This simple, filling chicken supper is made with just four ingredients and is low calorie and full to the brim with fibre

8 skinless boneless chicken thighs
8 slices prosciutto
2 pouches puy lentils
280g jar sundried tomatoes

Steps:

  • Heat oven to 180C/160C fan/gas 4. Wrap each chicken thigh in one slice of prosciutto and place on a baking tray. Drizzle with olive oil, season and bake for 30 mins until crispy and cooked through. Meanwhile, put the lentils in a medium saucepan and gently warm through with the sundried tomatoes and half their oil. Spoon the warm lentils onto four plates and top with the chicken

PAN ROASTED CHICKEN WITH CRISP PROSCIUTTO & TOMATOES



Pan roasted chicken with crisp prosciutto & tomatoes image

Try this exciting new take on barbecuing - with everything cooked in one pan.

100g soft butter
4 garlic cloves , chopped
2 tbsp olive oil
6slices of prosciutto (85g pack)
x skinless boneless chicken breast fillets
2x 400g cans chopped tomatoes
150ml chicken or vegetable stock
4sprigs of oregano , leaves removed and chopped
400g can cannellini beans , drained and rinsed
1 ciabatta loaf, cut into 12 slices
250g punnet cherry tomato , halved
18 basil leaves , half chopped, half left whole
mixed salad leaves tossed in your favourite dressing, to serve

Steps:

  • Mix the butter in a bowl with half the garlic. Get everything in bowls or on plates ready to take outside. Light the barbie.
  • Heat a sturdy roasting tin on the barbie rack, in the oil to coat the tin's base. Lay in the prosciutto and crisp on both sides. Set it aside.
  • Season the chicken and brown on both sides in the tin. Stir in the rest of the chopped garlic, and add the chopped tomatoes, stock and oregano. Simmer for 3 minutes, turn the breasts over and simmer for a further 3 minutes.
  • Tip in the cannellini beans, turn the chicken over and simmer for another 3 minutes, then turn again and simmer for 3 minutes more. Now taste the sauce and add a little seasoning if you think it's needed.
  • Towards the end of the chicken's cooking, toast the ciabatta on both sides on the barbie - you may need to do this in batches, depending on the size of your barbie.
  • Toss the tomatoes and chopped basil into the chicken mix. Let the tomatoes soften slightly, then top with the crisp prosciutto and scatter over the whole basil leaves. Spread the garlic butter on the ciabatta and arrange butter-side up around the edge of the chicken, or put the bowl of garlic butter on the table for guests to spread their own. Serve hot, with mixed leaf salad.

Combine the flavours of chicken caesar salad with crisp crackers for this perfect party mouthful. The recipe is easy to halve or double if needed

2 cooked skinless chicken breasts, cut into small pieces
2 anchovies, finely chopped
15g parmesan, finely grated
4 tbsp mayonnaise
1 tbsp soured cream
1 tsp Dijon mustard
½ tsp garlic granules
1 tbsp chopped chives, plus extra to serve
½ lemon, juiced
20 small crispbreads or melba toasts
6 cooked smoked bacon rashers, finely chopped

Steps:

  • Tip the chicken pieces, anchovies, parmesan, mayonnaise, soured cream, mustard, garlic granules, chives and lemon juice into a bowl, then mix together to combine. Season with salt and black pepper. Will keep covered in the fridge for up to two days.
  • Spoon teaspoonfuls of the mixture onto the crispbreads, then top with the chopped bacon and more chives.

I created this salad to go with Recipe #239502. Everyone thought it was a winner! I used truffle oil, but it would probably be good with olive oil as well.

4 slices prosciutto, thinly sliced
12 cups spinach or 12 cups other greens
1/4 cup fresh basil
8 figs, stemmed, quartered
balsamic vinegar (use the good stuff)
truffle oil or extra virgin olive oil

Steps:

  • Preheat oven to 350 degrees F. Place slices of prosciutto flat on parchment paper over a baking sheet. Bake about 13 minutes, or until fairly crisp. Remove from oven and let cool slightly. Break the prosciutto up into pieces and set aside.
  • Assemble salad with the spinach and basil on the bottom. Top with figs and crispy prosciutto, and dress with balsamic vinegar and truffle oil, to taste.

  • 2. Place a large ovenproof frypan over medium-high heat. Add the olive oil and once a sheen appears, add the chicken skin-side-down. Cook for five minutes then add the shallots and lemon slices in a single layer. Place a dinner plate over the top (this helps with even cooking, see tip) and cook for another 15 minutes or until the skin is caramelised and crisp.
  • 3. Using tongs, gently turn the chicken over so it is now skin-side-up and remove the lemon pieces (set them aside for later). Push the chicken to the side a little and scrape up any of the gnarly brown caramelised bits before adding the mustard, garlic, white wine and chicken stock. Stir to combine. Turn off the heat then stir through the creme fraiche. Pop in the oven for 30 minutes or until the chicken is just cooked through.
  • 4. While the chicken is cooking transfer the prosciutto slices, if using, to a lined baking tray and pop in the oven and cook until crisp, about 5-8 minutes. If your prosciutto isn't overly fatty, you may like to drizzle it with a little olive oil to help it crisp.
