Entered for safe-keeping, from Kuhn Rikon's "Quick Cuisine". The smallest p.c. K-R recommends is 5 quarts. This minestrone is remarkable for the absence of beans. The base is a hearty beef vegetable soup.

2 bacon, slices chopped
2 medium onions, chopped (220 g)
2 garlic cloves, peeled and minced
3 carrots, peeled and chopped
2 leeks, white parts only, halved and thinly sliced
1/2 head cabbage (chopped or shredded)
2 celery ribs, chopped
1/3 cup sun-dried tomato, chopped
1 teaspoon fresh rosemary, chopped
1 teaspoon parsley, chopped
1 teaspoon fresh oregano, chopped
1 1/2-2 lbs beef shank
8 cups homemade chicken stock or 8 cups low sodium chicken broth
salt & freshly ground black pepper, to taste
1/2 cup elbow macaroni
1/2 cup arborio rice
1/2 cup freshly grated parmesan cheese, for garnish

Steps:

  • In a 5-quart or larger pressure cooker, heat bacon over medium-high heat.
  • After bacon has released some oil, stir in onion. Cook until onion is transparent.
  • Add garlic, carrots, leeks, cabbage, celery, tomatoes, leeks, cabbage, celery, tomatoes, rosemary, parsley, oregano, beef shank, stock, salt and pepper. Stir to mix.
  • Secure lid and bring to 1st red ring (low pressure) over high heat. Adjust heat to stabilize pressure at 1st red ring (low pressure). Cook for 15 minutes.
  • Remove from heat. Follow directions for your p.c. for quick release; for Kuhn Rikon, press steam valve with wooden spoon in short bursts.
  • Remove lid and remove beef shank. When cool enough to handle, carve meat off bone and cut beef into bite-size pieces. Return beef to soup.
  • Add macaroni and rice.
  • Secure lid and bring pressure to 1st red ring (low pressure) over high heat. Adjust heat to stabilize pressure at 1st red ring (low pressure). Cook for 7 minutes.
  • Remove from heat and allow pressure to reduce naturally.
  • Remove lid and serve in bowls and garnish with freshly grated Parmesan cheese.

1l hot vegetable stock
400g tin chopped tomato
100g thin spaghetti , broken into short lengths
350g frozen mixed vegetable
4 tbsp pesto
drizzle of olive oil
coarsely grated vegetarian parmesan-style cheese , to serve

Steps:

  • Bring the stock to the boil with the tomatoes, then add the spaghetti and cook for 6 mins or until done. A few minutes before the pasta is ready, add the vegetables and bring back to the boil. Simmer for 2 mins until everything is cooked.
  • Serve in bowls drizzled with pesto and oil, sprinkled with parmesan.

Classic Minestrone image

This famous Italian soup has been much imitated around the world with very different results. The homemade version is a delicious revelation and is also extremely healthy, as it has pasta, beans and fresh vegetables. Try to make the minestrone a day early and refrigerate as this improves the flavors. Serve with grated Parmesan cheese and chopped fresh parsley.

3 tablespoons olive oil
1 leek, sliced
2 carrots, chopped
1 zucchini, thinly sliced
4 ounces green beans, cut into 1 inch pieces
2 stalks celery, thinly sliced
1 ½ quarts vegetable stock
1 pound chopped tomatoes
1 tablespoon chopped fresh thyme
1 (15 ounce) can cannellini beans, with liquid
¼ cup elbow macaroni
salt and ground black pepper to taste

Steps:

  • Heat olive oil in a large saucepan, over medium heat. Add leek, carrots, zucchini, green beans and celery. Cover, and reduce heat to low. Cook for 15 minutes, shaking the pan occasionally.
  • Stir in the stock, tomatoes and thyme. Bring to a boil, then replace the lid, and reduce heat to low; simmer gently for 30 minutes.
  • Stir in the cannellini beans with liquid and pasta. Simmer for an additional 10 minutes, or until pasta is al dente. Season with salt and pepper to taste before serving.

This recipe was created for the pressure cooker, but I find it just as easy to make on the stove top or slow cooker. From Bob Warden's Slow Food Fast cookbook. The recipe calls for dry tortellini in the pressure cooker, but if using the stovetop, you could use refrigerated pasta.

2 tablespoons olive oil
1 white onion, diced
2 stalks celery, cut into 1/4 inch slices
2 carrots, sliced into 1/4 inch discs
1 tablespoon fresh garlic, minced
8 ounces dry cheese tortellini (found in pasta section of grocery)
4 cups vegetable broth
1 (24 ounce) jar spaghetti sauce
1 (14 1/2 ounce) can diced tomatoes
1 1/2 teaspoons italian seasoning
1 teaspoon sugar
1/4 teaspoon ground black pepper
shredded parmesan cheese, for garnish

Steps:

  • Pressure Cooker: Add oil to the pressure cooker and heat on high or "brown" with the lid off. Saute onions, celery, carrots, and garlic until onions begin to sweat. Add the remaining ingredients and stir. Securely lock on the pressure cooker's lid, set the cooker to high and cook 5 minutes. Perform a "quick release" to release the cooker's pressure. Check pasta for doneness. If too al dente for your likeness continue to boil on high or "brown" with the lid off to your preference. Serve topped with parmesan cheese.
  • Stove top: Saute onion, celery, carrots and garlic in oil until onion is transparent. Add the remaining ingredients and simmer until pasta is cooked to your preference.
