1 1/3 pounds raw Italian sweet sausage, casing removed
A drizzle olive oil
2 cups ricotta
A handful flat leaf parsley, chopped
2 cloves garlic, chopped
A handful grated Parmigiano, plus extra, for knots
1/4 teaspoon nutmeg, freshly grated or a couple pinches of ground
A few grinds black pepper
2 tablespoons chopped pimento
2 (10-ounce) tubes prepared pizza dough
2 cups shredded mozzarella
Garlic oil (1 or 2 cloves chopped and heated in 1/2 cup extra-virgin olive oil)
2 cups tomato, marinara or pizza sauce for dipping or Five Minute Spicy Marinara, recipe follows
2 tablespoons (two turns around the pan) extra-virgin olive oil
3 cloves garlic crushed
1/2 teaspoon crushed red pepper flakes
1 (32 ounce) can chunky style crushed tomatoes
Salt and pepper
1 teaspoon Italian dried seasoning
1 handful Italian parsley leaves, chopped

Steps:

  • Preheat oven to 425 F.
  • Brown sausage in a small skillet in a drizzle of olive oil. Transfer the cooked crumbled sausage to a paper towel lined plate to drain.
  • Combine sausage with ricotta, parsley, garlic, Parmigiano, nutmeg, pepper, and pimento. Roll out doughs and halve cross-wise. Place a dough rectangle on a nonstick cookie sheet. Use 1/2 cup mozzarella on half of each dough rectangle and pile a mound of filling on half of the total area. Fold dough over and pinch edges to seal. The result is a rectangular turnover.
  • For half-moon shaped calzones, trim excess dough. Roll dough bits into strips, tie in knots and brush with garlic oil and cheese. Garlic knots are fun to dip at the table.
  • Bake calzones 15 minutes or until golden all over. Serve calzones with warm tomato, marinara, or pizza sauce for dipping.
  • Cook's Note: For an additional time saver, 2 packages precooked sausage crumbles, 8 ounces each, may be substituted for raw Italian sausage used in the above recipe.
  • Add olive oil to medium saucepan over moderate heat. Add garlic and crushed pepper to the heated olive oil; when pepper snaps and garlic sizzles, stir in crushed tomatoes. Season sauce with salt, pepper, and Italian seasoning. Cook for five minutes and stir in parsley. Serve.

1 package (1/4 ounce) active dry yeast
1/2 cup warm water (110° to 115°)
3/4 cup warm milk (110° to 115°)
2 tablespoons plus 2 teaspoons olive oil, divided
1-1/2 teaspoons salt
1 teaspoon sugar
3 to 3-1/4 cups all-purpose flour
1 pound bulk Italian sausage
1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry
1 carton (15 ounces) ricotta cheese
1/2 cup grated Parmesan cheese
1 tablespoon minced fresh parsley
1/8 teaspoon pepper
2 tablespoons cornmeal
1/2 teaspoon garlic salt
1-1/2 cups pizza sauce, warmed

Steps:

  • In a large bowl, dissolve yeast in water. Add the milk, 2 tablespoons oil, salt, sugar and 2 cups flour; beat until smooth. Stir in enough remaining flour to form a soft dough. , Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl; turn once to grease top. Cover and let rise in a warm place until doubled, about 1 hour. , Meanwhile, in a large skillet, cook sausage over medium heat until no longer pink; drain. Add the spinach, cheeses, parsley and pepper; mix well. , Punch dough down; divide into six pieces. On a floured surface, roll each piece into an 8-in. circle. Top each with 2/3 cup filling. Fold dough over filling; pinch to seal. , Place on greased baking sheets sprinkled with cornmeal. Brush tops lightly with remaining oil; sprinkle with garlic salt. Bake at 400° for 20-25 minutes or until golden brown. Serve with pizza sauce. Freeze option: Freeze cooled baked calzones in resealable plastic freezer bags. To use, reheat calzones on a greased baking sheet in a preheted 350° oven until heated through.

6-1/2 oz. (1/2 of 13-oz. pkg.) OSCAR MAYER Natural Uncured Roasted Peppers & Onions Sausage, cut into 1/2-inch-thick slices
1 cup slivered onions
3/4 cup sliced fresh mushrooms
1/4 cup CLASSICO Traditional Pizza Sauce
1 cup KRAFT Shredded Mozzarella Cheese

Steps:

  • Heat oven to 375ºF.
  • Unroll pizza dough onto baking sheet sprayed with cooking spray; pat into 12x10-inch rectangle.
  • Cook sausage, onions and mushrooms in large nonstick skillet on medium-high heat 5 min. or until sausage is lightly browned, stirring occasionally. Remove from heat.

16 whole frozen, un-risen dinner rolls (I use Rhodes, can also use frozen bread loaves)
1 tablespoon butter
1 whole medium onion, diced
1 pound breakfast or Italian sausage
1/2 teaspoon Italian seasoning
1/4 teaspoon red pepper flakes
15 ounces whole milk ricotta
1 1/2 cups grated mozzarella
1/2 cup grated Parmesan
2 tablespoons chopped fresh parsley
1/2 teaspoon salt
Black pepper
2 whole eggs plus 1 whole egg, beaten
All-purpose flour, for dusting
Marinara Sauce, warmed, for serving, recipe follows
Olive oil
3 to 4 whole cloves garlic, minced
1 whole small to medium onion, chopped
1/2 cup white wine (or chicken broth)
Three 15-ounce cans crushed tomatoes
Salt and ground pepper
Pinch sugar
Fresh parsley leaves
Fresh basil leaves

Steps:

  • Place the frozen rolls (or frozen bread loaves) on a baking sheet to thaw. Cover with a tea towel and let thaw and rise for 2 to 3 hours.
  • Preheat the oven to 400 degrees F.
  • Melt the butter in a large skillet over medium-high heat. Add the onions and allow to cook for a couple of minutes. Add the sausage and cook until brown, crumbling the sausage as you stir. Add the Italian seasoning and red pepper flakes. Remove from the skillet and allow to cool on a plate.
  • In a separate bowl, combine the ricotta, mozzarella, Parmesan, salt, some pepper, parsley and 2 eggs.
  • When the sausage is cool, stir it into the cheese mixture and set aside.
  • When the rolls are thawed and risen, roll them out on a lightly floured surface until paper thin. Spoon 3 to 4 tablespoons of the filling onto half of the dough circle. Fold half of the dough over itself, and then press the edges to seal.
  • Brush the surface of each calzone with the beaten egg, and then bake until nice and golden brown, 10 to 13 minutes. Serve with warm Marinara Sauce.
  • Add a tablespoon or so of olive oil into a hot pan over medium-high heat and throw in the garlic and chopped onions and give them a stir.
  • Now add the wine (or chicken broth), whisking to deglaze the bottom of the skillet. Cook until the liquid reduces by half.
  • Add the crushed tomatoes and stir to combine. Add salt and pepper to taste and a pinch of sugar. Reduce the heat to low and simmer for 30 minutes.
  • Toward the end of the cooking process, chop up your fresh parsley and basil and add it to the sauce to taste, stirring to combine.

1 lb pizza dough, thawed
1 cup part-skim ricotta cheese, drained well
4 cups mozzarella cheese, shredded
1/2 cup parmesan cheese
1 cup pepperoni slice, cooked
2 tablespoons italian seasoning
1 teaspoon crushed red pepper flakes
1 garlic clove, minced
2 tablespoons olive oil
2 tablespoons parmesan cheese, grated, to taste
2 cups marinara sauce, to dip, heated
salt and pepper

Steps:

  • Preheat oven and pizza stone (if available) to 450 degrees Fahrenheit.
  • In a large grill plan, cook sausage until browned. Drain.
  • In a medium bowl, combine ricotta, mozzarella, garlic, seasonings, pepperoni and cooked sausage. Season to taste with salt and black pepper.
  • Roll dough out to a 15" circle on a pizza paddle or baking sheet that has been lightly dusted with cornmeal. It doesn't have to be a perfect circle.
  • Spread meat and cheese filling over 1 side of the dough. Leave at least 1-inch of the edge without filling to ensure a tight seal.
  • Lift 1 side of dough and fold over so that it meets the other side, forming a half moon, and pinch the edges together to seal, using a fork to press edges together. Remove any excess dough which isn't needed for the seal.
  • Brush with olive oil and sprinkle some parmesan cheese over top.
  • Cut a few slits in the top to allow steam to release.
  • Transfer calzone from pizza pad to pizza stone in oven.
  • Bake 10-15 minutes, until puffed up golden brown.
  • Let stand 5 minutes before serving.
  • Heat the marinara sauce in the microwave for dipping.

1 1/3 cups all-purpose flour1 garlic cloves, minced
1 teaspoon dried basil or 1 teaspoon italian seasoning
1/2 teaspoon sea salt
1/2 cup all-vegetable shortening, well-chilled (I prefer Crisco)
3 -6 tablespoons ice cold water
1 tablespoon vegetable oil (I prefer Crisco) or 1 tablespoon canola oil (I prefer Crisco)
4 ounces ground Italian sausages
1 cup Baby Spinach, lightly packed
1/4 cup mozzarella cheese, grated
1/4 cup parmesan cheese, grated
1/4 cup prepared tomato sauce

Steps:

  • CRUST: Blend flour, garlic, herbs and salt in medium bowl.
  • Cut chilled shortening into 1/2-inch cubes. Cut chilled shortening cubes into flour mixture, using a pastry blender in an up and down chopping motion, until mixture resembles coarse crumbs with some small pea-sized pieces remaining.
  • Sprinkle half the maximum recommended ice water over the flour mixture. Using a fork, stir and draw flour from bottom of bowl, to the top distributing the moisture evenly into the flour. Press chunks down to the bottom of bowl with fork. Add more water by the tablespoons until the dough is moist enough to hold together when pressed together. Shape dough into ball. Flatten ball into 1/2-inch thick round. Wrap dough in plastic wrap. Chill for 30 minutes or up to 2 days.
  • Preheat oven to 400°F Grease or line a baking sheet with parchment paper.
  • Heat oil over medium-high heat in a large skillet . Add the sausage and cook until crumbled and golden, about 5 minutes. Add the spinach, and cook until wilted. Let cool about 10 minutes. Add the cheeses. Reserve.
  • Roll out dough on a lightly flour surface to 1/4-inch thickness. Cut out 4-inch circles. You should get 8 circles. You may have to gather up leftover dough and re-roll. Place 1 teaspoons tomato sauce on one side of the circle. Top with 1 tablespoons cooled sausage mixture. Brush edges with beaten egg and crimp and seal around edges wirh a fork.
  • Place on prepared baking sheet. Brush tops with beaten egg and bake in preheated oven for 25 minutes.
  • TIPS; Filling can be made a day ahead of time and refrigerated until ready to use.

1 (11.3 ounce) can refrigerated dinner rolls, at room temperature
Cornmeal for rolling
1 pound spicy Italian sausage, removed from its casing
Olive oil, for sauteing, if necessary
1 medium onion, finely chopped
½ large yellow bell pepper, cored and seeded, cut into small dice
½ large red bell pepper, cored and seeded, cut into small dice
2 large garlic cloves, minced
1 cup grated mozzarella cheese
¼ cup grated Parmesan cheese
2 tablespoons minced fresh parsley
Olive oil, for brushing
Your favorite marinara-style pasta sauce

Steps:

  • Separate rolls onto a cornmeal-sprinkled work surface. Cover with plastic wrap and let rest while preparing filling.
  • Fry sausage in a 12-inch skillet, breaking it up into small bits with a spoon, until it loses its raw color, about 5 minutes. Depending on the amount of fat in the pan, drain or add oil to equal about 2 Tbs. Add onion and peppers; saute until tender, about 5 minutes. Stir in garlic. Transfer to a bowl. Cool to room temperature; stir in cheeses and optional parsley.
  • Adjust oven rack to center position and heat oven to 450 degrees.
  • Sprinkling with cornmeal as necessary, roll out each roll into a 7-inch circle. Spoon a scant 1/2 cup of filling just below the center line, leaving a 1-inch border along the bottom half of the dough circle. Spoon filling just below the center line of the circle of dough, leaving a border along the bottom half of the circle. With wet fingertips, moisten the bottom border. Fold dough over filling and press edges together. Thoroughly seal by using fingertips to crimp and flute the edges or by pressing with the tines of a fork. Place on a large cookie sheet lined with parchment paper. (At this point, can be frozen up to 2 weeks.)
  • Brush tops with oil. Bake until golden brown, about 16 minutes (longer if frozen). Let cool slightly and serve with warm marinara sauce.

I have wanted to put my electric skillet to use more often-this came together very well. I used recipe#51209-Pizza Hut Style Pizza Dough (bread machine)by Cullinaryjudge. Please follow those instructions if using that dough recipe.

1 lb bulk hot Italian sausage
1/4 cup fine chopped green pepper
1/2 cup chopped onion
2 cups sliced mushrooms
2 garlic cloves, minced
1/2 cup spaghetti sauce
1/2 cup ricotta cheese
2 cups shredded Italian cheese blend (parmesan, asiago, romano & aged provolone)
1/2 teaspoon black pepper
1/2 teaspoon salt

Steps:

  • Prepare pizza dough per instructions-see description.
  • In a large skillet cook hot italian sausage-break it up well.
  • Remove from skillet, add remaining ingredients except spaghetti sauce and cheese's.
  • Saute over medium heat until onions just begin to turn opaque.
  • Remove from heat-drain well.
  • In a medium bowl combine the cooked sausage, vegetables, spaghetti sauce, cheese's, pepper and salt.
  • Mix well.
  • Divide dough into 4 portions.
  • On a well floured surface roll each piece into a thin round.
  • Divide filling equally, placing each portion on one side of each dough round.
  • Fold dough over filling, pressing down lightly to remove air pockets.
  • Crimp and fold edges over to make a seal.
  • Repeat with remaining rounds.
  • Oil electric skillet with virgin olive oil.
  • Heat to 325 degrees.
  • Place two calzones in hot skillet, cover and cook 15 minutes.
  • Remove cover and carefully flip calzones.
  • Cook, uncovered for 15 minutes.
  • Remove from heat.
  • You may need to re-oil your skillet-repeat cooking procedure with remaining 2 calzones.
  • We like extra sauce to dip calzones in so I heated up 1 extra cup.
  • One Calzone with a salad filled the two of us up.
  • Prep time does NOT reflect dough prep-that depends on your bread machine.
  • Cooking time reflects 2 batches.

1 cup KRAFT Shredded Italian* Five Cheese Blend
1 Tbsp. milk
2 Tbsp. KRAFT Grated Parmesan Cheese

Steps:

  • Heat oven to 400°F.
  • Crumble sausage into large skillet sprayed with cooking spray; cook until evenly browned, stirring frequently. Drain.
  • Unroll pizza dough onto 12-inch pizza pan sprayed with cooking spray; press dough to evenly cover bottom of pan.
  • Spread ricotta onto half the dough to within 1 inch of edge; top ricotta with pasta sauce, shredded cheese and sausage. Fold dough in half to enclose filling. Press edges together to seal. Brush dough with milk; sprinkle with Parmesan. Cut slits in top to vent steam.
  • Bake 20 min. or until crust is golden brown. Cool slightly. Meanwhile, heat remaining pasta sauce as directed on label.
  • Cut calzone into slices.

8 oz bulk Italian pork sausage
1 medium onion, chopped (1/2 cup)
1 jar (4.5 oz) sliced mushrooms, drained
1 can (16 oz) pizza sauce
3 cups Original Bisquick™ mix
1/2 cup boiling water
2 tablespoons olive or vegetable oil
1 cup shredded mozzarella cheese (4 oz)
2 tablespoons shredded Parmesan cheese

Steps:

  • Heat oven to 450°F. In 10-inch skillet, cook sausage and onion over medium-high heat 5 to 7 minutes, stirring occasionally, until sausage is no longer pink; drain. Stir in mushrooms and 1/2 cup of the pizza sauce; cook until thoroughly heated.
  • In medium bowl, stir Bisquick mix, boiling water and oil until dough forms (add additional tablespoon of water if needed). Place dough on surface sprinkled with Bisquick mix; roll in Bisquick mix to coat. Shape dough into a ball; knead about 10 times or until smooth. Roll dough into 12-inch round.
  • On ungreased cookie sheet, place dough round. Top half of dough with sausage mixture to within 1 inch of edge. Sprinkle mozzarella cheese over sausage mixture. Fold dough over filling; press edge with fork to seal. Sprinkle with Parmesan cheese.
  • Bake 14 to 18 minutes or until golden brown. Remove from cookie sheet to cutting board. Cool 5 minutes before cutting into 6 wedges. Heat remaining pizza sauce; spoon over each serving.

This recipe is adapted from one published in Taste of Home magazine. It's delightful in that you can substitute, add or remove the filling ingredients to suit your particular tastes. Enjoy! Prep time doesn't include 1 hour dough rising time. My children (ages 5 & 4) LOVE this recipe - no complaints about the spinach! HOORAY!

1 (1/4 ounce) package active dry yeast
1/2 cup water (110-115 F)
3/4 cup warm milk (110-115 F)
2 tablespoons olive oil
1 1/2 teaspoons salt
1 teaspoon sugar
3 -3 1/4 cups flour (I make one of the three cups whole wheat flour)
1 lb bulk Italian sausage
10 ounces frozen chopped spinach, thawed & well drained
15 ounces low-fat small-curd cottage cheese
1/2 cup grated parmesan cheese
1 tablespoon fresh parsley, minced
1/8 teaspoon pepper
2 tablespoons cornmeal
mushroom, sliced or chopped (optional)
onion, chopped (optional)
additional olive oil or vegetable oil
1/2 teaspoon garlic salt
1 1/2 cups pizza sauce, warmed

Steps:

  • In large bowl, dissolve yeast in water& milk.
  • Add oil, salt, sugar and 2 cups of flour; beat until smooth.
  • Add enough remaining flour to form a soft dough.
  • Turn onto a floured surface& knead until smooth& elastic- approx.
  • 6-8 minutes.
  • Place in greased bowl, turning once to grease the top.
  • Cover& let rise in a warm place until doubled, about 1 hour.
  • Meanwhile, in a skillet, cook sausage until no longer pink; drain.
  • Add spinach, cheeses, parsley& pepper; mix well.
  • (mushrooms, onions, etc. can be added at this point) Punch down dough; divide into six pieces.
  • On floured surface, roll each piece into 8" circle.
  • Top each w/ 2/3 c.
  • filling.
  • Fold dough over filling; pinch to seal.
  • Place on greased baking sheets that have been sprinkled with cornmeal.
  • Brush tops lightly with oil; sprinkle with garlic salt.
  • Bake at 400 for 20-25 minutes or until golden brown.
  • Serve with pizza sauce.

1 tube (13.8 ounces) refrigerated pizza crust
1 can (8 ounces) pizza sauce
1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry
1 pound bulk Italian sausage, cooked and drained
1 jar (4-1/2 ounces) sliced mushrooms, drained
2 cups shredded part-skim mozzarella cheese

Steps:

  • Unroll pizza dough onto an ungreased baking sheet; pat into a 14x11-in. rectangle. Spread pizza sauce over 1 long side of dough to within 1/2 in. of edges. , Layer the spinach, sausage, mushrooms and cheese over sauce. Fold dough over filling; pinch seams to seal. , Bake at 400° for 30-35 minutes or until golden brown. Let stand for 10-15 minutes before slicing. Freeze option: Freeze cooled unsliced calzone in a freezer container. To use, place calzone on an ungreased baking sheet, cover with foil and reheat in a preheated 375° oven 10 minutes. Uncover; bake until heated through.
