SLOW-COOKER BARBECUE RIBS

Yes, you can cook ribs in a slow cooker! In this easy recipe, the seasoning paste transforms into a savory dipping sauce. Slather it on the ribs and pop them on the grill just before serving for a final char.

One 6-ounce can tomato paste
1/3 cup packed dark brown sugar
1/4 cup apple cider vinegar
1 tablespoon chili powder
1 tablespoon ground mustard seeds
2 teaspoons granulated garlic
2 teaspoons smoked paprika
2 teaspoons Worcestershire sauce
Kosher salt and freshly ground black pepper
3 racks baby back ribs (about 3 pounds)
Oil, for grilling

Steps:

  • Whisk the tomato paste, brown sugar, vinegar, chili powder, mustard, garlic, paprika, Worcestershire, 1 1/2 tablespoons salt and 1 teaspoon pepper in the insert of a 6-quart slow cooker until smooth. Cut each rack of ribs in half and add to the slow cooker. Use your hands to rub the sauce on to the ribs. Cover with a lid and cook on low heat until tender, about 4 hours.
  • Gently transfer the ribs to a baking sheet and cool for at least 20 minutes; this will help maintain the shape of the ribs as they grill. Whisk the sauce at the bottom of the slow cooker until smooth. Reserve 1/4 cup of the sauce to brush on to the ribs and save any remaining sauce to serve on the side (it will thicken as it cools).
  • Preheat a grill or grill pan to medium-high heat. Lightly oil the grates. Grill the ribs, top-side down, until lightly charred in parts, 3 to 5 minutes. Flip, brush the top side of the ribs with the reserved barbecue sauce and grill until the underside of the ribs are lightly charred in parts, 3 to 5 minutes. Remove to a platter and serve immediately with the extra barbecue sauce on the side.

This recipe is a combination of other crock pot rib recipes that I have found and tried. It seems that the key to making them "non greasy" is the two-step process described here. They are a hit at every gathering, and so tender they fall off the bone!

3 lbs pork baby back ribs
dry rub seasonings (I like Famous Dave's or use Dry Rub for Barbecued Ribs)
barbecue sauce (I use Famous Dave's Sweet and Zesty)

Steps:

  • Cut each rack of ribs in half to more easily fit into the crock pot. Rub both sides of the ribs with generous portions of the rib rub.
  • If you have time, refrigerate the ribs with the rub for 2-3 hours. If not, just place directly in the crock pot.
  • Cook on low, 5-7 hours, until desired consistency (try to avoid having them totally fall apart as they will be more difficult to handle in the next step.).
  • Remove ribs from the crock pot. Place on foil-covered cookie sheet. Baste both sides of ribs with sauce. Bake at 350 degrees for 30 minutes.

2 (3 -4 lb) slabs pork spareribs
salt
pepper
1 onion, sliced (optional)
1 (16 ounce) bottle barbecue sauce (I use Sweet Baby Ray's)

Steps:

  • Cut ribs into serving portions. I usually do two ribs together.
  • Sprinkle both sides with salt and pepper.
  • Place ribs on a broiler pan and broil 12 minutes per side or until browned. I like mine a bit 'crisp'. Drain if necessary.
  • Place sliced onion in crock pot.
  • Place rib sections on top of onions. Pour a little barabecue sauce over each section as you place them in the crock pot and the rest of the bottle over all the ribs.
  • Cover and cook on low for about 8 hours.

1 onion, diced

Steps:

  • Do not pre-heat the slow cooker.
  • Dice up the onion, add to crock pot.
  • Rub the ribs with salt and pepper, add to crock pot.
  • Dump BBQ sauce on top.
  • Cook on low setting for 8-10 hours.
  • Try not to lift the lid too much.

2 racks pork side ribs
1 tablespoon seasoning salt
1 teaspoon fresh ground pepper
2 onions, sliced in thin rings
3 garlic cloves, crushed
3/4 cup ketchup
3/4 cup water
2 teaspoons brown sugar
2 teaspoons apple cider vinegar
1 teaspoon paprika
1 teaspoon chili powder

Steps:

  • Rub the ribs with seasoning salt and pepper, cut into 2- or 3-rib sections, and brown them in a skillet. Remove the ribs to the crock pot.
  • Add the onions and garlic to the skillet, and saute until they soften, about 5 minutes. Add a little oil while sauteing if your ribs are very lean. Add these to the crock.
  • Add the remaining ingredients to the crock, scraping the bottom to get the brown bits off the skillet. Once the sauce comes to a boil, pour it over the ribs and onions.
  • Cook 6 or so hours on low. Each crock is different, so you'll have to experiment with yours. If the sauce is too thin for your taste, leave the lid off the crock for the last hour or so of cooking.

Steps:

  • Combine rub ingredients mixing well.
  • Rub on all sides of ribs.

It's not rocket science, just ribs cooked in the slow cooker and finished in the oven. This is what I do when I want ribs during the week and have to work all day. salt and ground black pepper, to taste
½ cup water
½ onion, sliced
1 clove garlic, minced
1 (18 ounce) bottle barbeque sauce

  • Season ribs with salt and pepper.
  • Pour water into slow cooker. Layer the ribs into the slow cooker. Top the ribs with onion and garlic.
  • Cook on High for 4 hours (or Low for 8 hours).
  • Preheat oven to 375 degrees F (190 degrees C).
  • Transfer ribs to a baking sheet. Discard onion and garlic. Coat ribs with barbeque sauce.

4 lbs bone-in country-style pork ribs
2 teaspoons salt, divided
1 medium onion, chopped
1 cup firmly packed light brown sugar
1 cup apple butter
1 cup ketchup
1/2 cup lemon juice
1/2 cup orange juice
1 tablespoon steak sauce
1 teaspoon fresh coarse ground black pepper
1 teaspoon minced garlic
1/2 teaspoon Worcestershire sauce

Steps:

  • Cut ribs apart, if necessary and trim; sprinkle 1 teaspoon salt evenly over ribs, and set aside.
  • In a medium to large bowl, stir together remaining 1 teaspoon salt, and remaining ingredients until blended.
