1/4 cup butter
1 tablespoon lemon juice
2 cups breadcrumbs
2 cloves minced garlic
1/4 cup fresh parsley, chopped
1/4 cup fresh basil, chopped
4 (8 ounce) salmon fillets
1/3 cup heavy cream
1/3 cup sour cream
2 tablespoons chopped fresh chives
2 tablespoons chopped fresh basil
1 tablespoon chopped fresh parsley
1 tablespoon fresh lemon juice

Steps:

  • Preheat oven to 400 degrees and butter a baking dish.
  • In large skillet, melt butter and stir in lemon juice, bread crumbs and garlic.
  • Stir mixture frequently until crumbs are golden.
  • Remove skillet from heat and stir in parsley and basil.
  • Season salmon with salt and pepper and coat all sides with crumb mixture.
  • Place on baking dish and bake in middle of oven for 15 to 20 minutes or until done.
  • Serve with cream sauce.

4 salmon fillets (, skinless (~180g/6oz each) (Note 1))
1/2 tsp black pepper
1/2 tsp salt
1 tbsp olive oil
15g / 1 tbsp butter (, unsalted)
2 garlic cloves (, finely minced)
1/2 cup dry white wine ((or more chicken stock) (Note 2))
1/2 cup chicken or vegetable stock/broth (, low sodium)
1 cup cream (, heavy/thickened )
1/2 cup parmesan (, finely grated (grate your own, Note 3))
2 tsp tarragon leaves* (, finely chopped)
2 tsp chervil* (, finely chopped)
2 tsp parsley* (, finely chopped, plus more for garnish)

Steps:

  • Season: Pat salmon dry, then sprinkle with salt and pepper.
  • Pan-sear: Heat oil in a large non stick skillet over medium high heat. Add salmon, presentation side down, and cook for 3 minutes until golden brown.
  • Flip: Turn salmon and cook the other side for another 2 minutes, until the internal temperature registers 49°C / 120°F (for medium-rare, recommended) or until cooked to your taste (Note 5).
  • Butter baste: When it's almost cooked, add the butter. Melt, then spoon over the salmon a few times.
  • Rest: Remove salmon onto plate, and cover loosely with foil to keep warm.
  • Sauté garlic: Add garlic and stir for 20 seconds or until light golden.
  • Reduce wine: Add white wine, turn up heat to high. Bring to simmer while stirring base of the pan to dissolve all the golden bits into the sauce. Cook 1 minute or until it most evaporates and the wine-y smell is gone.
  • Thicken cream & stock: Add cream and chicken stock, then simmer on medium heat for 2 - 3 minutes until reduced and slightly thickened.
  • Add parmesan & herbs: Stir through parmesan (this will thicken sauce more), then the herbs. Taste sauce and see if more salt and pepper is needed.
  • Serve: Serve salmon with Creamy Sauce, ensuring there's something on the plate to soak up all that amazing sauce! Mashed Potato rates highly. See above video for list of suggestions (including side salads).

4 salmon fillets, skin removed
2 tbsp butter
1 red onion, finely chopped
3 garlic cloves, crushed
1 cup white wine/stock
1 cup cream
1/2 cup milk mixed with 1 tablespoon cornflour/starch
2 tbsp lemon juice
zest of 1/2 lemon
salt, to taste
pepper, to taste
parsley, chopped

Steps:

  • Heat a large non-stick frying pan then brown the salmon fillets on both sides in a splash of oil until golden brown. Remove from the pan and set aside.
  • Add the butter to the pan and add the red onion. Saute until soft and fragrant then add the garlic and fry for another 30 seconds.
  • Pour in the wine/stock and allow to reduce then pour in the cream and milk mixture. Bring to a simmer then allow to cook for 5 minutes before adding the lemon juice and zest. Season to taste then add the salmon back in.
  • Allow to salmon to cook in the sauce for 3-5 minutes then sprinkle with the parsley and serve.

4 tablespoons (1/2 stick) butter
2 medium leeks, halved, thinly sliced (white and pale green parts only)
3 tablespoons fresh lemon juice
1 cup whipping cream
1 cup sliced almonds, chopped
1/4 cup chopped fresh parsley
1 tablespoon grated lemon peel
1/2 teaspoon salt
1/8 teaspoon ground black pepper
1/2 cup all purpose flour
6 6-ounce skinless salmon fillets
1 large egg, beaten to blend
2 tablespoons olive oil

Steps:

  • Melt 2 tablespoons butter in heavy large saucepan over medium-high heat. Add leeks; sauté 2 minutes. Reduce heat to low; cover and cook until leeks are very tender, stirring occasionally, about 20 minutes. Increase heat to medium; add lemon juice and stir until liquid evaporates, about 1 minute. Mix in cream. Simmer until slightly reduced, about 2 minutes. Cool slightly. Transfer mixture to blender. Blend until smooth. Strain sauce into same saucepan, pressing on solids to extract as much liquid as possible. Season sauce to taste with salt and pepper. (Sauce can be made 1 day ahead. Cover and refrigerate.)
  • Mix almonds, parsley, lemon peel, 1/2 teaspoon salt, and 1/8 teaspoon pepper on plate. Place flour on another plate. Sprinkle salmon with salt and pepper. Dredge salmon in flour, shaking off excess. Lightly brush 1 side of salmon with beaten egg. Press brushed side of salmon into almond mixture, pressing lightly to adhere. Arrange salmon, nut side up, on baking sheet.
  • Melt 1 tablespoon butter with 1 tablespoon oil in each of 2 heavy large skillets over medium heat. Add half of salmon to each skillet, almond-coated side down, and cook until crust is brown, about 5 minutes. Turn salmon over. Sauté until salmon is cooked through and opaque in center, about 5 minutes. Transfer salmon to plates.
  • Reheat sauce, stirring over medium heat. Spoon around salmon and serve.

12 oz. jar of roasted peppers, divided
4 salmon fillets (about 4 oz. each)
1/2 tsp. paprika (or to taste)
1/2 tsp. salt
2 tbsp. olive oil
1/4 cup vegetable broth
1/2 medium onion, diced
2 garlic cloves, minced
1/4 tsp. red pepper flakes
3/4 cup heavy cream (or Half&Half)
1/2 cup shredded Parmesan
3 tbsp. chopped parsley

Steps:

  • Puree 6 oz. of roasted peppers in a smoothie cup, or with a hand chopper, until smooth. Chop the remaining 6 oz. of peppers. Set aside.
  • Season the salmon fillets with salt and paprika.
  • Add about 2 tablespoons of olive oil to a large non-stick skillet. When it's hot, add the salmon and fry for about 4-5 minutes on each side, until just cooked through (time will depend on the thickness of the fish). Remove the salmon from the skillet.
  • To the same skillet, add the onions and garlic. Cook for 2 minutes, stirring, and then add the vegetable or chicken broth. Keep cooking until the liquid evaporates and the onions soften nicely.
  • Add the chopped and pureed peppers. Cook, stirring occasionally, for 5-7 minutes, until it starts looking thicker, and the roasted peppers sweeten.
  • Reduce the heat to low. Add the cream and Parmesan cheese, and season with some salt and pepper, if needed. Stir and bring to a gentle simmer.
  • Return the salmon to the skillet, cover it with the sauce, and simmer for 1 minute, just to heat it through. Sprinkle some fresh parsley on top. Serve.

Steps:

  • Heat oil a large skillet over medium-high heat. Season salmon with salt, pepper and garlic powder all over. Sear in the hot pan, flesh-side down first, for 5 minutes on each side, or until cooked to your liking. Once cooked, remove from the pan and set aside.
  • Melt the butter in the same skillet. Sauté garlic until fragrant (about 30 seconds). Pour in the white wine or broth; allow to reduce to half while scraping any bits off of the bottom of the pan.

1 pound dry pasta, spaghetti, fettuccine, or linguine
2-3 pieces salmon fillets, about 2-inches wide (1 pound)
1/2 teaspoon salt (or to taste)
1/2 teaspoon ground black pepper (or to taste)
1 tablespoon olive oil
2 tablespoons butter
1 medium onion, diced
1 tablespoon garlic, finely chopped
1/2 tablespoon cornstarch (or all-purpose flour)
1 cup heavy cream
2 tablespoons white wine
1 teaspoon Italian seasoning
1/3 cup Parmesan cheese, grated
2 tablespoons fresh parsley, finely chopped
1 lemon, sliced into wedges

Steps:

  • Bring a large pot of salted water to a boil over medium-high heat. Add pasta and cook until al dente (fully cooked but still firm), or according to package directions, about 8-10 minutes. Drain well and set aside in the pot. Drizzle a little olive oil and toss together to keep the pasta from sticking together.
  • Pat dry salmon fillets and season with salt and pepper. Set aside at room temperature for 10 to 15 minutes.
  • In a large skillet, heat oil for 2 minutes over medium-high heat until the hot oil sizzles. Sear the salmon fillets (skin side facing up first) for 5-6 minutes on each side until golden browned and fully cooked.   • Add heavy cream, Italian seasoning and Parmesan cheese. Stir well and bring the sauce to a simmer. Reduce heat to medium and keep stirring until thickened to a desired consistency, about 4-5 minutes.
  • Return the cooked shredded salmon to the skillet and toss in the creamy sauce over to coat.

1 tbsp vegetable oil
2 salmon fillets (boneless, skin-on)
1 clove garlic (peeled and minced)
1/4 cup (60 ml) white wine
1/4 cup (60ml) strong chicken stock ( (I use 1 stock cube crumbled into 1/4 cup/60ml hot water))
3/4 cup (180ml) double (heavy) cream
1/4 tsp salt
1/4 tsp pepper
3 tbsp grated parmesan
zest of 1 lemon

Steps:

  • Heat the oil over a high heat in a frying pan (skillet).
  • Add the salmon, skin-side down and cook for 2 minutes.
  • Turn the salmon and cook for a further 2 minutes, until lightly browned, then turn back over so it's skin-side down again.
  • Turn the heat down to medium and add the garlic, stir for 30 seconds (no longer or the garlic may burn), then add in the white wine.
  • Bring to the boil and allow to bubble for a minute, then add in the chicken stock. Allow to bubble for a further minute.
  • Add in the cream, salt, pepper and parmesan and bring back to the boil. Simmer gently for a further 3-4 minutes until slightly thickened.
  • Stir in the lemon zest then serve the salmon topped with a sprinkling of fresh parsley. I love to serve mine with baby new potatoes and broccoli too.

2 tablespoons olive oil
4 (6 ounce) salmon fillets
½ cup butter
2 tablespoons Worcestershire sauce
2 tablespoons lemon juice
¼ cup white wine
1 teaspoon ground black pepper
1 teaspoon garlic salt
1 ½ teaspoons fines herbs
¼ cup chopped fresh dill

Steps:

  • Preheat the oven's broiler and set the oven rack about 6 inches from the heat source. Line a jelly roll pan with aluminum foil, and spray with nonstick spray.
  • Place garlic and olive oil in a small microwave safe bowl and cook on High for 1 1/2 minutes. Melt the butter in a saucepan over low heat, and stir in the garlic mixture. Remove from heat; stir in the Worcestershire sauce, lemon juice, white wine, black pepper, garlic salt, and fines herbs.
  • Place the salmon fillets skin-side down on the prepared pan. Spoon about 1/3 of the butter sauce over the fillets, and sprinkle evenly with the fresh dill.
  • Broil in the preheated oven for 3 minutes. Turn salmon fillets so that the side of the fillet faces up, and baste fillets with about 1/3 of the butter sauce; broil for 3 minutes. Turn the fillets to place the opposite side facing up; spoon on the remaining butter sauce; broil until the fish flakes easily with a fork, about 3 additional minutes.
