Steps:

  • 1. Preheat the oven to 350°F. Remove the leaves of the brussels sprouts. This is tedious work, but it can be done. You want as many leaves as possible, and you may need to keep cutting away the stem as you get deeper into the sprout.
  • 2. Place the leaves on a baking sheet and drizzle generously with olive oil, tossing to coat. Sprinkle with the sea salt. Bake, turning every 5 to 7 minutes, until browned and crunchy, almost burnt, but not burnt.

1/4 cup olive oil

Steps:

  • Preheat the oven to 400 degrees F.
  • Cut the larger Brussels sprouts into quarters; halve the smaller ones.
  • Place the Brussels sprouts in a large baking dish or on a baking sheet. Add the garlic, sprinkle with salt and pepper, and pour over the olive oil. Toss to coat. Transfer to the oven and roast for 35 minutes. Crank up the oven to 450 degrees F and roast until tender and the outer leaves are browned and crispy, another 10 minutes. Transfer to a serving dish. Steps:

  • Place a rack in the top third of the oven and preheat oven to 325 degrees F (165 degrees C). Line a baking sheet with aluminum foil.
  • Mix olive oil, Dijon mustard, sea salt, and red pepper flakes in a large bowl to make sauce.
  • Trim the stems of the Brussels sprouts to release outermost leaves, about 5 leaves from each sprout. Reserve cores to roast another time. Place leaves in the bowl of sauce; toss with your fingers until all the leaves are evenly coated. Spread leaves on the baking sheet in a single layer.

6 slices bacon, diced
1 tablespoon fresh thyme
1 teaspoon kosher salt
1/2 teaspoon pepper

Steps:

  • Bring 4 quarts of salted water to a boil in a large saucepan.
  • Remove any torn or discolored outer leaves from the spouts and then trim and cut out cores.
  • Add sprouts to the boiling water and blanch for 3-5 minutes; drain and fince with cold water until cool enough to handle. Separate sprouts into leaves and blot dry with paper towels (they can be prepared one day ahead and placed in plastic bag in the fridge).
  • In a skilled cook bacon over medium heat for 5-10 minutes or until crisp. Remove and drain on paper towels. Discard all but 1 tablespoon of the bacon drippings.
  • Reduce heat to medium low and add sprout leaves, bacon pieces, thyme, salt and pepper. Saute for 2-5 minutes, tossing gently or until heated through.

1.5 tbsp. olive oil
2 tbsp reduced sodium soy sauce
1 tbsp honey
1.5 tsp rice vinegar
1 tsp sesame oil
1 tsp Asian garlic chili paste (like sambal olek, Sriracha, adjust to heat preference)
1/2 tsp garlic powder
Salt and pepper (as needed)

Steps:

  • Preheat oven to 450. Cover a baking sheet with aluminum foil and set aside.
  • Rinse sprouts in cool water and then chop off the tough ends. Chop sprouts in half or in quarters for very large sprouts. Dry thoroughly with a towel.
  • Toss with the olive oil and season gently with salt and pepper. Remember that the sauce has soy sauce, which can be salty, so you don't want to over-salt the Brussel sprouts.
  • Place in a single layer on the pan, leaving some space between the Brussel sprouts. They shouldn't be overlapping. Roast for 20-25 minutes or until the sprouts are browned and crispy.
  • Meanwhile, add the soy sauce, honey, rice vinegar, sesame oil, sambal olek, and garlic powder to a small saucepan. Bring to a simmer and let cook for 3-4 minutes until it thickens. This happens quickly since it is a small amount of liquid.
  • Toss the hot Brussels sprouts with the sauce and serve.

2 lbs Brussels sprouts, outer leaves removed and halved
2 medium apples of choice
1/2 fresh lemon, juiced
1/2 cup pecans or walnuts
2 Tbsps maple syrup or raw honey
½ cup freshly shaved parmesan cheese

Steps:

  • Preheat your oven to 375 degrees f. and line a large baking tray with parchment paper.
  • Place your prepared sprouts on the baking tray, drizzle with oil, and season with sea salt and pepper. Give everything a good toss before carefully arranging them in a single layer.
  • Roast for 25-30 minutes, or until tender center with a browned-crisp outside.
  • Meanwhile, very thinly slice your apples and drizzle them with some fresh lemon juice to prevent apple slices from browning.
  • Once your sprouts are ready stir in the apples, pecans/walnuts, maple syrup/raw honey, and the shaved parmesan. Toss everything to combine well, then arrange in single layer again.
  • Reduce the heat of your oven to 350 degrees f.
  • Return your tray to the oven and continue to bake for 5 more minutes.

  • Remove any tough leaves and trim sprouts, then steam or boil for 10 mins until tender.
  • Tear the bread into crumbs. Heat a large frying pan and pour in the olive oil. Add the bread and fry until just crisp. Tip in the flaked almonds, garlic and lemon zest, then cook gently until everything is golden.
