1 bunch kale
1 tablespoon olive oil
½ teaspoon salt (or to taste)
seasonings (if desired )

Steps:

  • Preheat oven to 325°F.
  • Wash and dry kale very well. Remove leaves from thick stems.
  • Tear kale into large pieces (it will shrink as it bakes). Toss leaves with olive oil to ensure all leaves are coated but not soaked.
  • Place on a baking sheet and sprinkle with salt and other seasonings if desired.
  • Bake 17-23 minutes or until kale is dried. Cool before serving.

1 bunch curly kale, stemmed and leaves torn into 2-inch pieces
2 teaspoons lemon zest
1/2 teaspoon granulated garlic powder
1 tablespoon olive oil
Kosher salt and freshly ground black pepper
3/4 cup sour cream
1/4 cup buttermilk
1 tablespoon lemon juice
1/4 teaspoon ground cumin
1/4 teaspoon paprika
Kosher salt and freshly ground black pepper

Steps:

  • For the chips: Preheat the oven to 350 degrees F and place a rack in the center of the oven.
  • Place the kale on a sheet pan in an even layer. Sprinkle the lemon zest and granulated garlic over the kale. Drizzle the oil over the top and sprinkle salt and pepper to taste. Bake until crisp, about 20 minutes.
  • For the dipping sauce: In a medium bowl, whisk the sour cream, buttermilk, lemon juice, cumin, paprika and some salt and pepper until combined. Serve with the kale chips.

1 lb kale
2 tablespoons white vinegar
1/2 tablespoon olive oil
salt
1/2 cup lifeway low-fat plain kefir
1/2 cup mayonnaise
1 teaspoon dried dill
2 teaspoons dried parsley
1/4 teaspoon garlic salt
1/2 teaspoon onion salt
fresh ground black pepper

Steps:

  • Heat your oven to 200 degrees.
  • Wash kale and remove the stems. Rip clean kale into bite-sized pieces and dry thoroughly.
  • Gently massage kale with vinegar and oil (try not to crush it) and place in a single layer on baking sheets lined with parchment paper.
  • Sprinkle with salt - go easy on the salt, you can always add more after baking.
  • Place the kale in the oven, and prop the door open - bake for 10 minutes, and check on the progress. Rotate sheets if necessary.
  • Keep baking in 10 minute increments until the kale is dry and crispy, approximately 20-30 minutes.
  • To make the dip, mix all of the dip ingredients (kefir, mayonnaise, dill, parsley, garlic salt, onion, salt, black pepper) together in a bowl and refrigerate for 2 hours before serving.
  • *If you don't mind a thinner dip, omit the mayo and use a full cup of kefir.

Extra-virgin olive oil

Crushed red pepper flakes

Steps:

  • Preheat the oven to 350 degrees F.
  • Place the kale in a large bowl and dress very lightly with olive oil so the leaves are barely coated. Season with salt. Spread the leaves out across 2 roasting sheet trays so they aren't stacked up on each other too much. Roast in the oven until crispy but still green, 12 to 15 minutes. Remove from the oven and dress with a squeeze of fresh lemon juice and a touch of crushed red pepper flakes.

1 bunch kale (about 1 1/2 pounds)
Kosher salt
1 bunch fresh cilantro, leaves removed

Steps:

  • In a large heavy pot (like a Dutch oven), heat 2 to 3 inches of oil to 350 degrees F.
  • Thoroughly wash the kale and remove the stems. Tear the leaves up into large bite-size pieces and dry them, either in a salad spinner or on paper towels.
  • Drop 5 to7 leaves in the hot oil at a time and fry until the kale is crisp and almost transparent, 60 to 90 seconds. Drain on a wire rack set over paper towels and season with kosher salt while hot.
  • Fry the cilantro leaves for a couple of seconds and drain on the same wire rack. Season with a bit more salt. Serve it as a snack or side dish.

Steps:
