I have enjoyed corned beef and cabbage on St. Patty's day my whole life. I can't remember where I found this recipe, but it's the best I have ever had. My very picky mom completely agrees! The mustard sauce is a nice touch but can be completely optional. I love the sauce they serve with their corned beef and cabbage at Kells, so I tried to find something similar and this is what I came up with. I also like to omit the baby potatoes and add extra carrots, serving the dish with mashed potatoes on the side instead. This dish is simple and very tasty.

1 small cabbage, quartered
4 lbs corned beef, with seasoning packet
10 ounces baby carrots
1 lb baby potatoes
water
1/4 cup stone ground mustard
1/8 cup white wine
1/2 teaspoon honey
salt and pepper

Steps:

  • Put veggies in crock pot. Puncture seasoning packet and place on top.
  • Put corned beef in, fat side up and add 1.5-2 cups water.
  • Cook 8-10 hours on low.
  • Add cabbage, pressing into liquid, and cook an additional 2-3 hours on high.
  • For the sauce:.
  • Combine in small saucepan, bring to simmer, season with salt & pepper, and serve.

1 (3 to 4 pound) ready-to-cook corned beef brisket with spice packet
1 (12 ounce) bottle beer
2 cups water
1 1/2 pounds Yukon gold potatoes, quartered
4 large carrots, peeled and trimmed
1/2 small head green or savoy cabbage, outer leaves removed, cut into wedges
3 tablespoons melted butter
3 tablespoons brown sugar, lightly packed
2 tablespoons prepared horseradish
2 tablespoons Dijon mustard

Steps:

  • Rinse the beef with cold water and pat dry with paper towels. Trim some of the fat from the fat cap, leaving a layer about 1/4″ thick of fat on top.
  • Transfer the corned beef to the slow cooker, with the fat cap facing up. Add the spices from the packet on top of the fat cap. Place the potatoes around the beef, and place the carrots around or on top. Pour over the beer and water.
  • Cover and cook on LOW for 7-8 hours.
  • Lay the cabbage wedges on top of the corned beef and cook on LOW for another 2 hours, or until the vegetables and beef are tender.
  • Heat the broiler to high. Stir together the melted butter, brown sugar, horseradish, and dijon mustard in a small bowl. Using tongs, remove the corned beef from the slow cooker and put it on a nonstick or foil-lined sheet pan. Spread the glaze mixture all over the top and sides of the beef and place it under the broiler. Cook until the glaze bubbles and caramelizes in spots, about 4 minutes.
  • Let the corned beef rest for 5 minutes, then slice against the grain into 1/2-inch pieces. Serve the beef slices on a platter alongside the vegetables.

Corned beef shrinks by about 50%, so for generous servings (and leftovers if you're lucky), buy about one pound of meat per person. If I'm serving it early in the day, I like to set this up before bed and let it cook while I sleep. In the morning, I remove the meat and vegetables from the pot and reheat about 1/2 hour before I want to serve it.

2 stalks celery, halved
4 carrots
1 medium onion, cut in 4 wedges
4 to 6 red potatoes, quartered
1 4-pound corned beef brisket
12-ounce bottle stout or dark ale
1 tablespoon corned beef spices or pickling spices (or spices that come with the brisket)
1 medium head cabbage, cut into 6 wedges
1/2 cup heavy cream
1/4 cup sour cream
1/4 cup drained prepared horseradish
dash hot sauce
salt and pepper to tast

Steps:

  • For serving: grainy mustard and horseradish sauce, recipe below
  • Place celery, carrots, onion and potatoes in the bottom of a large slow-cooker or crock pot. Rinse the corned beef brisket and place over vegetables. Add the bottle of stout, spices and enough water to just cover the meat. Cover and cook on LOW for eight to nine hours.
  • Remove the meat and vegetables from the pot and cover with foil to keep warm. Increase heat to high and cook cabbage until softened but still crispy, 20 to 30 minutes.
  • Slice brisket across the grain, serve with vegetables, mustard and horseradish sauce. Pass extra cooking liquid at the table.
  • Whip cream to soft peaks and then fold in sour cream and horseradish, to taste. Season with salt, pepper and a dash of hot sauce.;

Steps:

  • Add the cabbage wedges and apple slices and caraway seeds if using them.

1 small head cabbage, cut into wedges

Steps:
