AIR FRYER CINNAMON ROLLS

The best air fryer cinnamon rolls ever! I made these Ninja Foodi sticky buns using no yeast in just 20 minutes total and they were the best breakfast!

1 roll crescent rolls (refrigerated)
1/3 c brown sugar
1/3 c butter (melted)
1/4 c raisins
1/3 c nuts (chopped, pecans or walnuts)
2 tbsp maple syrup
2 tbsp sugar
1 tbsp cinnamon

Steps:

  • Whisk together your melted butter, brown sugar and maple syrup.
  • Put a trivet inside your air fryer/Ninja Foodi and an 8" springform (or other style) pan that's been sprayed with non stick spray on top.
  • Pour your brown sugar mixture inside your pan. Sprinkle your nuts and raisins (can add dried cranberries too) into the pan too.
  • Open your package of refrigerated crescent rolls but DO NOT unroll the crescent roll roll as you normally would. Instead put it on a cutting board and cut it in half (use a non serrated knife so it doesn't smush down when slicing).
  • Then cut those pieces in half again, and again until you get 8 equal pieces.
  • Mix your cinnamon and sugar in a bowl and dip the bottom and top of each cut crescent roll piece in it. Then put each one into your pan on top of your brown sugar mixture with the sugar mixture facing up.
  • Close your air fryer lid (one attached on the Ninja Foodi) and set to air crisp, 345 degrees, for 5 minutes.
  • Open lid and flip each crescent roll piece upside down.
  • Turn air fryer on again, press air crisp, 345 degrees for 4 more minutes (5 if you want them crispier on top).
  • Immediately remove pan, place cooked sticky buns on a plate and spoon mixture at the bottom of the pan on top of your rolls. Enjoy!!

6 tablespoons melted, unsalted butter
6 tablespoons brown sugar
1 tablespoon raisins
1 teaspoon ground cinnamon
1/4 cup diced pecans
1 package Crescent Dough Sheets

Steps:

  • Start by mixing the brown sugar, butter, raisin, pecans, and ground cinnamon.
  • Spray your muffin tin with non-stick cooking spray or olive oil spray-scoop 2 tablespoons of the topping on the bottom of the pan.
  • Cut your dough into pieces, so you use all your dough up; I marked mine for easy cutting. Place the dough on top of the topping.
  • Air Fryer for 5 minutes at 330, then when the top is golden brown, flip them and air fry for another 4 minutes. If they are still gooey after that, continue air frying until they are completely done.
  • Plate, serve, and enjoy!

2 cups whole milk
1/2 cup vegetable oil
1/2 cup granulated sugar
1 package active dry yeast (2 1/4 teaspoons)
4 1/2 cups all-purpose flour, plus more for dusting
1 1/2 teaspoons kosher salt
Heaping 1/2 teaspoon baking powder
Scant 1/2 teaspoon baking soda
1 stick (1/2 cup) salted butter, melted, plus more as needed
1 cup granulated sugar, plus more as needed
2 tablespoons ground cinnamon
1 1/2 cups packed light brown sugar
2 sticks (1 cup) salted butter, softened, plus more for the skillet
2 tablespoons honey
Pinch of kosher salt
1 tablespoon whiskey, such as Jack Daniels
1 teaspoon vanilla extract
2 cups pecan pieces

Steps:

  • For the dough: Heat the milk, oil and granulated sugar in a medium saucepan over medium heat to just below a boil. Set aside and let cool to warm.
  • Sprinkle the yeast on top and let it sit on the milk mixture for 1 minute. Add 4 cups of the flour. Stir until just combined, then cover with a clean kitchen towel and set aside in a relatively warm place for 1 hour.
  • After 1 hour, remove the towel and add the salt, baking powder, baking soda and remaining 1/2 cup flour. Stir thoroughly to combine. Use the dough right away or place in a mixing bowl and refrigerate for up to 3 days, punching down the dough if it rises to the top of the bowl. (The dough is easier to work with if it's been chilled for at least an hour or so beforehand.)
  • To assemble the rolls: On a floured baking surface, roll the dough into a large rectangle, about 30 inches by 10 inches. The dough should be very thin.
  • Preheat the oven to 325 degrees F.
  • For the filling: Pour the melted butter over the surface of the dough. Use your fingers to spread the butter evenly. Sprinkle over the granulated sugar and cinnamon. Don't be afraid to drizzle on more butter or more sugar! Gooey is the goal.
  • Now, beginning at the end farthest from you, roll the rectangle tightly towards you. Use both hands and work slowly, being careful to keep the roll tight. Don't worry if the filling oozes as you work; that just means the rolls are going to be divine. When you reach the end, pinch the seam together and flip the roll so that the seam is face down. You'll wind up with one long buttery, cinnamony, sugary, gooey log. Slip a cutting board underneath the log and, with a sharp knife, make 16 equal slices.
  • For the smear and base: Cream together the brown sugar, butter, honey and salt until lightened, then slowly add the whiskey and vanilla while mixing.
  • Butter a 12-inch cast-iron skillet, layer the bottom with the pecan pieces and then scoop 5 large scoops of the smear on top. Heat in the oven until the smear is slightly foamy and bubbling, 10 to 15 minutes.
  • Remove the skillet from the oven and place the sliced rolls on top of the melted smear (it's fine to put them on the hot smear). Allow the rolls to rise for 20 minutes.
  • Return the skillet to the oven and bake until the rolls are golden brown and the smear is brown and sticky, 20 to 30 minutes. Take another 12-inch skillet and place it on top of the hot skillet. Flip over quickly and carefully. All of the caramelly, boozy goodness will be on top.

3 tablespoons packed brown sugar, divided
1/4 cup Karo syrup (light or dark)
1/4 cup coarsely chopped pecans
2 tablespoons butter or 2 tablespoons margarine, softened,divided
1 (8 ounce) can refrigerated crescent dinner rolls
1 teaspoon ground cinnamon

Steps:

  • Preheat oven to 350F.
  • In small bowl combine 2 T brown sugar, corn syrup, pecans and 1 T of butter or margarine.
  • Spoon about 2 tsp of mixture into each of 9 (2 1/2 inch) muffin pan cups that has been sprayed with cooking spray.
  • Unroll entire crescent roll dough; pinch seams together to form 1 rectangle.
  • Combine remaining 1 T brown sugar and cinnamon.
  • Spread dough with remaining 1 T butter; sprinkle with cinnamon mixture.
  • Roll up from short end.
  • Cut into 9 slices.
  • Place one slice in each muffin cup.
  • Bake 25 minutes or until golden brown.
  • Immediately invert pan onto cookie sheet or tray; cool 10 minutes and serve.

SUPER SIMPLE AIR BUNS

There are recipes everywhere for buns but these take the cake. Anyone can do it, takes a little elbow grease to knead but they are amazing. My Mom shared this recipe with me and it's been in high demand ever since. I use All Purpose flour because it's what's usually on hand but Whole Wheat flour can easily be substituted.

3 cups hot water
1/3 cup white sugar
2 teaspoons table salt
1/3 cup vegetable shortening
2 teaspoons white vinegar
2 tablespoons instant yeast
8 1/2 cups all-purpose flour
2 tablespoons margarine (optional)

Steps:

  • 1. In a large metal bowl combine water (this water should be tap hot, NOT BOILED if it's too hot you'll kill the yeast, if it's too cool it won't activate), sugar, salt and Vegetable Shortening. Stir until shortening has almost completely dissolved or is in very small lumps.
  • 2. Sprinkle four cups of flour across the top of the liquid mixture creating a "blanket" effect (this is important) sprinkle on yeast.
  • 3. Working quickly whisk in the yeast and flour to mixture, then switch to a wooden spoon and stir in another 2 cups of flour.
  • 4. From this point forward your flour amounts will vary. Due to weather, climate, altitude etc the dough will continue to accept any where from another 1 to 2 and half cups of flour.
  • 5. Knead in as much flour as the dough will accept until it is no longer sticky and feels smooth on the exterior. This takes usually about 15 minutes of good kneading and you'll be surprised at how much flour the dough will take.
  • 6. Wash out metal bowl with hot water and dry thoroughly (do this quickly as you want the bowl to stay warm), place dough in bowl and cover with a clean tea towl.
  • 7. Let rise 1 hour.
  • 8. Punch down dough and let rise another 30 minute.
  • 9. Shape dough into balls (this can vary based on desired finish product bun size. eg golf ball dough will rise and bake to about a small dinner roll size. I usually make them about the size of a small clementine for larger lunch size buns) and place on a greased cookie sheet.
  • 10. Pre Heat Oven to 400 degrees. Cover and let rise another 1 hour, they will have doubled in size by then.
  • 11. Bake in 400 degree oven for 12-15 minutes. You'll know buns are done by their golden color.
  • 12. If you'd like a super soft exterior to these buns rub with a small amount of butter or margarine immediately after removing from the oven. This isn't necessary and the buns are excellent without this step.

MOM'S AIR BUNS (ROLLS)

This recipe for light, soft, buns did NOT come from my Mom, but it is so good that I dedicate it to all Moms who bake bread..or anyone who bakes bread for that matter! I will give the original recipe, but I admit that I now use the ABM to knead the dough, and will give instructions for this variation at the end. Preparation time is the length of time for the "dough" cycle on my bread machine. For anyone wishing to make 100% whole wheat buns,(a variation of this recipe, and equally delicious IMHO), I have submitted it as recipe #168802 with minor alterations. More tweaking...I now like Mom's 100% Whole Grain Air Buns, recipe #186744 even better for a healthier version.

1/2 cup warm water
1/2 tablespoon yeast
1 teaspoon sugar
1/4 cup lard (I use shortening)
1/4 cup granulated sugar
1/2 teaspoon salt
1 tablespoon white vinegar
1 1/4 cups warm water
1 1/2 cups white bread flour
3 cups more white bread flour

Steps:

  • Mix the 1/2 cup warm water, yeast, and 1 tsp sugar, and allow to proof.
  • Melt the lard, and mix in sugar, salt, vinegar, and warm water. When body warm, add the proofed yeast, and beat in 1 1/2 cups flour. Let rest for 15 minutes.
  • Knead in approximately 3 cups more flour.
  • Let dough rise till double (approximately 2 hours).
  • Deflate dough, and form into buns, any size, (I make 16 large) or loaves. Rise till double (takes approximately one hour, but depends on size/shape chosen).
  • Bake buns at 350°F for approximately 20 minutes.
  • For ABM, in my machine, on the "dough" cycle, I use 2 teaspoons of bread machine yeast, and I reduce the water to about 1 1/2 cups, the flour to 4 cups, adding a tad more water or flour as it kneads to get a smooth,soft ball of dough. I leave the other ingredients as posted.
