CRISPY CAYENNE COCKTAIL CATFISH

Crispy Cayenne Cocktail Catfish image

Go south for a winter vacation without leaving your kitchen! The brightness of lime combines with just enough cayenne heat to set this twist on a southern favorite apart from the ordinary fish dinner. Put on some beach music and start cooking.

Provided by 3KillerBs

Categories     Catfish

Time 1h55m

Yield 8-10 serving(s)

Number Of Ingredients 14

2 -3 lbs catfish fillets or 2 -3 lbs catfish nuggets
2 key limes (or 1 regular lime)
1 teaspoon cayenne chili pepper flakes (aka crushed red pepper)
2 tablespoons vermouth
1/2 cup milk
1 egg
1 cup flour, divided
1 cup yellow cornmeal
1/2 teaspoon garlic powder
1/4 teaspoon chili powder
1/4 teaspoon cumin
salt and pepper
canola oil
olive oil

Steps:

  • Combine the catfish with the zest of one lime, the juice of both limes, the cayenne flakes, and the vermouth. Let marinate about 1 hour.
  • Drain catfish well.
  • Heat 1/2 an inch of oil, half olive and half canola, in a skillet on medium to medium high. (When ready a drop of water will sizzle but the oil won't be hot enough to smoke).
  • Beat egg into milk in a shallow bowl.
  • Combine 1/4 cup flour with salt and pepper to taste.
  • Combine remaining dry ingredients in a plastic bag.
  • Dip each piece of fish into the flour then into the egg/milk mixture. Shake in breading bag until well coated.
  • Fry pieces in the hot oil until the first side is browned. Do not crowd the pieces in the pan. Turn and brown the other side. Repeat until all batches are done.
  • Serve with hot sauce, additional cayenne pepper flakes, lime wedges, and lemon wedges available at the table.
  • I suggest completing the meal with baked sweet potatoes and cole slaw.
  • Note: Today's farm-raised catfish is almost never muddy-tasting, but if yours is wild-caught the lime and vermouth marinade will eliminate the problem.

THIN-CUT CATFISH WITH SPILLWAY SAUCE

Thin-Cut Catfish with Spillway Sauce image

Provided by Food Network

Categories     main-dish

Time 35m

Yield 8 servings

Number Of Ingredients 13

Oil, for frying
Three 6-ounce boneless, skinless catfish fillets
1 cup cornmeal
1 cup corn flour
1 tablespoon Cajun seasoning
2 large eggs
2 dashes hot sauce
Kosher salt and freshly ground black pepper
Spillway Sauce, recipe follows, for serving
1 cup mayonnaise
1/2 cup ketchup
1 tablespoon Cajun seasoning
1 1/2 teaspoons Worcestershire sauce

Steps:

  • Fill a large Dutch oven fitted with a deep-frying thermometer halfway with oil and heat to 360 degrees F. Line a sheet tray with paper towels and fit with a wire rack.
  • Unwrap the catfish and place on a parchment-lined quarter sheet tray. Place in the freezer for 15 minutes to chill and firm up.
  • Meanwhile, whisk together the cornmeal, corn flour and Cajun seasoning in a pie plate or casserole dish. In a second pie plate, beat together the eggs, hot sauce, some salt and pepper and 1/2 cup water.
  • Remove the fish from the freezer and use a boning knife to very carefully cut each fillet into thin pieces. (You should be able to get 4 to 5 pieces from each fillet.)
  • In batches, dredge the fish through the egg mixture and then through the cornmeal mixture, then add to the hot oil, being careful not to overcrowd. Fry, turning as needed, until crisp and golden brown, 2 to 3 minutes. Remove to the prepared wire rack. Repeat with the remaining catfish.
  • Serve the catfish with the Spillway Sauce on the side.
  • Mix together the mayonnaise, ketchup, Cajun seasoning and Worcestershire in a small bowl.

CRUNCHY CATFISH SANDWICH

Crunchy Catfish Sandwich image

Provided by Sunny Anderson

Categories     main-dish

Time 25m

Yield 4 servings

Number Of Ingredients 18

1 cup mayonnaise 1 lemon, juiced
3 teaspoons prepared horseradish
2 teaspoons hot sauce
2 tablespoons dill relish
Pinch kosher salt
Pinch freshly ground black pepper
Oil, for frying
2 eggs
2 to 3 dashes hot sauce
2 teaspoons seafood seasoning (recommended: Old Bay)
Kosher salt
1 cup cornmeal (medium ground for more texture)
1/2 cup all-purpose flour
1/2 cup cornstarch Freshly ground black pepper
4 catfish fillets, cut in 1/2, about 2 pounds
4 sourdough sandwich rolls
4 tablespoons butter, softened
4 romaine or red lettuce leaves

Steps:

  • Preheat the oven to 350 degrees F.
  • To make the Spicy Tartar Sauce: Mix all the sauce ingredients in a small bowl until well combined. Cover and refrigerate until ready to serve.
  • In a deep 12-inch pan set over medium-high heat, add enough oil so it comes 1/3 of the way up the sides. Heat the oil to 375 degrees F.
  • In a wide-mouth bowl, whisk the eggs with the hot sauce, seafood seasoning and a pinch of salt. In a small paper bag, mix together the cornmeal, flour, cornstarch, and salt and pepper, to taste. Dredge the catfish in egg mixture, then in the flour mixture. Gently shake off excess flour. Set aside and repeat with remaining flounder. Fry the fish in batches until golden, about 2 to 3 minutes each side, being careful to keep the temperature at 375 degrees F. Remove catfish to a paper towel to drain and immediately season with salt.
  • Slice the sandwich rolls in half, slather the cut sides with butter and season with salt. Arrange, cut side up, on a baking sheet and toast in the oven until lightly golden, about 8 minutes. An alternate is to put them, buttered side down, on a griddle or under a broiler, and toast until golden. Set aside.
  • To assemble sandwiches, slather the rolls with the Spicy Tartar Sauce, top with lettuce and catfish, and serve.

CAJUN COMPROMISE CATFISH

Cajun Compromise Catfish image

A fast, tasty, spicy fried fish recipe which can be adjusted to suit the cook's (or diner's) preference. I call it Cajun Compromise because the spice level is the result of a compromise between my wife and I. It can be served with tartar sauce for the timid, or hot sauce for the not-so-timid. Great for appetizers or a main dish.

Provided by NOCKO

Categories     Seafood     Fish     Catfish

Time 1h10m

Yield 4

Number Of Ingredients 10

2 pounds catfish fillets, cut into 2 inch pieces
1 cup milk, or as needed
1 egg
¼ cup all-purpose flour
¼ cup cornmeal
2 teaspoons ground black pepper
2 teaspoons ground mustard
2 tablespoons Cajun seasoning
1 dash pepper sauce (such as Frank's Red Hot®)
¼ cup oil for frying, or as needed

Steps:

  • Soak the fish pieces in milk for at least 30 minutes.
  • In a small bowl, whisk together the egg and hot pepper sauce. In a separate bowl, stir together the flour, cornmeal, pepper, mustard and Cajun seasoning. Dip fish pieces into the dry mixture, then into the egg, then back into the dry mix. Set on a plate in the refrigerator and chill for about 15 minutes. This will help the batter stick to the fish.
  • Heat more than enough oil to cover the bottom of a large heavy skillet over medium-high heat. Fry fish pieces for 3 to 4 minutes per side, or until golden brown. Depending on how much and what kind of Cajun seasoning you used, some of the breading may get darker than the rest.
  • Drain the fish on paper towels and serve with hot sauce or tartar sauce. Enjoy!

Crunchy catfish nuggets that can be served as hors d'oeuvres. These were a special hit with my 3 year old who loved the fact that she could eat them like finger food. You may want to adjust the seasoning - my daughter is used to spicy stuff! These have the great taste of fried fish without the grease.
