CRISPY CHILLI TURKEY NOODLES

Crisp-fried turkey mince in a chilli, soy and garlic sauce atop udon noodles makes for a savoury 20-minute meal that's low in fat but big on flavour

2 tbsp sesame oil
500g turkey mince
5cm piece ginger, grated
1 large garlic clove, crushed
3 tbsp honey
3 tbsp soy sauce
1 tbsp hot sriracha chilli sauce
350g dried udon noodles
2 limes, juiced, plus wedges to serve (optional)
2 large carrots, peeled and cut into matchsticks
4 spring onions, shredded
1 small bunch coriander, sliced (optional)

Steps:

  • Heat 1 tbsp oil in a large non-stick frying pan over a high heat. Once hot, add the turkey mince to the pan and fry for 10-12 mins until golden brown and crispy, breaking up the meat with a wooden spoon as you go. Add the ginger and garlic to the pan and cook for 1 min. Stir in the honey, soy and chilli sauce and cook for 2 mins.
  • Meanwhile, bring a large pan of water to the boil, add the noodles and cook following pack instructions. Drain and toss the noodles with the remaining 1 tbsp oil and all the lime juice, then divide between bowls. Top with the crispy turkey mince, carrot, onion and coriander. Serve with extra lime wedges for squeezing over, if you like.

  • Preheat oven to 375 degrees F. Line baking sheet with parchment paper.
  • Rinse and pat dry the turkey breast and slice into 1/2 inch strips.
  • Add sage, thyme, salt, and pepper to bread crumbs and mix well.
  • Dip turkey fingers into egg white and cover with crumbs mix.

¼ cup butter
1 (6 ounce) package stuffing mix (such as Kraft® Stove Top®)
1 (16 ounce) package ground turkey
½ cup dried cranberries, or to taste

Steps:

  • Bring water and butter to a boil in a medium saucepan. Stir in stuffing mix, cover, and remove from heat. Let stand for 5 minutes. Remove cover and fluff with a fork. Let cool, 10 to 15 minutes.
  • Preheat the oven to 350 degrees F (175 degrees C).
  • Transfer cooled stuffing to a bowl. Add turkey and mix to combine. Mix in cranberries. Form into 1-inch meatballs and place on a baking sheet.
  • Bake in the preheated oven until browned and no longer pink in the centers, about 25 minutes. An instant-read thermometer inserted into the center should read at least 160 degrees F (71 degrees C).

I used this recipe at my first Pampered Chef party a few years ago. I have made it for several football game parties, and for the holidays. It is always a HUGE hit. Who doesn't like cream cheese? :) Before this recipe, I hadn't cooked a lot with wonton wrappers, but they make this appetizer crispy and chewy too!

24 wonton wrappers
1 (8 ounce) package cream cheese (softened)
1 cup sour cream
2 pressed garlic cloves
1 taco seasoning mix
tomatoes
black olives
sour cream
avocado
onion
salsa

Steps:

  • Preheat oven to 350.
  • Spray a mini-muffin pan lightly with vegetable oil.
  • Seperate wonton wrappers and place one in each cup of the pan. Using the pampered chef mini tart shaper, press each wonton into the cup, keeping the cup area open. (If you don't have the tart shaper, just press down with your fingers, being careful not to tear the wonton).
  • Combine all filling ingredients into a mixing bowl, and blend until smooth.
  • Fill the wonton cups with a teaspoon each of the filling mixture.
  • Bake for 10-12 minutes, or until edges are slightly brown. Garnish with toppings of your choice.

Steps:

  • Heat oil in a skillet over medium heat. Cook and stir kielbasa and onion in hot oil until the onion begins to soften, about 5 minutes.

Bread the stuffed ball starting with the flour, then egg and lastly the panko. Repeat with the remaining ingredients. Fry 4 to 5 or the balls at a time in the hot oil for 2 to 3 minutes or until deep golden brown and hot all the way through. Remove from the oil onto a paper towel lined plate and sprinkle with a pinch of salt. Serve along side the cranberry mayonnaise for dipping.
