7 teaspoons chili powder
1 tablespoon garlic powder
2 teaspoons celery seed
1 teaspoon coarsely ground pepper
1/4 to 1/2 teaspoon cayenne pepper
1 fresh beef brisket (3 to 4 pounds)
1 medium green pepper, chopped
1 small onion, chopped
1 bottle (12 ounces) chili sauce
1 cup ketchup
1/2 cup barbecue sauce
1/3 cup packed brown sugar
1/4 cup cider vinegar
1/4 cup Worcestershire sauce
1 teaspoon ground mustard
1 can (16 ounces) hot chili beans, undrained
1 can (15-1/2 ounces) great northern beans, rinsed and drained
Optional toppings: Shredded cheddar cheese, chopped white onion and sliced jalapeno peppers

Steps:

  • Combine the first five ingredients; rub over brisket. Cut into 8 pieces; place in a 5-qt. slow cooker. Combine the green pepper, onion, chili sauce, ketchup, barbecue sauce, brown sugar, vinegar, Worcestershire sauce and mustard; pour over meat. Cover and cook on high for 5-6 hours or until meat is tender., Remove meat; cool slightly. Meanwhile, skim fat from cooking juices. Shred meat with 2 forks; return to slow cooker. Reduce heat to low. Stir in the beans. Cover and cook for 1 hour or until heated through. If desired, top with shredded cheddar cheese, chopped white onion and sliced jalapenos. Freeze Option: Freeze cooled chili in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally and adding a little broth or water if necessary.

2 tablespoons ancho chile powder
2 tablespoons packed light brown sugar
1 tablespoon sweet paprika
2 teaspoons ground cumin
Kosher salt and freshly ground pepper
1/3 cup chili sauce (such as Heinz)
1 tablespoon plus 1 teaspoon red wine vinegar
1 tablespoon yellow mustard
2 teaspoons Worcestershire sauce
1 16-ounce can chili beans (do not drain)
Corn chips, shredded cheddar cheese, sour cream and/or sliced scallions, for topping

Steps:

  • Toss the beef with the chile powder, brown sugar, paprika, cumin, 1/2 teaspoon salt and a few grinds of pepper in a 6- to 7-quart slow cooker. Whisk the chili sauce with 1 tablespoon vinegar, the mustard and Worcestershire sauce; add to the slow cooker along with the beans. Cover and cook on low until the beef is tender, 7 to 8 hours.
  • Uncover and stir to combine; let sit, uncovered, 10 minutes. Stir in the remaining 1 teaspoon vinegar. Serve with corn chips and desired toppings.

Steps:

  • Whisk 1/2 cup water, the hoisin sauce, honey, ketchup, soy sauce and sambal oelek in a medium bowl. Season the beef all over with the Chinese five-spice powder, salt and pepper. Combine the carrots and turnip in a 6- to 8-quart slow cooker. Add the beef and top with the hoisin mixture; turn to coat. Cover and cook on low until the beef is very tender, 7 1/2 hours.
  • Remove the vegetables to a bowl using a slotted spoon. Shred the beef with two forks; stir in the sauce to coat. Serve the beef with the vegetables and rice; top with scallions.

1/2 cup low-sodium chicken broth
3 tablespoons chili powder
1 1/2 teaspoons ground cumin
1 14-ounce can diced fire-roasted tomatoes with green chiles
1 large poblano pepper, seeded and diced
3 6-inch corn tortillas
1 cup shredded pepper jack cheese (about 4 ounces)
1/2 cup chopped fresh cilantro
1 flank steak (1 1/2 to 1 3/4 pounds)
Kosher salt and freshly ground pepper
1 1/2 cups frozen fire-roasted corn

Steps:

  • Whisk the chicken broth, 2 tablespoons chili powder, 1 teaspoon cumin, the tomatoes and poblano in a 6- to 8-quart slow cooker. Tear 1 tortilla into pieces and add to the slow cooker. Mix the remaining 1 tablespoon chili powder and 1/2 teaspoon cumin in a small bowl. Toss the cheese with 1/4 cup cilantro in a separate bowl. Set aside.
  • Butterfly the steak: Put the steak on a cutting board with the short end facing you, then slice in half horizontally, with your knife parallel to the board, without cutting all the way through; open like a book. (If your steak is less than 1/2 inch thick to begin with, do not butterfly; instead, lightly pound the steak with the flat side of a meat mallet until about 1/4 inch thick.) Season with salt, pepper and the chili powder-cumin mixture.
  • Press the cheese mixture over the steak in an even layer and arrange the remaining 2 whole tortillas in the center, overlapping slightly if needed. Starting with a long side, roll up the steak into a tight log. Tie with kitchen twine in 1 1/2-inch intervals, then tuck in the ends and tie lengthwise to keep the ends in place. Nestle the steak roll in the slow cooker and spoon some of the sauce over the top. Cover and cook on low until the meat is tender and the sauce is bubbling, 7 hours.
  • Remove the steak roll to a cutting board and let rest, 5 minutes. Stir the corn into the slow cooker, cover and continue to cook on low until heated through, about 5 minutes, then stir in the remaining 1/4 cup cilantro. Untie the steak and thinly slice. Serve with the sauce.

1 large onion, chopped
4 cloves garlic, minced
1 cup ketchup
½ cup beer
½ cup white vinegar
1 tablespoon Worcestershire sauce
4 drops liquid smoke flavoring
½ teaspoon salt
1 teaspoon ground black pepper
1 ½ teaspoons chili powder
1 teaspoon smoked paprika
1 teaspoon dried oregano
½ cup brown sugar
4 pounds beef brisket
2 teaspoons cornstarch
2 tablespoons water
16 potato buns, or as needed

Steps:

  • Place the onion and garlic into a large slow cooker. Pour in the ketchup, beer, vinegar, Worcestershire sauce, and liquid smoke; set aside. Combine the salt, pepper, chili powder, paprika, oregano, and brown sugar until evenly blended. Rub the spice mixture all over the beef brisket. Place the brisket into the slow cooker. Sprinkle the remaining spice mixture over top.
  • Cover, and cook on Low until the beef is easily shredded with two forks, 10 to 12 hours.
  • Remove the beef from the slow cooker, and place into a large bowl. Ladle the fat from the remaining sauce in the slow cooker and discard. Pour about 2 cups of the sauce from the slow cooker into a saucepan. Bring to a simmer over medium heat. Dissolve the cornstarch in the water, and stir into the simmering sauce. Cook and stir 5 to 10 minutes until the sauce has thickened. Meanwhile, shred the meat into small pieces using two forks.
  • Pour the thickened sauce and remaining sauce from the slow cooker into a blender, filling the pitcher no more than halfway full. Hold down the lid of the blender with a folded kitchen towel, and carefully start the blender, using a few quick pulses to get the soup moving before leaving it on to puree. Puree in batches until smooth and pour into a clean pot. Alternately, you can use a stick blender and puree the sauce right in the slow cooker.
  • Stir the shredded beef and pureed sauce together in the slow cooker. Use tongs to serve the beef on the potato buns.

1 pound ground beef
2 (19 ounce) cans kidney beans, rinsed and drained
1 (28 ounce) can crushed tomatoes
1 (8 ounce) can tomato sauce
1 medium green bell pepper, finely chopped
1 tablespoon dehydrated onion flakes
1 tablespoon chili powder
1 teaspoon ground cumin

Steps:

  • Heat a large skillet over medium-high heat. Cook and stir ground beef in the hot skillet until browned and crumbly, 5 to 7 minutes. Drain and discard grease.
  • Transfer beef to the bottom of a slow cooker. Add kidney beans, crushed tomatoes, tomato sauce, bell pepper, onion flakes, chili powder, and cumin. Stir well.
  • Cover and cook on Low until flavors have melded, at least 4 hours, up to 8 hours.

1 (3 lb) boneless beef chuck roast
1 teaspoon fresh ground black pepper
1 small onion, chopped
1 small red bell pepper, seeded and chopped (can use a green bell pepper)
1 cup barbecue sauce
1/2 cup apricot preserves
1 tablespoon fresh minced garlic
1 tablespoon Dijon mustard
1 tablespoon brown sugar
10 sandwich buns, sliced in half

Steps:

  • Cut the roast in quarters then place in the crock pot.
  • Sprinkle the roast with black pepper.
  • Sprinkle the chopped onion and bell pepper around the roast.
  • In a bowl combine the BBQ sauce with apricot preserves, garlic, Dijon mustard and brown sugar; pour over the roast.
  • Cover with lid and cook on LOW setting for about 6-8 hours or until the meat is tender.
  • Remove the roast and slice thinly, then return to the crock pot and stir with the sauce; cover and cook for another 30 minutes.
  • Skim the fat from the sauce.
  • Serve the sliced beef with the sauce on buns.
