BAKING POWDER BISCUITS
This is my mother's biscuit recipe. They always turn out light and fluffy, the best. I can't tell you how many of these I have made in my lifetime, but I can assure you they are always greeted with enthusiasm and my dinner guests would be disappointed if I didn't have some of these waiting for them, fresh out of the oven.

Steps:
- Sift together flour and baking powder.
- Stir in salt and sugar.
- Cut in the Crisco until the mixture resembles crumbs.
- Stir together eggs and milk.
- Make a well in the dry mixture and stir in the milk mixture with a fork.
- Stir just to moisten, then turn out onto a lightly floured board.
- Knead about 15 times, then pat lightly into a circle, about 1/2-inch thick.
- (The secret to light and fluffy biscuits is to handle the dough as little as possible) With a sharp round cutter, cut out rounds, without twisting the cutter.
- Just give it a sharp tap, then lift straight up (twisting the cutter causes the biscuits to slope over when they are baking) place on a baking sheet.
- Bake at 350°F for 15 to 20 minutes.
- Serve warm.

- Preheat oven to 450F (Give it enough time to get there, you want it hot)
- Put the flour and cold butter in a food processor. You can also do this by hand. Pulse the machine 20-25 times until the butter is incorporated and the mixture is crumbly.
- Remove the contents to a large bowl and stir in the buttermilk just until everything is moistened.
- Turn the dough out onto a lightly floured surface and bring it together gently with your hands, but don't over work the dough. Pat or roll it out to about 1 1/2 inch inch thick. Cut out 8 biscuits with a 2 1/2" biscuit cutter, reforming the dough if necessary.
- Place on a baking sheet, in cast iron skillet, or a biscuit baker, and brush lightly with buttermilk, if desired. Bake for 10 minutes or until golden and risen.
- If you like, brush the hot biscuits immediately with melted butter, and enjoy.

- Preheat oven to 475º F. Lightly coat rimmed baking sheet or cast iron skillet with vegetable shortening. Set aside.
- Add flour to a large mixing bowl. Cut in shortening with a pastry blender, two forks, or knives until well-combined. Slowly pour in buttermilk and stir gently until just combined. Do not overmix.
- Pour biscuit dough onto a floured pastry cloth, paper towels, or dough board. Gently pat or roll to about 1/2-inch thick. Cut out biscuits using about a 2-inch biscuit cutter. Place biscuits into skillet or on baking sheet pan, leaving about an inch between biscuits to allow them to rise and cook fully. Place in preheated oven and bake about 10-12 minutes. Remove from oven and serve.

BETTER BUTTERMILK BISCUITS

- In a mixing bowl, combine dry ingredients together with a fork. Cut in the shortening using a pastry blender until mixture resembles coarse crumbs. Make a well in the center and add buttermilk. Quickly fold dry ingredients into buttermilk with your hands until a sticky dough forms.
- Turn dough out onto floured surface. Gently fold the dough over itself 3 or 4 times to create layers. Roll dough out to 3/4-inch thick. Cut with a 3-inch biscuit cutter. Transfer dough rounds to a sheet pan. Gather scraps and repeat. Make a dimple in the center to help the top rise evenly. Brush with butter. Bake for 15 minutes in a preheated 400 degree oven until golden brown.

- 1. Preheat oven to 450 degrees. Get a baking stone or biscuit pan. This does not have to be greased.
- 2. Stir together flour, baking powder, baking soda, salt, and sugar. Cut in crisco with a pastry cutter until well blended. Stir in buttermilk until it forms a soft ball of dough that pulls away from the sides of the mixing bowl.
- 3. Turn dough out on floured surface or into a bread bowl dusted with a little flour. Knead gently 5-6 strokes. Do not work in too much flour. Keep dough light. Do not overwork. Roll out to a minimum of 1/2" thick. Cut biscuits with sharp cutter.
- 4. Place biscuits on baking stone or in pan, with sides just barely touching. Bake for 12-15 minutes, until browned and risen up high. Remove from oven and IMMEDIATELY cover with a clean towel so biscuits steam themselves. This makes them softer. Serve with butter, jam, honey, or sorghum.
- 5. NOTE: I just read that if you want your biscuits to be more brown on the top, brush them with a little butter or cream before baking.
