1 pkg yellow cake mix (duncan hines)
1 pkg pudding, butterscotch
3 large eggs
1/3 c cooking oil
1/2 c cold water
1/2 c rum (spiced rum)
RUM GLAZE
1 stick butter
1/4 c water
1 c sugar
1/2 c rum (spiced rum)
1 1/4 c walnut pieces (chopped)

Steps:

  • 1. Pre-Heat oven 325* Lightly grease and flour Bundt Pan
  • 2. In mixing bowl mix Cake Mix, Butterscotch Pudding Mix, Eggs, Cooking oil, Cold Water, 1/2 Cup Rum, blend till light and fluffy

2 pkg cream cheese, room temperature (8 oz each)
1 stick butter, softened
1 tsp pure vanilla extract
1 pkg instant butterscotch pudding (3.4 oz)
2 c confectioners' sugar

Steps:

  • 1. Beat together until fluffy the cream cheese and butter; add vanilla and beat until thoroughly incorporated.
  • 2. With mixer running, beat in pudding mix and confectioner's sugar gradually, and whip till no lumps are present.
  • 3. Frost the cooled cake of your choice!

I was looking to make a cake with Rum Extract, and decided to come up with one that had the added moisture of pudding. My husband suggested putting cream cheese icing on it. I think this cake is even better a day or two after it has been baked. This recipe has only 1/4 cup of sugar. Very good and rich. Goes great with a glass of egg nog. I adapted bert's cream cheese icing recipe to use on this cake.

3 cups cake flour
1 teaspoon salt
2 teaspoons baking soda
1 (1 ounce) package sugar-free fat-free butterscotch pudding
2 tablespoons sugar
1 cup Splenda granular
1 teaspoon nutmeg
3 tablespoons light butter (I use Land O Lakes)
3/4 cup Egg Beaters egg substitute or 3 eggs
1 cup water (I may have used more)
1 tablespoon imitation rum extract
1 teaspoon vanilla extract
1/2 teaspoon mccormick imitation butter flavor extract (optional)
cream cheese frosting
4 ounces fat free cream cheese, softened
2 tablespoons light butter
2 1/4 cups Splenda sugar substitute
2 teaspoons vanilla extract

Steps:

  • Preheat oven to 350 degrees.
  • Mix flour, salt, baking soda, pudding mix, sugar, Splenda, and nutmeg in a large bowl.
  • Melt butter in a separate container.
  • Add eggs and water to butter and mix.
  • Add liquid mixture to dry ingredients. Blend well.
  • Add rum, vanilla, and butter extracts to cake batter.
  • Pour into one or two 9-inch round cake pans.
  • Cook for 25-30 minutes, or until a knife inserted in the middle of the cake comes out clean. I made mine in one 9-inch pan, so the time may be off if you use two pans.
  • Allow cake to cool for 10-20 minutes and then remove from pan.
  • Note: Double the icing if you make a two layer cake.
  • To make icing:.
  • Soften the butter and the cream cheese, then beat it until smooth (mine still wanted to stay a little chunky).
  • Add sugar, Splenda, and vanilla, then beat icing again.
  • Wait until cake cools to use icing.

1 box (3.4-ounce) instant butterscotch pudding and pie filling mix, Jell-O
1 box (18.25-ounce) German chocolate cake mix, Betty Crocker
1 cup water
1/2 cup vegetable oil
3 eggs
1 1/2 cups butterscotch chips, Nestle
1/4 cup shredded carrot
Vanilla ice cream, Haagen-Dazs

Steps:

  • Preheat oven to 350 degrees F. Spray a 9x13-inch glass baking dish with cooking spray; set aside.
  • In a large bowl, whisk together milk and pudding mix for 2 minutes; let stand for 3 minutes until thick.
  • In a large mixing bowl, beat cake mix, water, oil, and eggs with an electric mixer on low speed for 30 seconds. Scrape down sides of bowl; beat for 2 minutes on medium speed. Stir in butterscotch chips and carrot. Pour batter into prepared dish. Pour pudding over batter; spread evenly.
  • Bake in preheated oven for 35 to 40 minutes or until cake tester inserted in center comes out clean. Serve cake warm with a scoop of vanilla ice cream.

1 teaspoon baking soda
1 teaspoon cinnamon

3/4 cup of chopped pecans
1 (8 ounce) can crushed pineapple, undrained
5 -6 bananas
1 1/2 teaspoons vanilla extract
1 (1 lb) box powdered sugar
8 ounces cream cheese
1/2 cup margarine
1 teaspoon vanilla extract

Steps:

  • Add all the dry ingredients to a large bowl, sift them together 3 times.
  • Add pineapple, bananas (pinch the bananas off and mush with your fingers as you add it to the mix), nuts, oil, eggs, and vanilla extract.
  • Mix with very clean hands (do not use mixer). This will allow you to have a fluffy cake.
  • Pour the batter into 2 greased and floured 9-inch cake pans.
  • Bake at 350°F for 40 minutes.
  • Let cool and frost with cream cheese icing. Top with coconut flakes and sprinkle with chopped pecans.
  • For frosting, add ingredients in large bowl, mix together with mixer on low speed until creamy.

1 1/4 cups water
1 cup mashed sweet potatoes (may be fresh or canned..if fresh needs to be cooked soft)
1/4 cup vegetable oil
2 large eggs
2 teaspoons cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon clove
1 teaspoon vanilla
1 cup chopped nuts (walnuts or pecans..optional..or maybe reduced to 1/2 cup)
1 cup shredded coconut
1 can ready to spread vanilla frosting
3 ounces cream cheese, softened
2 teaspoons vanilla

Steps:

  • Preheat oven to 350°F Prepare 13x9 pan (I use pan spray).
  • In a large mixing bowl, mix all cake ingredients except nuts and coconut.
  • Mix at low speed until moistened, then beat 3 minutes at high speed.
  • Fold in the nuts and coconut.
  • Pour into pan and bake about 40 to 50 minutes or until cake test done.
  • Let cake cool.
  • To make frosting:
  • mix all ingredients well with electric mixer until the frosting is smooth.
  • Frost cake.
  • Sprinkle a bit of coconut or nuts on the frosting for garnish.
  • This can be made a day ahead and kept tightly covered in refrigerator.
