1 tablespoon unsalted butter
all-purpose flour, as needed
1 cup all-purpose flour
½ teaspoon coarse salt
½ teaspoon baking powder
¼ teaspoon baking soda
4 tablespoons unsalted butter, at room temperature
¾ cup white sugar
1 large egg
½ cup low-fat buttermilk
2 medium ripe plums, pitted and thinly sliced
2 tablespoons white sugar

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Butter an 8-inch cast iron or oven-proof skillet. Dust with flour, tapping out any excess.
  • Whisk together 1 cup flour, salt, baking powder, and baking soda in a medium bowl.
  • Combine 4 tablespoons butter and 3/4 cup sugar in a large bowl; beat with an electric mixer on medium speed until pale and fluffy. Beat in egg. Add flour mixture in 3 batches, alternating with buttermilk, beating batter briefly after each addition. Pour batter into the prepared skillet and smooth the top with an offset spatula. Fan plum slices on top of batter, and sprinkle with remaining 2 tablespoons sugar.
  • Bake in the preheated oven until golden brown and a toothpick inserted into the center comes out clean, 35 to 40 minutes. Let cool slightly before serving.

4 tablespoons unsalted butter, room temperature, plus more for skillet
1 cup all-purpose flour, plus more for skillet
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon coarse salt
3/4 cup plus 2 tablespoons sugar
1 large egg
1/2 cup buttermilk
2 ripe medium plums, thinly sliced

Steps:

  • Preheat oven to 375 degrees F. Butter an 8-inch ovenproof skillet (preferably cast iron), and dust with flour. Whisk together flour, baking powder, baking soda, and salt. With an electric mixer on medium, beat butter and 3/4 cup sugar until pale and fluffy, 3 to 5 minutes. Beat in egg. Add flour mixture in 3 batches, alternating with buttermilk; beat until combined.
  • Transfer batter to the prepared skillet; smooth top. Arrange plums on top, fanning the slices; sprinkle with the remaining 2 tablespoons sugar.
  • Bake until golden brown and a cake tester into center comes out clean, 35 to 40 minutes. Transfer to a wire rack to cool slightly before serving.

Another recipe from my favorite Reader's Digest cookbook (called Down Home Cooking). It's a breakfast dish that resembles a giant puffy pancake. The recipe originated in South Carolina in the 18th century, and this version is topped off with assorted fresh berries (and any berries can be used, such as raspberries, strawberries, blueberries).

2 tablespoons unsalted butter or 2 tablespoons margarine
3 large eggs
1 large egg white
1 cup low-fat milk (1% milk fat)
2/3 cup all-purpose flour
2 tablespoons granulated sugar
1 1/2 teaspoons grated orange rind
3 tablespoons orange juice
1 1/4 teaspoons ground cinnamon
1/4 teaspoon ground nutmeg
2 tablespoons confectioners' sugar
2 cups fresh berries (optional)
maple syrup (optional)

Steps:

  • Preheat oven to 425°F
  • In a heavy, oven-proof skillet, melt butter in the oven.
  • In a large bowl, with electric mixer, beat eggs, egg white, milk, flour, sugar, orange rind, orange juice, 1/4 reaspoon of the cinnamon, and nutmeg for 2 minutes or just until smooth.
  • Remove the skillet from the oven, tilt to coat the sides with the melted butter. Pour mixture over the butter, and return to oven to bake (at 425°) for 20 minutes or until puffed and golden.
  • In a small bowl, mix the confectioner's sugar with the remaining 1 teaspoon of cinnamon, and sprinkle over the cake.
  • Serve with fresh berries or syrup if you wish.

It is just a good basic recipe--only your imagination limits what you can do with it. It is just a good ole southern recipe and super simple. Awesome with fresh strawberries.

1 egg
1 cup self-rising flour
1 teaspoon vanilla extract
¼ cup milk, or as needed

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Melt butter in a 9-inch cast iron skillet over low heat. Transfer 1/2 of the melted butter to a mixing bowl, leaving remaining butter in the skillet.
  • Add sugar to the mixing bowl and beat with the melted butter until well blended. Add egg and mix until well beaten. Mix in flour and vanilla. Add milk, 2 tablespoons at a time, until mixture is the consistency of pancake batter. Pour batter into the skillet.

1 ½ cups all-purpose flour
1 ½ cups white sugar
1 ½ sticks unsalted butter, melted
1 large egg
1 teaspoon almond flavoring
1 pinch sea salt
¼ cup sliced almonds
2 tablespoons white sugar

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Line a 10-inch cast iron skillet with aluminum foil with the ends hanging over. Spray lightly with cooking spray.
  • Combine flour, sugar, butter, egg, almond flavoring, and salt in a bowl. Mix well. Pour batter into the prepared cast iron pan and smooth it level. Sprinkle top with almonds and sugar.
  • Bake in the preheated oven until lightly browned, about 40 minutes.

Steps:

  • Preheat oven to 350
  • Grease and flour a 9 or 10 inch iron skillet.
  • Mix 2 T sugar and 2 t cinnamon together and set aside.
  • Put flour, 1 1/2 cup sugar, baking powder, vanilla, salt, eggs, and whipping cream together in large bowl. Beat with mixer till well blended.
  • Pour in prepared skillet and bake 35 to 45 minutes.
  • When done turn our on wire rack, then over on cake plate.
