Categories     French Pastries

Time 1h25m

Number Of Ingredients 3

1 recipe Perfect Vanilla Pastry Cream, chilled for at least 3 hours and up to 24 hours.
One 17.3 oz (490g) package puff pastry sheets
about 1/4 cup (29g) powdered sugar - for sprinkling

Steps:

  • Thaw the puff pastry according to the package directions.
  • Preheat the oven to 400 degrees F (204.4 degrees C) and cover a baking sheet with parchment paper.
  • Unfold both sheets of pastry and divide each into thirds by cutting along the fold lines, giving you 6 rectangles of pastry. Lay the rectangles on the parchment covered baking sheet, spacing them about 1/4-inch apart.
  • Cover the pastry with another sheet of parchment paper and lay another baking sheet on top. This will prevent the puff pastry from rising too much and give the pastry nice, flaky layers.
  • Bake for 35-40 minutes. Remove the top baking sheet and the top layer of parchment and bake for another 5-10 minutes, until the pastry is golden brown. (*Please read the note below abotu preventing your puff pastry from burning.)
  • Remove from the oven and let cool completely before assembly.
  • Lay one sheet of baked puff pastry on a serving dish and spread about a 1/2-inch thick layer of pastry cream evenly over the top. Layer another rectangle of pastry over the cream, repeat with another 1/2-inch thick layer of pastry cream and top with a third pastry rectangle. Press on the top of the Napoleon slightly just to evenly distribute the layers.
  • Repeat with the remaining pastry rectangles and pastry cream. Cover the Napoleons with plastic wrap and refrigerate for at least 2 hours. (*See note below.)
  • Dust the tops of each Napoleon with a thick layer of powdered sugar right before serving.
  • Slice each Napoleon into 6 slices, using a serrated knife.

Time 1h5m

Yield 6 to 8 servings

Number Of Ingredients 10

1 large sheet frozen puff pastry (about 425 grams/15 ounces)
2 teaspoons granulated sugar
1 brick cream cheese, room temperature (250 grams/8 ounces)
1/2 cup smooth peanut butter (140 grams)
3/4 cup 35% cream, divided (175 milliliters)
3/4 cup plus 1 tablespoon icing sugar, divided (105 grams)
1 1/2 teaspoons vanilla extract, divided
1 cup fresh raspberries (170 grams)
Chopped honey roasted peanuts, optional
Chocolate shavings, optional

Steps:

  • Preheat your oven to 400 degrees F (200 degrees C) and set out two baking sheets that can stack on top of each other. Line one with parchment paper and set another piece of parchment paper aside.
  • Unroll the puff pastry onto the parchment-lined baking sheet and poke the entire surface with a fork. Sprinkle with the granulated sugar. Place the second piece of parchment over the pastry and fit the second baking sheet on top to sandwich the pastry between both sheets. Bake the pastry for 25 minutes. Then remove the top baking sheet and parchment and continue baking for another 5 to 8 minutes, or until the pastry is golden brown. Cool completely.
  • Meanwhile, using a stand mixer fitted with the whisk attachment or a hand mixer, whip the cream cheese and peanut butter together on medium speed until smooth. Slowly pour in 1/4 cup cream then add in 3/4 cup icing sugar and 1 teaspoon vanilla. Whip on high until stiff and fluffy. If desired, transfer the peanut butter cream to a pastry bag fitted with a medium round piping tip or a large zip top bag with the corner cut off.
  • Add the remaining 1/2 cup cream to the bowl along with the remaining tablespoon of icing sugar and 1/2 teaspoon of vanilla extract. Whip to stiff peaks and set aside.
  • Using a serrated knife, slice the puff pastry sheet along the long side into three equal pieces, each about 10-by-23 centimeters (4-by-9-inches), trimming the edges if needed. Spoon a small dollop of whipped cream or peanut butter cream onto the center of your serving dish and place one of the puff pastry pieces on top. Pipe or spread half of the peanut butter cream onto the pastry and dot with about half of the raspberries. Place another piece of puff pastry on top and repeat with the peanut butter cream and raspberries. Place the final piece of puff pastry on top, dollop or pipe over the whipped cream and scatter with raspberries, chopped peanuts and chocolate shavings, if using. Place in the fridge for up to three days. When ready to serve, slice with a serrated knife.

MARVELOUS MILLE-FEUILLE

Categories     dessert

Time 1h5m

Yield 4 to 6 servings

Number Of Ingredients 8

One 14-ounce sheet frozen all-butter puff pastry, such as Dufour, thawed
2 tablespoons powdered sugar, plus more for dusting the pastry and finished dish
8 ounces mascarpone
1 cup heavy cream
2 vanilla bean pods, split and seeds scraped
2 tablespoons raspberry liqueur
Zest of 1 lemon
4 cups fresh raspberries

Steps:

  • Line a baking sheet with parchment or a baking mat.
  • Unfold the pastry, roll it to a 12-by-15-inch rectangle and cut into three 12-by-5-inch rectangles. Transfer to the prepared baking sheet. Prick the pastry and chill for 10 minutes in the freezer or 20 in the fridge.
  • Preheat the oven to 425 degrees F.
  • Dust the pastry with powdered sugar (this will ensure the pastry caramelizes when cooked). Bake until golden brown and risen, about 15 minutes. Set aside to cool on a wire rack for about 15 minutes.
  • In the bowl of a mixer fitted with the whisk attachment, add the powdered sugar, mascarpone, cream and vanilla seeds and whisk until soft peaks form. Add the raspberry liqueur and lemon zest and turn on the mixer for 10 seconds to combine the ingredients.
  • To assemble: Place a dab of the whipped cream on the serving plate to anchor the mille-feuille. Place one piece of pastry onto the plate glaze-side down. Spoon over half of the whipped cream, smoothing out the top. Arrange half of the fresh raspberries on top of the cream in rows, then top with another sheet of pastry, again glaze-side down. Top the second sheet of pastry with the remaining cream and raspberries. Add the last piece of pastry glaze-side up and liberally dust with powdered sugar.

MILLE-FEUILLE NABE

Mille-Feuille Nabe image

This clever dish takes a traditional pork and cabbage Japanese hot pot or nabe, which also refers to the pot. Mille-feuille means "a thousand leaves" or sheets in French. The origin of mille-feuille nabe is unclear but it is one of the most popular hot pots in Japan and for good reason. The dish is simple to prepare and requires a few ingredients, rendering soulful flavors in a striking floral appearance. Serve the nabe with steamed rice or add cooked udon noodles to the bowls with the nabe.

Provided by Food Network Kitchen

Categories     main-dish

Time 1h5m

Yield 4 to 6 servings

Number Of Ingredients 11

1 large head Napa cabbage (about 3 pounds), leaves separated and bottoms trimmed
1 1/2 pounds thinly sliced pork belly (see Cook's Note)
5 cups Dashi, recipe follows
1 1/2 tablespoons soy sauce
1 teaspoon kosher salt
2 tablespoons sake, optional
1 to 1 1/2 cups ponzu sauce, for serving
3 scallions, thinly sliced
Shichimi togarashi, for serving, optional
Two 4-inch-square pieces kombu (dried kelp; about 20 grams)
1 1/2 packed cups katsuobushi (dried bonito flakes; about 30 grams)

Steps:

  • Lay a large cabbage leaf on a work surface, curve-side up, and cover with pork belly slices. If the slices are long, 2 slices should be enough. Don't worry about covering every bit of the cabbage (see Cook's Note).
  • Lay another large cabbage leaf on top of the pork, curve-side up, and cover with pork belly slices. Repeat the process 4 more times to form 1 stack of 6 cabbage leaves layered with pork.
  • Make more stacks of 6 leaves layered with pork until you've used up all the pork. If you run out of larger leaves, piece together smaller leaves of cabbage as needed and stack with the remaining pork. Reserve any remaining smaller pieces of cabbage in case they are needed to pack the center of the pot.
  • Carefully cut each stack crosswise into 3 equal sections, gently holding the layers together as you cut.
  • Working one section at a time, place the section cut-side up and bottom-side out against the side of a 10-inch-wide, 6-quart Dutch oven or other heavy-bottomed pot. Place another section right next to the first in the same manner. Repeat, packing the sections tightly (see Cook's Note), until the circle is complete.
  • Continue arranging the sections in the pot, packing them tightly, until full. Place the reserved smaller cabbage leaves in any empty spaces in the center, trimming them as needed.
  • Whisk the dashi, soy sauce and salt in a large bowl until the salt dissolves and pour into the pot. Cover and bring to a simmer over medium-high heat. Cook until the pork belly is cooked through and the cabbage is just tender, skimming off any foam and impurities, 6 to 10 minutes. Gently stir in the sake if using.
  • Pour 1/4 cup of ponzu sauce into 4 or 6 small bowls (depending on the number of diners) and top each one with the scallions. Serve the nabe in shallow bowls and sprinkle with shichimi togarashi if using. Alternatively, set the pot on the table and allow everyone to help themselves.
  • Combine the kombu with 6 cups cold water in a medium saucepan and let steep for about 30 minutes. (Skip this step if you are short on time though it lend a deeper flavor.) Heat over medium heat until the water comes to a near boil, about 10 minutes. Discard the kombu.
  • Sprinkle the katsuobushi evenly over the water and bring to a boil over high heat. Immediately remove from the heat and let steep without stirring for about 10 minutes.
  • Pour the dashi through a fine-mesh strainer into a large bowl. Do not press down on the katsuobushi which can make the dashi cloudy and/or bitter.
  • Dashi is best used the day it is made but can be cooled and refrigerated in an airtight container for up to 3 days.

BLACK AND WHITE MILLE-FEUILLE

Black and White Mille-Feuille image

Provided by Anne Burrell

Categories     dessert

Time 1h30m

Yield 6 to 7 servings

Number Of Ingredients 16

1 sheet frozen puff pastry, thawed
2/3 cup granulated sugar
1/2 teaspoon kosher salt
1 vanilla bean, split and scraped
3 cups whole milk
1/4 cup cornstarch
1 tablespoon all-purpose flour
4 large eggs
4 tablespoons unsalted butter, cut into pieces
2 tablespoons Scotch whiskey
2 cups heavy cream
1 cup white chocolate chips
2 tablespoons light corn syrup
1 cup semisweet chocolate chips
Chocolate cookie crumbs, for topping
Sliced almonds, for topping

Steps:

  • Preheat the oven to 400 degrees F. Line an 18-by-13-inch baking sheet with parchment paper. Have another 18-by-13-inch baking sheet and piece of parchment on hand.
  • Roll out the puff pastry to a 12-by-15-inch rectangle. Cut in three equal rectangles, about 12 by 5 inches each. Dock all over with a fork to suppress the puff pastry's rise in the oven. Transfer the pieces to the prepared baking sheet, cover with the other sheet of parchment and top with the second baking sheet. Bake until the flour structure has set and the pastry looks light golden and flaky, 10 to 12 minutes. Remove the top baking sheet and piece of parchment and return to the oven until golden brown, 4 to 5 minutes more. Cool completely on a baking rack.
  • Meanwhile, combine the granulated sugar, salt, vanilla and 2 1/2 cups of the milk in a large saucepan. Cook over medium-high heat until bubbles form around the edges. While the milk is warming, whisk together the cornstarch, flour, eggs and remaining 1/2 cup milk in a large bowl.
  • Temper the egg mixture with the hot milk mixture, adding a ladleful to the egg mixture at a time, whisking the whole time. Once you've added two-thirds of the milk mixture to the egg mixture, pour it back into the pan and cook on medium heat, whisking constantly. Once the mixture thickens and comes to boil, stir vigorously and count to 60. Remove from the heat.
  • Pass the pastry cream through a fine-mesh sieve into a bowl, then stir in the butter and Scotch. Cool over an ice bath, stirring occasionally, until the pastry cream reaches room temperature. Transfer the pastry cream to a pastry bag fitted with a medium round tip. (Or, if not using immediately, cover with plastic wrap, pressing the plastic wrap onto the surface of the pastry cream to keep a skin from forming.)
  • Whip the cream in a medium bowl with a hand mixer or balloon whisk until medium-stiff peaks form. Put the whipped cream in a separate pastry bag with a medium round tip.
  • Add the white chocolate chips and 1 tablespoon of the corn syrup to a metal bowl set over a pan of simmering water (do not let the bowl touch the water) and heat until melted and smooth; stir to combine. Add the semisweet chocolate chips and remaining 1 tablespoon corn syrup to a separate metal bowl over a pan of simmering water. Heat until melted and smooth, then stir to combine.
  • Trim the cooled puff pastry carefully with a serrated knife to produce three identical pieces. Lay down one piece of pastry on a serving plate and pipe a layer of pastry cream on top. Sprinkle with chocolate crumbs. Top with a second layer of pastry and pipe a layer of whipped cream on top. Sprinkle with sliced almonds. Dip the top of the third layer of pastry in the melted semisweet chocolate, then spread with a knife to smooth the top. Top the whipped cream layer with the chocolate-covered pastry. Drizzle on some of the white chocolate with a spoon and create a swirled pattern with a wooden skewer if desired.

MILLE-FEUILLE WITH VANILLA PASTRY CREAM AND BOURBON SAUCE

Mille-Feuille with Vanilla Pastry Cream and Bourbon Sauce image

Provided by Geoffrey Zakarian

Categories     dessert

Time 2h30m

Yield 4 servings

Number Of Ingredients 16

3 cups whole milk
7 tablespoons granulated sugar
1/4 teaspoon kosher salt
1 vanilla bean, split and scraped, pod reserved or 1 teaspoon vanilla bean paste
2 tablespoons plus 2 teaspoons cornstarch
4 large egg yolks
3 tablespoons cold unsalted butter, diced
2 cups bourbon
1/4 cup granulated sugar
1 vanilla bean, split and scraped, pod reserved or 1 teaspoon vanilla bean paste
1 sheet frozen puff pastry (from a 17.3-ounce package), thawed
All-purpose flour, for dusting
2 tablespoons unsalted butter, melted
1 tablespoon granulated sugar
1/2 pint raspberries
Confectioners' sugar, for garnish

Steps:

  • For the pastry cream: In a medium saucepan, combine the milk, granulated sugar, salt and vanilla seeds and pod. Bring to a simmer over medium-low heat, then remove from the heat.
  • In a medium bowl, whisk together the cornstarch and egg yolks. Temper the eggs by adding about 1/4 cup of the warm milk mixture and whisking to combine. Add the egg mixture to the pan and whisk to thoroughly combine.
  • Heat the pan over medium-low heat until it begins to thicken. Cook, stirring constantly with a spatula, until the mixture is the consistency of pancake batter, about 5 minutes. Remove from the heat and discard the vanilla bean pod. Whisk in the butter until combined. Strain through a fine-mesh sieve. Transfer to a shallow dish and press a sheet of plastic wrap directly onto the surface. Place in the refrigerator to cool completely, at least 1 hour and up to overnight.
  • For the bourbon sauce: In a small saucepan, add the bourbon, granulated sugar and vanilla beans and pod. Bring to a boil, then reduce the heat to maintain a simmer. Reduce the liquid by about half until thickened to a syrupy consistency, about 15 minutes. Remove and discard the vanilla bean pod; cool the syrup to room temperature.
  • For the mille-feuille: Roll out the puff pastry on a floured surface so that it is a roughly 11-by-16-inch rectangle. Using a sharp knife or pizza cutter, trim off any uneven edges so that it is a perfect 10-by-15-inch rectangle. Slice the pastry into 12 approximately 2 1/2-by-5-inch rectangles. Place them on a lined baking sheet. Place in the refrigerator for 30 minutes to chill.
  • Preheat the oven to 400 degrees F. Line a rimmed baking sheet with parchment paper.
  • Brush the tops of the puff pastry rectangles with the butter and sprinkle with the granulated sugar. Cover with a sheet of parchment paper and another baking sheet on top so the puff pastry is sandwiched in between. Bake until golden, about 20 minutes. Remove the top baking sheet and parchment and let cool to room temperature.
  • To assemble: Spoon a small dollop of the pastry cream onto each plate to act as a "glue" for the first layer of puff pastry. Place one layer of puff pastry onto the cream dollop, then top with a layer of cream. Nestle about 6 raspberries in the pastry cream in rows and top them with a dollop more of pastry cream. Repeat the layers once more and top with a final layer of pastry. Dust the pastry and plate liberally with confectioners' sugar and drizzle the plate around the pastry with the bourbon sauce.

STRAWBERRY & WHITE CHOCOLATE MILLEFEUILLE

Strawberry & white chocolate millefeuille image

You might be used to having basil with tomatoes, but try it with summer fruits in this prepare-ahead dessert

Provided by Gordon Ramsay

Categories     Dessert, Dinner

Time 1h

Number Of Ingredients 9

plain flour for dusting
3 tbsp caster sugar , plus extra for serving
350g puff pastry
300ml double cream
1 vanilla pod
600g strawberries
small bunch of basil , leaves picked, with a few of the smaller leaves left whole for the salad
zest ½ lemon
50g good-quality white chocolate

Steps:

  • Heat oven to 200C/180C fan/gas 6. On a lightly floured surface scattered with a little sugar, roll out the pastry to a rectangle slightly larger than 28 x 30cm. Line a large baking sheet with baking parchment and scatter with more sugar. Use the rolling pin to lift the pastry onto the baking parchment.
  • Scatter more caster sugar over the pastry and cover with another sheet of baking parchment. Lay another heavy baking sheet (or a baking sheet weighed down with an empty ceramic oven dish if yours aren't heavy) on top and bake for 25-30 mins until the pastry is golden and crisp, then set aside to cool.
  • To make the filling, tip the cream into a bowl with 3 tbsp of sugar, and the vanilla seeds. Lightly whisk until the cream just hold its shape and set aside. Hull and quarter the strawberries and set a few aside for the salad, then cut the rest into 3 or 4 chunks. Finely shred the basil, then fold through the cream with the chopped strawberries and lemon zest, then chill until needed.
  • When the pastry has cooled completely trim the edges to form a neat 28 x 30cm rectangle. Cut into 3 equal rectangles - to get them precisely the same size, cut one then lay it on the rest of the pastry and use it as a guide to the next rectangle, then repeat.
  • To assemble the millefeuille, lay down one rectangle of pastry, add half of the cream and strawberry mix and flatten with the back of a spoon. Place the second pastry layer on top and gently press down. Finely grate over half the white chocolate and top with the remaining cream mix. Place the final layer of pastry on and press down gently so that the filling just starts to bulge over the edges.
  • Use a palette knife to smooth the filling along the sides so that it is level with the edges of pastry and fills any gaps. Add a smear of filling across cut pastry edges to help the grated chocolate to stick. Grate chocolate on top. The easiest way to get grated chocolate to stick to the sides is to help it on with a palette knife. Mix the reserved strawberries and the small basil leaves to make a simple salad.
  • To serve, carefully slice the millefeuille into 6 equal pieces. As you slice, hold the millefeuille together by placing a finger at either side of the blade. Place a piece of millefeuille to the side of each plate. Spoon a small pile of strawberry salad on the opposite side of the plate and serve.

BUTTERSCOTCH-POTATO CHIP BALLS

Butterscotch-Potato Chip Balls image

Butterscotch chips and crushed potato chips make these buttery brown sugar cookies dance across your tongue with sweet and salty flavor.

Provided by Jessie Sheehan

Categories     Small Plates     Cookies     Bake     Dessert     snack     Potato     Butterscotch/Caramel     Kid-Friendly

Yield Makes 36 cookies

Number Of Ingredients 12

2 1/3 cups [325 g] all-purpose flour
1 tsp baking soda
1 tsp table salt
1 cup [180 g] butterscotch chips
1 cup [220 g] unsalted butter, melted
1 cup [200 g] packed light brown sugar
1/2 cup [100 g] granulated sugar
1 egg
1 egg yolk
2 tsp pure vanilla extract
5 cups [175 g] kettle-style potato chips
Flaky sea salt for sprinkling

Steps:

  • Preheat the oven to 350°F [180°C]. Line a rimmed baking sheet with parchment paper.
  • In a medium bowl, combine the flour, baking soda, and salt and whisk together. Add the butterscotch chips and set aside. In the bowl of a stand mixer fitted with the paddle attachment, cream the melted butter and sugars on medium-high speed until thick, light, and glossy, 3 to 5 minutes, scraping the bowl with a rubber spatula as needed.
  • Decrease the mixer speed to medium-low and add the egg and yolk, one at a time, beating well and scraping the bowl after each addition with a rubber spatula. Add the vanilla and mix to combine. Add the dry ingredients all at once, mixing just to combine. Remove the bowl from the stand mixer and add 3 cups [105 g] of the potato chips to the dough, combining and crushing the chips with a rubber spatula.
  • In a small bowl, crush the remaining 2 cups [70 g] potato chips. Scoop the dough into 1 1/2-tablespoon balls with a cookie scoop or measuring spoon, rolling each ball in the leftover crushed chips, and evenly place 12 on the prepared baking sheet.
  • Sprinkle each cookie with flaky sea salt, and bake for 8 to 10 minutes, rotating at the halfway point, until lightly browned. Remove from the oven and press down on each cookie with a spatula to slightly flatten.
  • Repeat with the remaining cookie dough.
  • Let cool briefly and serve warm, because who doesn't love a cookie warm from the oven? The cookies will keep in an airtight container on the counter for up to 3 days.

RASPBERRY MILLEFEUILLES

Raspberry millefeuilles image

Rough puff pastry, crème pâtissière and fresh raspberries are layered up in this stunning French dessert - perfect for impressing dinner guests

Provided by James Martin

Categories     Afternoon tea, Dessert, Treat

Time 1h50m

Number Of Ingredients 7

icing sugar , for dusting
200g plain flour , plus extra for dusting
¼ tsp salt
175g cold butter , cut into 1.5cm cubes
1 tsp lemon juice
crème pâtissière (see tip, below left, for recipe)
300g raspberries (or other seasonal berries)

Steps:

  • For the pastry, mix the flour, salt and butter together in a bowl - the butter should remain in cubes. Make a well in the centre and pour in the lemon juice and 100ml cold water. Mix well, then bring together with your hands.
  • Tip the pastry onto a lightly floured surface and briefly knead until smooth. Shape into a rectangle, then wrap in cling film and chill for 30 mins.
  • On a floured surface, use a rolling pin to ridge and roll (see tip, below left) the pastry into a rectangle, so that it is three times as long as it is wide, about 15 x 45cm. Keep the edges of the pastry as straight as you can.
  • Lift the bottom third of the pastry and fold it up and over the middle third. Dust off any excess flour.
  • Fold the top third of the pastry down and over the bottom third, so that you have three layers of pastry in a neat rectangle. Dust off any excess flour. Wrap and chill for 15 mins.
  • Give the pastry a 90-degree right turn so it faces you like a book. Repeat steps 3-5 four more times, always starting with the pastry facing you as it was after the last fold and giving it a turn. Chill for 30 mins.
  • Heat oven to 200C/180C fan/gas 6. On a lightly floured surface, roll the pastry out to a rough 32cm square. Using a sharp knife, trim the edges to make a neat 30cm square.
  • Cut the pastry into 3 long strips measuring 30 x 10cm. Transfer to 2 baking sheets lined with baking parchment and chill for 30 mins or until firm.
  • Top each tray with a sheet of baking parchment, then stack on top of each other. Pop another baking tray on top and weigh down with an ovenproof dish. Bake for 25-30 mins or until golden brown and crisp.
  • Leave the pastry to cool a little, trim the edges if needed, then cut each sheet into 6 smaller rectangles. You should end up with 18 pieces of pastry measuring about 10 x 5cm.
  • Transfer 1 piece of pastry to a serving plate, pipe over blobs of Crème patisserie (see recipe tip, below left), then top with some raspberries and another layer of pastry.
  • Add another layer of Crème patisserie and raspberries. Dust a third piece of pastry with icing sugar, then decorate with more raspberries and pop this on top. Repeat with the remaining pastry to make 6 millefeuilles.
