Our favorite sweet potato side dish. It's a great fall comfort food and easy to prepare with ingredients on hand. Enjoy!

Steps:
- Melt butter in an oven safe casserole.
- Add the brown sugar and cinnamon.
- Mix well.
- Add the apples and potatoes.
- Stir well to thoroughly coat with the caramel mixture.
- Cover with a lid or foil and bake at 375 for 30 minutes, stirring once halfway through.
- After 30 minutes, remove the cover, stir again, and bake for 10 more minutes, or until caramel is thickened and the potatoes are tender.

- Arrange sweet potatoes and apple slices in a greased 11x7-in. baking pan. In a saucepan, combine brown sugar, cornstarch and salt. Stir in the apricot nectar, water and orange zest until blended; add butter. bring to a boil; cook and stir for 2 minutes or until thickened. Stir in pecans if desired. Pour over sweet potato mixture. Cover and bake at 375° for 35 minutes or until apples are tender.

Steps:
- Place sweet potatoes in a large saucepan with enough water to cover. Bring to a boil and cook 25 minutes, or until tender but firm. Drain, cool and cut into 1/4 inch slices.
- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 7x11 inch baking dish.
- In a small bowl, mix brown sugar, cinnamon and nutmeg.
- Layer sweet potatoes, brown sugar mixture and apples in the prepared baking dish.
- In a medium bowl, mix flour, brown sugar, butter and pecans. Sprinkle over the sweet potatoes.
- Bake in the preheated oven 30 minutes, or until lightly browned.

- Preheat oven to 350ºF (180ºC).
- Core apples and cut into ¼-inch (6 mm) slices, then cut those slices in half width-wise.
- In a large bowl, combine apples and all filling ingredients. Stir well and transfer to a 13x9 inch (23x33 cm) baking dish.
- For the topping - in a separate bowl, combine all topping ingredients and mash together with a fork until it forms into small and medium-sized clumps.
- Sprinkle the topping evenly over the apples.
- Bake for 40-45 minutes or until the liquid has thickened and the apples are tender.
- Cool for 10 minutes and serve with a scoop of vanilla ice cream.

Steps:
- Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add sweet potato, cover, and steam until soft, about 1 hour. Scoop the meat from the skin, transfer to a bowl, and smash using an electric mixer or wooden peg.
- Stir 1/4 cup brown sugar, nutmeg, and cinnamon into smashed sweet potatoes; allow to cool.
- Stir cream, orange juice, 1/4 cup unsalted butter, salt, and pepper into smashed sweet potatoes; transfer to a baking dish.
- Preheat oven to 375 degrees F (190 degrees C).
- Melt 3 tablespoons unsalted butter in a skillet over medium-high heat; cook and stir apples and 3 tablespoons brown sugar in the melted butter until lightly browned on both sides, 5 to 10 minutes. Spoon caramelized apples over smashed sweet potatoes.
- Bake in the preheated oven until heated through, about 20 minutes.

- In a greased 1-1/2-qt. baking dish, layer half of the sweet potatoes and apples. In a small bowl, combine the brown sugar, nutmeg, allspice, salt and pepper; sprinkle half over apples. - Position a rack in the center of the oven and preheat the oven to 400 degrees . Grease a 9-by-13-inch baking dish. In a 1-qt., heavy-bottomed saucepan, cook the sugar, without stirring, over medium heat until it begins to melt. Continue to cook, stirring occasionally with a wooden spoon, until the sugar turns a deep golden caramel color. Remove the melted sugar from the heat and carefully stir in the apple juice, 2 tbsp. butter, 1/2 tsp. salt and 1/4 tsp. pepper. (Heads up: The caramel will bubble up, harden and steam vigorously.) Return to medium-low heat and cook, stirring, until the caramel is dissolved. Let the caramel sauce cool for about 10 minutes.
- In a large bowl, toss the caramel sauce with the sweet potato and apple cubes; transfer to the prepared baking dish. Cover the baking dish with foil and bake, stirring once, until the apples and sweet potatoes are tender, about 35 minutes.
- Meanwhile, in a large skillet, melt the remaining 3 tbsp. butter over medium heat. Add the bread cubes and 1/4 tsp. each salt and pepper; toss to coat evenly. Cook the bread cubes, stirring occasionally, until they are lightly toasted.
- Uncover the casserole and sprinkle the croutons on top. Bake until deep golden, about 10 minutes longer. Top with the parsley.
