1 large onion, finely chopped
1/4 cup KRAFT Lite Zesty Italian Dressing
2 lb. extra-lean ground beef
1 pkg. (6 oz.) STOVE TOP Stuffing Mix for Chicken
1 cup water
2 egg whites
3/4 cup HEINZ Tomato Ketchup, divided
1/2 cup KRAFT 2% Milk Shredded Sharp Cheddar Cheese

Steps:

  • Cook onions in dressing in skillet on medium heat 8 to 10 min. or until golden brown, stirring frequently. Cool slightly.
  • Heat oven to 375°F. Mix meat, stuffing mix, water, egg whites, 1/4 cup ketchup and onions just until blended; shape into 10x5-inch loaf in 13x9-inch baking dish sprayed with cooking spray. Cover with remaining ketchup.
  • Bake 55 min. to 1 hour or until done (160°F). Sprinkle with cheese; bake 2 min. or until melted.

2 pounds ground chuck
1 1/2 cups finely crushed butter-flavored crackers
1/2 cup chopped onion
3/4 cup ketchup, divided
2 eggs
1/2 teaspoon salt
1/2 teaspoon black pepper
3 slices bacon
1 tablespoon prepared yellow mustard
2 tablespoons brown sugar

Steps:

  • Preheat oven to 350 degrees F. Coat a rimmed baking sheet with cooking spray.
  • In a large bowl, combine beef, cracker crumbs, onion, 1/2 cup ketchup, the eggs, salt, and pepper; mix well. Form meat mixture into a loaf on baking sheet. Lay bacon over top of meatloaf.
  • Bake 1 hour.
  • Meanwhile, in a small bowl, combine mustard, brown sugar, and remaining 1/4 cup ketchup; mix well. Spread evenly over top of meatloaf. Return to oven and bake 15 more minutes, or until no longer pink in center.

MY FAMILY'S FAVORITE MEATLOAF



My Family's Favorite Meatloaf image

This meatloaf has been my creation since I was 12 years old and started cooking. I typically just throw it together without mixing and my family always enjoys it more than any others I've tried. (Except my son, who thoroughly enjoys Hawaiian meatloaf!)

455 g lean ground turkey
1/2 cup rolled oats (not instant or quick)
60 g egg white substitute
1/2 cup frozen peppers and onions
1/8 cup ketchup (I use sugar free)
2 tablespoons prepared mustard (French's here!)
salt
pepper
1 zucchini
1 yellow squash

Steps:

  • Toss all ingredients in a large bowl and mix together using either a fork or clean hands.
  • Roll up 5 sheets of tin foil, placing 3 across the bottom of the crockpot and 2 crossing the others. This gives you a handle to pick the meatloaf up out of the crock and also allows the oils to drain from the meat.
  • Form the mixture into a loaf and set in crockpot on the tinfoil "creation". Add sliced zucchini and squash along the top.
  • Cover, cook on low 8-10 hours.
  • Enjoy and come back to let me know about it! :D.
  • (Note: I use my hand and cut the yolk in 1/2 and then sub 1TBS of egg whites to make it a little lower in cholesterol.).

Good meatloaf is about as comforting as comfort food gets. Thankfully, meatloaf doesn't have to be complex to be good. It just needs to be tender (from breadcrumbs soaked in milk and gentle handling) and flavorful (from onion, garlic, and ketchup).

3 slices white sandwich bread
1/3 cup whole milk
1 1/2 pounds ground beef chuck
1/2 pound ground pork
1/2 medium onion, grated
2 garlic cloves, minced
1 large egg
1/2 cup ketchup
Coarse salt and ground pepper

Steps:

  • Preheat oven to 400 degrees. Line a baking sheet with aluminum foil or parchment paper. Place bread in food processor; pulse until fine crumbs form. Transfer to a small bowl; stir in milk. Set aside, about 10 minutes, stirring occasionally.
  • Meanwhile, in a large bowl, combine beef, pork, onion, garlic, egg, 1/4 cup ketchup, 1 1/2 teaspoons salt, and 1/4 teaspoon pepper. Add bread-milk mixture, and mix very gently with a fork (do not overmix).
  • Place meat mixture on prepared baking sheet, and form into a loaf about 9 inches long and 4 to 5 inches wide.
  • Bake, brushing twice with remaining 1/4 cup ketchup during baking, until an instant-read thermometer registers 160 degrees, 45 to 55 minutes. Let meatloaf rest 10 minutes before slicing and serving.

DAD'S MEATLOAF WITH TOMATO RELISH



Dad's Meatloaf with Tomato Relish image

Extra-virgin olive oil
1 onion, finely diced
2 garlic cloves, minced
2 bay leaves
2 red bell peppers, cored, seeded, and finely diced
2 tomatoes, halved, seeded, and finely diced
1/4 cup chopped fresh flat-leaf parsley
1 (12-ounce) bottle ketchup
1 tablespoon Worcestershire sauce
Sea salt and freshly ground black pepper
3 slices white bread, crusts removed, torn into chunks by hand
1/4 cup whole milk
1 1/2 pounds ground beef
1 pound ground pork
2 eggs
Leaves from 2 fresh thyme sprigs
Salt and freshly ground black pepper
3 to 4 bacon slices

Steps:

  • Preheat the oven to 350 degrees F.
  • Coat a skillet with a 2-count of oil and place over medium heat. Saute the onion, garlic, and bay leaves for a few minutes to create a base flavor. Throw in the red peppers and cook them for a couple of minutes to soften. Now add the tomatoes; adding them at this point lets them hold their shape and prevents them from disintegrating. Stir in the parsley, ketchup, and Worcestershire; season with salt and pepper. Simmer the relish for 5 minutes to pull all the flavors together. Remove it from the heat; you should have about 4 cups of relish.
  • Place the torn white bread in a bowl and add the milk to just barely cover, swish the bread around in the milk and let it sit while you get the rest of the ingredients for the meat loaf together.
  • This is where you get your hands dirty! In a large mixing bowl, combine the ground beef and pork with 1 1/2 cups of the tomato relish, the eggs, and thyme; season with salt and pepper. Squeeze the excess milk from the bread and add the soaked bread to the meat mixture. To test, fry a small "hamburger" patty of the meatloaf until cooked; the patty should hold together but still have a soft consistency. Taste the patty for seasoning.
  • Lightly oil a cookie sheet. Transfer the meat mixture to the center of the cookie sheet and form into a log about 9 inches long and about 4 inches wide. Coat the top of the meatloaf with another 1/2 cup of the tomato relish. Lay the bacon across the top lengthwise.
  • Bake the meatloaf for 1 to 1 1/2 hours until the bacon is crisp and the meatloaf is firm. Rotate the meat loaf while it's baking every now and then to insure that the bacon browns evenly. Remove the meatloaf from the oven and let it cool a bit before slicing. Serve with the remaining tomato relish on the side. Unbelievably moist!

3/4 cup 2% milk
2/3 cup finely crushed saltines

Dash pepper
1-1/2 pounds lean ground beef (90% lean)
1 cup ketchup
1/2 cup packed brown sugar
1 teaspoon Worcestershire sauce

Steps:

  • Preheat oven to 350°. In a large bowl, combine the first 7 ingredients. Add beef; mix lightly but thoroughly. Shape into an 8x4-in. loaf in an ungreased 15x10x1-in. baking pan., In a small bowl, combine remaining ingredients, stirring to dissolve sugar; remove 1/2 cup for sauce. Spread remaining mixture over meat loaf., Bake 60-65 minutes or until a thermometer reads 160°. Let stand 10 minutes before slicing. Serve with reserved sauce.

1/2 cup ketchup
Black pepper

Steps:

  • Preheat oven 375°F. Add all ingredients together except for ketchup and black peper. Mix together with hands.
  • Smash mixture evenly in an 8x8 square baking pan. Take black pepper and sprinkle lightly over top. Then spread ketchup evenly.
  • Bake for 25 to 30 minutes or until cooked through.

1 envelope instant onion soup mix
1 cups cracker crumbs
2 eggs
1 cup Ketchup (1/2 cup reserved)
1/2 cup water
Opt. 1 cup chopped red and/or green peppers

Steps:

  • Preheat oven to 400 degrees F. Prepare 2 meatloaf pans (I place a cookie rack in the bottom of a 9x13 cake pan and line foil over top of cookie rack and up the sides. Then I cut small holes all through the foil so the fat drains under the cookie rack and away from the meatloaf. You can even line the pan under the cookie rack, with foil to make easier cleanup)
  • In large mixing bowl, mix together all ingredients except for the reserved ketchup (I often use a little more than the recipe calls for anyway). You will have to use clean hands to mix it well. Place mixture in pan and shape into loaf.
  • Cover with foil and bake for 40 minutes. Uncover and top with reserved ketchup. Bake for 10 more minutes.

1 lb real lean ground beef
1 egg
1/2 tablespoon onion powder (powder gives stronger flavor) or 1/2 tablespoon minced onion (powder gives stronger flavor)
14 saltine crackers, crushed
1/4 cup ketchup, approx
1 teaspoon Worcestershire sauce
salt and pepper, to taste

Steps:

  • Mix all ingredients together.
  • Form into a loaf and place in a foil-lined bread pan. (There usually is about 2 inches of space on both ends between the meatloaf and the pan).
  • Making sure the top is flat to insure even cooking.
  • You can top it with extra ketchup, if desired.
  • Bake at 425°F for 45 minutes.

1 (1 ounce) envelope Lipton Onion Soup Mix (The Dry soup mix)
1/2 cup plain breadcrumbs
1 egg
1/2 cup milk
1/4 teaspoon pepper
1 (10 3/4 ounce) can tomato soup

Steps:

  • Preheat oven to 325° for a glass dish (350° for a metal loaf pan).
  • In a large bowl, crumble beef and add all ingredients except the tomato soup.
  • Mix until blended and shape meat mixture into a loaf.
  • Place meat loaf into baking dish and pour entire can of undiluted tomato soup over meatloaf (Soup will shrink as it cooks so don't worry if it seems like alot at first).
  • Bake uncovered for 1 1/2 Hours.
  • Drain off fat before removing meatloaf from dish to serving platter and let rest 5 minutes.
  • Slice and serve.
