MACARONI AND TOMATO SOUP
My Mother and Father were children of the Great Depression. Sometimes my Mom would pull these crazy recipes out but we as a family loved them! This is one that my children and I have to have still sometimes. Eat it hot because it does not rewarm very well. IMHO, Campbells soup works best in this, but feel free to use whatever tomato soup you would like. This sounds wierd but it is REALLY GOOD.

TOMATO MACARONI SOUP
I have made this from scratch for years and my kids used to love it and I still make it just for myself. I use two cups or more of home canned tomatoes.

Steps:
- Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the macaroni, and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 8 minutes. Drain well in a colander set in the sink.
- Pour the macaroni into a saucepan and place over medium heat; stir in the butter, bacon grease, tomato sauce, stewed tomatoes with juice, and sugar; season with salt and pepper. Stir while cooking until butter and bacon grease has melted and incorporated completely, 5 to 10 minutes; remove from heat, cover, and allow to sit about 20 minutes before serving.

TOMATO SOUP MAC AND CHEESE
This is the mac and cheese of my childhood with a few upgrades from how my mom made it. The tangy pop from the tomatoes lets the rich blend of cheeses really shine and the crunchy topping adds great texture. There's room in my world for a variety of mac and cheese styles and this one nears the top.

Steps:
- Prepare the chicken broth by simmering the bones with water for one hour over low heat.
- Skim away the scum floating on the surface.
- Filter the broth through a wire mesh strainer and a cloth bag to get the clean broth. Season the broth with salt and pepper to taste.
- Cook the macaroni until al dente according to the instructions on the packaging. Drain the macaroni and mix it with some oil to prevent the pasta from sticking together.
- Pan-fried two slices of ham of your choice (or use luncheon meat), then cut into slices or strips.
- Bring the amount of broth you need to boil. Add a tablespoon of the frozen bean.
- Place the macaroni in a bowl. Ladle the chicken broth over it. Put a sunny-side-up egg and ham into the bowl. (Alternative: hard-boiled egg and luncheon meat slices). Garnish with thinly sliced scallion and serve.

Steps:
- In a medium frying pan, brown the ground beef, onion and garlic until ground beef is no longer pink. Drain the grease (I also like to rinse it with hot water to remove most of the grease) and place in a large crockpot.
- Add the broth, cans of chopped and whole tomatoes, Worcestershire, ketchup, brown sugar (if wanted) and Italian seasoning. Add more sugar and Worcestershire to taste if needed. Place the lid on the crockpot and cook on low for 8-10 hours.
- When you are ready to serve, either add the dry macaroni and let cook for 20-25 minutes OR add cooked macaroni. Let the macaroni heat through and serve!
- Press the saute button and fry the ground beef and onions until the beef is no longer pink. Add in the garlic. Fry for another minute or so. Drain the grease.
- Use the Instant Pot like the slow cooker, using the slow cook button and the instructions above OR
- Add in the remaining ingredients except for the macaroni. Cook on the SOUP setting for 10 minutes. ( this really helps get the beef flavor going.) Release the pressure manually.
- Add the DRY macaroni, (not cooked or it will be mush!) then cook for 10 minutes on the SOUP setting again. Release manually or with the NPR ( naturally)
- Serve and enjoy!

Continue to cook the macaroni for about 10 more minutes for the flavors to combine. Serve immediately.
