SIMPLE STEAMED GREEN BEANS



Simple Steamed Green Beans image

A simple and tasty side dish when fresh green beans are plentiful. Prep time doesn't include time to prep the beans before steaming.

1 1/2-2 lbs fresh green beans (about 1 inch long)
2 tablespoons butter or 2 tablespoons margarine
1 teaspoon olive oil
kosher salt
pepper

Steps:

  • Prepare green beans by snapping them or cutting them to approx 1 inch in length and rinsing them.
  • Over a pot of boiling water, steam beans for 15-20 minutes (until just tender with a little"bite" to them; Also, to steam I use a covered colander over a Dutch oven filled 1/4th full with water) Remove steamed beans and turn into a serving bowl.
  • Add all of the rest of the ingredients, seasoning to taste.
  • Enjoy!

I learned this seasoning trick from a restaurant chef. It really improves the flavor but keeps the green beans healthier than adding a lot of butter to them. I have never liked green beans but I love them prepared this way. My kids do too!

1 teaspoon extra virgin olive oil
1 teaspoon brown sugar
pepper, to taste

Steps:

  • Wash and snap the green beans. Place in a steamer basket and steam for about 18 minutes or until desired tenderness.
  • Place beans in serving bowl and drizzle with olive oil, stirring to coat. Sprinkle half the brown sugar on, toss to coat. Sprinkle on remaining brown sugar and pepper, tossing again.

  • Set a steamer basket insert into a large saucepan and fill with water to a level just below the steamer. Bring to a boil. Add green beans, and steam to your desired degree of tenderness, or about 5 minutes.
  • Once the beans have cooked, transfer them to a serving bowl. Toss with olive oil, garlic, salt, pepper, white wine vinegar, and Parmesan cheese. Let stand for 10 minutes. Remove garlic slices and garnish with parsley before serving.
