Slow Cooker Green Chile Chicken Enchilada Soup takes everything you love about chicken enchiladas and puts it in soup form and is especially easy because it's a crock pot recipe!

2 Tablespoons olive oil
1 medium yellow onion (chopped)
2 teaspoons garlic (minced)
2 chicken breasts (boneless, skinless)
1.5 teaspoons salt
2 teaspoons chili powder
1 teaspoon cumin
2 teaspoons oregano (or Mexican oregano)
4 cups chicken stock
8 oz green enchilada sauce (divided)
1/2 cup green chiles (diced)
2 cups water
4 small corn tortillas
4 oz cream cheese
1 cup Monterey Jack cheese (shredded)

Steps:

  • Add the olive oil to your slow cooker bowl then add the chopped onion, chicken breasts, minced garlic, and all the seasonings (salt, chili powder, cumin, oregano).
  • Next, pour in the chicken stock, green chiles, and half of the enchilada sauce.
  • Cover and cook on low for 6 hours or high for 3.5. hours.
  • While the soup is cooking, add 4 torn corn tortillas to a blender with the remaining enchilada sauce and 2 cups of water. Blend until completely mixed. Set aside for later.
  • After the cook time is up, use two forks to shred the chicken. It should shred very easily.
  • Add the blended tortilla mixture to the slow cooker and mix well.
  • Add in the cream cheese and half of the Monterey Jack cheese. Stir and cover. Turn the slow cooker to high and cook another 30 minutes (or 1 hour on low).
  • Once done, give a good stir to distribute the cheeses.
  • Ladle into bowls and top with any/all of the following: tortilla strips (recipe below), more shredded cheese, cilantro, diced tomatoes, sour cream.
  • While your soup is cooking, preheat your oven to 350 degrees and line a baking sheet with parchment paper or foil. Spray with non-stick spray.
  • Cut the remaining 4 corn tortillas into strips and arrange into a single layer onto your prepared baking sheet. Gently spray the tops with non-stick spray and sprinkle with salt.
  • Bake for 10 minutes until lightly brown and crisp.

2 -3 tablespoons fresh cilantro
2 cups chicken broth or 2 cups chicken stock
8 ounces cream cheese, softened
monterey jack pepper cheese, to taste
sour cream, to taste
fresh lime, to taste
additional cilantro, to taste

Steps:

  • In a large crockpot pour in the green enchilada sauce, drained and rinsed white beans, drained and rinsed black beans, and fat-trimmed boneless skinless chicken thighs or breasts.
  • Add the undrained diced fire-roasted green chiles, diced tomatoes, chili powder, cumin, paprika, salt, pepper, coarsely chopped fresh cilantro, and chicken broth or stock.
  • Cover and cook on low for 5 to 7 hours or on high for 3 to 5 hours or until the chicken easily shreds.
  • Remove the chicken from the crockpot and place in another bowl. Add softened cream cheese (cube into smaller pieces and melt in the microwave) into the crockpot.
  • Cover and cook on high for another 30 minutes or until the cream cheese melts completely and is easily stirred into the soup.

3 cups shredded cooked chicken
1 can (15 ounces) black beans, rinsed and drained
1 can (10-1/2 ounces) condensed cream of chicken soup, undiluted
1 can (10 ounces) mild green enchilada sauce
1 can (4 to 4-1/2 ounces) chopped green chiles
1/4 cup minced fresh cilantro
1 tablespoon lime juice
9 corn tortillas (6 inches)
3 cups shredded Colby-Monterey Jack cheese
Optional: Minced fresh cilantro, lime wedges, salsa and sour cream

Steps:

  • In a large bowl, combine the first 7 ingredients. Cut three 30x6-inch strips of heavy-duty foil; crisscross so they resemble spokes of a wheel. Place strips on bottom and up sides of a round 4- or 5-qt. slow cooker. Coat strips with cooking spray. Spread 1/4 cup chicken mixture over bottom of slow cooker. Top with 3 tortillas, overlapping and tearing them to fit, a third of the chicken mixture and a third of the cheese. Repeat twice., Cook, covered, on low until a thermometer reads 165°, about 4 hours. To avoid scorching, rotate slow cooker insert one-half turn midway through cooking, lifting carefully with oven mitts. Turn off slow cooker; let stand, uncovered, 15 minutes before serving. 1 box Rice-a-Roni Spanish style rice
1 1/2 c frozen corn
1 can(s) diced green chilies, 4 oz.
3 c chicken, cooked and cut into small pieces
1 can(s) pinto beans, drained and rinsed, 15 oz.
1 jar(s) salsa, 15.5 oz
3/4 c sour cream
1 can(s) cream of chicken soup, 10.5 oz.
2 1/2 c Mexican blend shredded cheese

6 extra large flour tortillas

  • 1. Cook Rice-a-Roni according to directions on the box. Add corn after you add water and seasoning packet.
  • 2. While rice is cooking, combine in a large bowl: chilies, chicken, pinto beans, 1/2 the salsa, sour cream, cream of chicken soup, 1 cup of cheese, and the chili powder. When rice is done cooking, add half the cooked rice to the other ingredients and stir all together.
  • 3. Spray Crock Pot with non-stick spray. Cut the 6 tortillas in half. Put a large spoonful of filling in the middle of the tortilla and put seam-side down in the bottom of Crock Pot.
  • 4. Spread remaining rice, salsa, and cheese over each layer.
  • 5. Depending on how large your Crock Pot is, you will get either 2 or 3 layers.

I had intended to come here and post a reply to a recipe I'd based my own off of, but I can't find it now. So I'll enter my own version as a separate recipe. I melded this from a recipe here that said it was a copycat of a restaurant's recipe, and one from another site that was for crock pot tortilla soup. I use a whole onion because I like onion, but it IS a lot. And frankly I guesstimate the spices. But it's delicious. And, I think, fairly healthy. This is also very easy, and I make it a lot. It doesn't have many ingredients, it just cooks in a crock pot, and it's great for lunches all week (which is why I make it).

1 lb chicken breast
1/2-1 onion
32 ounces chicken broth (I use low-fat or low-sodium, 8 ounces?) or 32 ounces vegetable broth, plus one can (I use low-fat or low-sodium, 8 ounces?)
1 (10 ounce) can enchilada sauce
1 -2 cup shredded cheese (I use low-fat)
1 cup masa harina
2 cups water
cilantro, to taste (dried or fresh, or both)
garlic or garlic powder
salt
cumin
chili powder
taco seasoning (optional)
tortilla chips (to garnish)
green onion (to garnish)

Steps:

  • Chop the onion and lay it in the bottom of the crock pot.
  • Cook (I boil them) the chicken breasts, then shred them with a fork.
  • Layer that over the onions.
  • I add some chopped garlic (a teaspoon or so) and then add several teaspoons of dried cilantro, although fresh is good too (when I've used fresh I still add a bit of dried; this can be a bland recipe without spice!). Throw in salt, cumin, garlic powder (if using) and chili powder to taste (taste later, of course; you can add more!) and/or the taco seasoning. I also sometimes put in half a can of green enchilada sauce.
  • Add the red enchilada sauce, and then the broth.
  • Turn the crock pot on high and let it cook for about 3 hours. You want the onions to cook.
  • Then mix your cup of masa harina with your two cups of water, in a separate bowl. Make sure to whisk it well, with no lumps. The masa harina will give it a corn tortilla-type flavor, and will not overly thicken the soup (if it does, add more broth or water), but make sure you've mixed it well before you add it so you don't have lumps. Stir.
  • Let that cook at least half an hour.
  • Taste. Add more spice if necessary.
  • Add the cheese. Two cups is more cheesy, more tasty, but also more fatty. As I'm a fan of extra cheese on top when I'm going to eat it, I tend to go for one cup in the soup and add more later.
  • Stir. Let that cook just a few more minutes, then serve with chips, green onion.
