CHILI CHEESE DOG BITES
These mini chili dogs are actually oven baked chili cheese dogs in bite-size portions. They are perfect if you're looking for chili dog appetizers for a party, or if you're meal prepping for easy grab-and-go lunches.

- Preheat the oven to 375 degrees F.
- Place the pieces of hot dog buns, open face up into the cups of 2 12-cup muffin pans. Distribute half the cheese evenly into the opening of all of the hot dog buns. Place a piece of hot dog on top of the cheese in each bun, then spoon chili over the top of each hot dog.
- Bake in the preheated oven for 15 minutes. Remove the pans from the oven and sprinkle the remaining cheese over each dog. Bake for 1 more minute, or until the cheese on the top is melted.
- Serve the chili dog bites on a serving platter and top with diced red onion.

- 1. Heat oven to 350. Set chips on a cookie sheet in a single layer.
- 2. Slice each hot dog into twelve even pieces. Place one chunk of hot dog into each scoop shell.
- 3. Spoon about 1 teaspoon of chili into each shell over the hot dog.
- 4. Sprinkle cheese over each shell and Heat in the oven for 10 to 15 minutes until cheese is melted. Sprinkle diced onions or scallions on top or serve them on the side along with sour cream.

- Preheat oven to 400 degrees F (205'C).
- Sift flour, salt and spices into a bowl.
- Cut in butter finely until mixture resembles breadcrumbs.
- Add grated cheese and mix well.
- Mix egg with cold water.
- Add 2 tablespoons of egg mixture to cheese mixture and mix to form a fairly stiff dough.
- Knead gently on a lightly floured surface.
- Roll out dough to a 12x6" rectangle.
- Trim edges.
- Cut in half lengthwise and transfer to a baking sheet.
- Brush each half with remaining egg mixture.
- Sprinkle 1 half with sesame seeds and the other half with poppy seeds.
- Cut each half in 10 triangles and separate slightly to prevent sticking.
- Bake in preheated oven 10-12 minutes or until light golden and cooked through.
- Cool on a wire rack.
- Store in an airtight container up to 2 weeks.

- Lay the crescent roll flat and pinch the seams, use a pizza cutter and cut the sheet into 12 pieces.
- Spray a muffin tin with the non stick spray. Put each crescent roll piece in the muffin tin. Press down slightly and pinch the edges together to form a cup (picture example in post above).
- Cut each hot dog into four pieces. Put each hot dog piece in the crescent roll cups. Spoon the chili into each cup and top with the shredded cheese.
- Bake in a 375 degree oven for 14 to 16 minutes.

- For the chili: Heat the oil in a large pot over medium-high heat. Add the onion and cook, stirring frequently, until soft and translucent, about 8 minutes. Add the beef and garlic and cook, stirring and breaking up into smaller pieces with a wooden spoon, until the meat is brown and cooked through, about 5 minutes. Add the chili powder, cayenne, cumin, 1/2 teaspoon salt and a few grinds of pepper and cook, stirring, until well combined, about 1 minute.
- Add the tomatoes, tomato paste and 1/2 cup water to the pot. Stir well and bring to a boil. Lower the heat to medium-low and simmer, uncovered and stirring occasionally, until slightly thickened, about 10 minutes. Season with salt and pepper and keep warm.
- For the chili dogs: Preheat a grill or large grill pan to medium. Grill the hot dogs according to the package directions until grill marks appear and the hot dogs are warmed through, about 5 minutes. Working in batches, if necessary, grill the cut side of the buns until golden and toasted, about 1 minute. Build the hot dogs and top each with about 1/4 cup of chili spooned down the length of the hot dog. Sprinkle each with some cheese and serve with ketchup and mustard.

- Preheat the oven to 375 degrees Fahrenheit.
- In a 9x13 inch pan, combine the canned chili and Rotel and stir until well mixed.
- Sprinkle half of the cheese (¾ cup) onto the center of the pan. Set aside for now.
- Lay out the crescent dough on the counter. Tear the croissants into 6 individual triangles.
- Sprinkle each crescent dough triangle with the last half of the cheese (¾ cup) and wrap around the hot dog, making sure to leave the hot dog ends exposed.
- Place each wrapped hot dog on top of the chili mixture in the baking dish. Try to make sure they are evenly spaced.
- Bake in the oven for 40-45 minutes or until the crescent rolls turn golden brown on top and are cooked through. I like to separate the rolls from each other to check for doneness.
- Garnish with minced parsley, optional and serve warm.
