PHILLY CHEESE STEAK WRAPS
Tender juicy beef, caramelized onions and crisp green bell peppers all smothered in melted provolone cheese and wrapped in a soft flatbread make the perfect lunch or easy dinner!

Steps:
- Place steak in the freezer for 30-60 minutes. Remove from freezer and slice as thinly as possible.
- Heat a cast iron skillet (or large pan) over medium-high heat.
- Add 1 tablespoon olive oil, peppers, onion, salt & pepper and stir until browned and tender. Push off to one side.
- Add remaining olive oil, thinly sliced beef, salt & pepper. Cook about 2 minutes or until almost no pink remains. Add garlic, stir in peppers and onions and cook 1 minute more.
- Top the beef mixture with cheese and cover until melted (about 1 minute).
- Place ¼ of the mixture on each flatbread, roll and enjoy!

These sandwiches are delicious. I purchase steak that has been sliced for making stir-fry, which takes a little less time, but achieves the same results.

Steps:
- Place the beef in a large bowl. In a small bowl, mix together salt, pepper, paprika, chili powder, onion powder, garlic powder, thyme, marjoram and basil. Sprinkle over beef.
- Heat half of the oil in a skillet over medium-high heat. Saute beef to desired doneness, and remove from pan. Heat the remaining oil in the skillet, and saute the onion and green pepper.
- Preheat oven on broiler setting.
- Divide the meat between the bottoms of 4 rolls, layer with onion and green pepper, then top with sliced cheese. Place on cookie sheet, and broil until cheese is melted. Cover with tops of rolls, and serve.

- Preheat a large skillet over medium-high heat. Brush steak with oil and season with salt and pepper on both sides. Cook steak until pink just disappears in the middle, 6 to 8 minutes on each side. Transfer to a cutting board and let rest, 5 minutes.
- Meanwhile, in the same skillet, cook onions and peppers until tender, 2 to 3 minutes. Reduce heat to medium-low. Thinly slice steak across the grain and transfer back to skillet. Top with provolone and cover until cheese is melty, 2 to 3 minutes.
- Fill tortillas with steak mixture, wrap tightly, and serve.

- Mix sour cream, mayo, onion, horseradish, salt & pepper in a small bowl. Spread this mixture evenly over one side of each tortilla.
- Top each tortilla with 3 slices beef, and 2 slices cheese. Sprinkle each one with lettuce.
- Roll each tortilla tightly, and wrap each one securely in plastic wrap. Chill 8 hours.

- In a large nonstick skillet over medium heat, cook onions and mushrooms until onions are almost transparent. Stir frequently, and cover the skillet in between to retain moisture.
- Add ground beef, salt, pepper and pepper sauce. Crumble ground beef as you brown.
