally, until the onions are soft, about 5 minutes. Add the tomatoes, toss to combine and then follow with the balsamic vinegar and red wine and season with salt and pepper. Bring up to a bubble then reduce the heat and let simmer for 10 minutes. [Simmering the wine in this mixture does not reduce the alcohol content substantially.]
  • Pour the balsamic mixture over the chicken and place the pan in the top half of the oven for 10 minutes, or until the chicken has just cooked through. Remove from the oven, garnish with freshly chopped parsley and set into a prepared chafer.

4 boneless chicken breasts
2 teaspoons kosher salt, divided
1 teaspoon freshly ground black pepper (divided)
1 tablespoon canola or vegetable oil (divided)
1 tablespoon olive oil
1 cup thinly sliced shallots ((about 2 - 3 medium shallots))
4 garlic cloves (minced)
2 pints cherry or grape tomatoes ((2 x 283g clamshells), left whole)
1/4 cup balsamic vinegar
Freshly grated Parmesan cheese (for garnish)
Fresh basil (for garnish)
Crusty bread (for serving, optional)

Steps:

  • If chicken breasts have tenders, remove the tenders for another use. Working with one chicken breast at a time, place one in a zipper bag and pound with a meat mallet or rolling pin to flatten to ½" to 1" thickness. Continue with remaining pieces. Season the chicken with half of the salt and pepper.
  • Heat about 3 teaspoons of canola or vegetable oil in a 12" skillet over medium-high heat.
  • Cook chicken in batches; add two chicken breasts at a time to the hot oil and cook for 4 minutes, without disturbing. Flip over and cook another 4 minutes or until the chicken is fully cooked. Remove chicken to a serving platter, tent with foil. Add remaining 3 teaspoons oil to the skillet and repeat process with remaining two pieces of chicken. Keep chicken tented and warm and allow the juices to accumulate.
  • Add 1 tablespoon olive oil to the same skillet. Add shallots and cook over medium-high heat until tender, about 2 minutes. Add garlic and cook 2 more minutes.
  • Add balsamic vinegar and tomatoes and stir until heated, about 1 - 2 minutes. Cover with a lid and cook for 7 - 8 minutes without uncovering, while shaking the pan from time to time. Moisture will accumulate in the pan and the tomatoes will start to break down and burst. Remove from heat, season with salt and pepper.
  • Pour the balsamic tomato sauce over the chicken and accumulated juices on the platter. Garnish top with freshly grated Parmesan cheese and fresh basil. Serve with optional crusty bread.

6 chicken breasts
2 tsp salt
2 Tbsp olive oil
1 c thinly sliced onions
1/4 c balsamic vinegar
1 1/2 c chicken broth
1 jar(s) cherry preserves

Steps:

  • 1. Pat dry chicken and season with salt.
  • 2. In a heavy skillet heat olive oil. Sauté seasoned chicken until browned, 12-15 minutes. Remove chicken. Add onions to skillet and sauté until tender, 5-6 minutes. Add vinegar and reduce to just a couple of tablespoons.
  • 3. Add broth, bring heat to high and reduce by half.
  • 4. Add cherry preserves and cook for an additional 5 minutes until the sauce is thick.
  • 5. Return chicken to pan to heat through while spooning sauce over chicken. Serve hot.

1/2 teaspoon dried basil

2 cups grape or cherry tomatoes, (halved)
1/4 red onion, (peeled and sliced)

Steps:

  • Preheat oven to 220°C | 430°F.
  • Place chicken breasts in a baking dish and drizzle with olive oil. Season with oregano, basil, salt, pepper and 1 tablespoon of minced garlic. Rub seasoning all over each breast. Arrange the tomatoes and red onion around the chicken in the dish.
  • Whisk together the balsamic vinegar, sugar and remaining garlic in a jug to combine. Pour over the chicken breasts, flip each breast in the sauce to evenly coat.

4 chicken breasts (or a package of fresh chicken tenders {I use air chilled chicken tenders})
1 onion (medium chopped)
2 cups cherry tomatoes (1 package sliced in half)
1 1/2 cups mushrooms (sliced)
1/2 cup parmigiano reggiano cheese
basil (chopped {I used 5 large leaves} use more if you like)
2 tablespoons balsamic vinegar
2 teaspoon olive oil (divided - one tablespoon for cooking mushrooms and onions and one tablespoon for balsamic mixture)
1/4 cup water
1 teaspoon garlic (chopped )
salt and pepper to taste

Steps:

  • I have come to realize I really like to have my veggies cooked...so I have begun to sauté them before adding them into a casserole.
  • Preheat oven to 325 degrees.
  • In a skillet I pre-cooked my chicken in a small amount of water instead of olive oil to save on calories. In a second skillet I added 1 teaspoon of olive oil and sautéed the chopped onion and mushrooms until tender.
  • In a mini food processor {or blender} I blended 2 tablespoons of balsamic vinegar, 1 teaspoon olive oil, garlic, basil and water.
  • Fill the bottom of a casserole dish with the chicken, adding the mushroom and onion mixture and top with tomatoes. Add salt and pepper to taste then pour the balsamic mixture over the chicken and dust with cheese. Bake for 20 minutes or until tomatoes are wilted.
  • Cauliflower rice makes a great alternative to rice.
