A delicious coating of French-fried onions adds big flavor to this Crispy Onion Chicken. A super family-friendly meal idea!

6 ounces French-fried onions
2 tablespoons all-purpose flour
⅓ cup olive oil
¼ cup butter (melted)
1 tablespoon Worcestershire sauce
1 tablespoon Dijon mustard
1 teaspoon minced garlic
1 ½ pounds boneless skinless chicken breast
salt and pepper (to taste)

Steps:

  • Preheat oven to 375 degrees F. Generously coat a large rimmed baking sheet with nonstick cooking spray.
  • Place the French-fried onions in a large, sealed plastic storage bag and use a rolling pin or kitchen mallet to crush them. Measure out and reserve ¼ cup of the crushed French-fried onions for later. Place remaining crushed onions in a shallow dish (a pie plate works perfectly) and toss with flour to combine. In a separate shallow dish, combine melted butter, olive oil, Worcestershire sauce, Dijon mustard, and garlic.
  • Slice or pound chicken to ½-inch thickness and cut into smaller portion size pieces, if desired. Season each side with salt and pepper, to taste.
  • Dip chicken in oil mixture, then coat with onion mixture and place on prepared baking sheet. Drizzle each piece of chicken with about 1 teaspoon of the remaining oil mixture and then top with some of the reserved crushed onions as needed to coat chicken well.
  • Bake for 20 to 25 minutes or until thoroughly cooked and no longer pink in center. Cooking time will depend on thickness of chicken.

Steps:

  • In a shallow bowl, combine butter, Worcestershire sauce, mustard, garlic salt and pepper. In another shallow bowl, place 1/2 cup crushed onions. Dip chicken in butter mixture, then coat with onions. , Place in a greased 9-in. square baking pan. Top with remaining onions; drizzle with any remaining butter mixture. Bake, uncovered, at 350° for 30-35 minutes or until a thermometer reads 170°.

I experimented for many years before developing this recipe. It's bits and pieces of hints I had heard over the years. I have had many compliments on this chicken. Most of this recipe is dependant on your own taste. It's more a matter of preparation and cooking method!

1 (4 pound) chicken, cut into pieces
1 cup buttermilk
2 cups all-purpose flour for coating
1 teaspoon paprika
salt and pepper to taste
2 quarts vegetable oil for frying

Steps:

  • Take your cut up chicken pieces and skin them if you prefer. Put the flour in a large plastic bag (let the amount of chicken you are cooking dictate the amount of flour you use). Season the flour with paprika, salt and pepper to taste (paprika helps to brown the chicken).
  • Dip chicken pieces in buttermilk then, a few at a time, put them in the bag with the flour, seal the bag and shake to coat well. Place the coated chicken on a cookie sheet or tray, and cover with a clean dish towel or waxed paper. LET SIT UNTIL THE FLOUR IS OF A PASTE-LIKE CONSISTENCY. THIS IS CRUCIAL!
  • Fill a large skillet (cast iron is best) about 1/3 to 1/2 full with vegetable oil. Heat until VERY hot. Put in as many chicken pieces as the skillet can hold. Brown the chicken in HOT oil on both sides. When browned, reduce heat and cover skillet; let cook for 30 minutes (the chicken will be cooked through but not crispy). Remove cover, raise heat again and continue to fry until crispy.
  • Drain the fried chicken on paper towels. Depending on how much chicken you have, you may have to fry in a few shifts. Keep the finished chicken in a slightly warm oven while preparing the rest.

4 boneless, skinless chicken breasts, halved horizontally (see Tip) and pounded 1/8-inch thick, or use 4 chicken cutlets (don't split or pound)
Kosher salt and black pepper
1/2 cup sour cream or Greek yogurt
1/4 cup thinly sliced chives (or 1 tablespoon dried chives), plus more for serving
2 tablespoons onion powder
2 cups panko bread crumbs
Canola oil, for frying
1 lemon, cut into wedges

Steps:

  • Pat chicken dry, and season both sides with salt and pepper.
  • In a medium bowl, stir together the sour cream, chives and 1 tablespoon onion powder. Season with salt and pepper. Add the chicken and turn to coat. (Chicken can sit in the marinade for up to 8 hours. Refrigerate, then let come to room temperature before cooking.)
  • In a shallow bowl or lipped plate, stir together the panko and remaining 1 tablespoon onion powder; season with salt and pepper.
  • Working one at a time, press the chicken breasts into the panko, using your fingers to pack the panko onto both sides of the chicken, and place on a large plate or a sheet pan.
  • Line a plate with paper towels. Heat 1/8-inch canola oil in a large skillet over medium-high. Drop a piece of panko in: If it sizzles, the oil's ready. Add a chicken cutlet (or two, if they can fit comfortably), and cook until golden brown, 3 to 5 minutes per side. Transfer to the paper towel-lined plate and sprinkle with salt. Repeat with remaining chicken, adding and heating more oil as needed, and removing excess panko from the pan with a slotted spoon.
  • Serve chicken with more chives and lemon wedges for squeezing.
