This is a recipe I make almost every Christmas. I got it from a coworker about 20 years ago. It's a big hit with those who like almonds.

½ cup salted butter, at room temperature
⅓ cup confectioners' sugar, plus extra for dusting
1 teaspoon vanilla extract
1 teaspoon almond extract
⅛ teaspoon salt
¾ cup all-purpose flour, sifted
2 tablespoons all-purpose flour, sifted
½ cup almonds, finely chopped

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • Beat butter and confectioners' sugar in a bowl using an electric mixer until smooth and creamy. Add vanilla extract, almond extract, and salt; mix briefly to incorporate. Gradually stir 3/4 cup plus 2 tablespoons flour into the creamed butter, add almonds, and mix until dough is just combined.
  • Shape dough into tiny crescents; place on an ungreased baking sheet about 2 inches apart.
  • Bake cookies in preheated oven until edges are golden, about 15 minutes. Cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
  • Roll cookies in sifted confectioners' sugar when cooled.

  • Cream butter and add sugar, vanilla and water.
  • Sift flour and salttogether and stir into mixture. Add pecans and stir well.
  • Using portions about the size of a small walnut; roll into cresent shape.
  • Bake in slow oven, that means 325 degrees, about 20 minutes.
  • While cookies are still warm; roll in powdered sugar.

Steps:

  • Filling: Stir together the sugar and cinnamon; set aside.
  • Cookies: Cream the butter and brown sugar until well blended with an electric mixer on medium speed.
  • Add the eggs and vanilla; blend well.
  • Combine the flour, baking powder, salt, and cinnamon; add to butter mixture and blend well.
  • Turn dough out onto a sheet of waxed paper; spread into a 9x6-inch rectangle using a rubber spatula.
  • Sprinkle the cinnamon-sugar to within 1 inch from the edges.
  • Roll dough up jelly-roll style.
  • Roll in remaining cinnamon-sugar; wrap dough tightly in plastic wrap.
  • Refrigerate at least 4 hours.
  • Preheat oven to 350°F.
  • Slice dough 1/4-inch thick; place 2 inches apart onto parchment-lined cookie sheets.
  • Bake for 8 minutes or until golden on top.
  • Cool for 4 minutes on the cookie sheets, then remove to racks and cool completely.

GRANDMA'S PERFECT CRESCENT ROLLS



Grandma's Perfect Crescent Rolls image

These rolls are rich, moist, soft, buttery, and downright wholesome! You will need a machine large enough to knead a dough with 7-9 c. of bread flour, unless you cut this recipe in half. I recommend SAF instant yeast, but others will work almost as well. The dough can also be used for making Parkerhouse rolls or even to fill with a meat filling. I use a machine called a Bosch bread mixer, which can easily handle this much dough, but a large Kitchen Aid should work as well. Enjoy.

3 cups whole milk
1/4 cup sugar
1/2 cup unsalted butter (1 stick)
3 tablespoons instant yeast (see above)
3 large eggs, slightly beaten
1 tablespoon salt
7 -8 cups bread flour (or as needed)
1/2 cup butter, melted (for dipping and brushing later)

Steps:

  • Melt the butter in a medium saucepan over medium heat until completely melted. Add the milk and sugar, turn heat to very low, and bring the mixture to about 105 degrees, or until the mixture is warm to the touch.
  • Add the mixture to a mixing bowl and add the beaten egg. Immediately add the yeast and let stand until mixture is foamy, about 5 minutes. If using instant yeast, you may simply add the yeast with the flour without proofing first.
  • While yeast activates, measure 7 cups flour in large mixing bowl and add the salt. When yeast mixture is ready, add the flour and knead, adding more flour as necessary, until you have a soft, slightly sticky dough. Knead 6 to 7 minutes, then place in large bowl, cover, and let stand until dough has doubled in size.
  • Divide dough into quarters, then shape the first piece into a round. Roll out dough into a 10-inch circle and cut dough into 8 to 10 triangles, depending on how large you want your rolls. Dip each triangle into the melted butter so that most, but not all, of the dough is coated with butter. Allow the excess to run off, then roll from short side oposite the point into a crescent shape. Place on cookie sheets lined with parchment so the rolls are almost touching. Repeat with the remaining sections of dough until all the rolls have been rolled.
  • Let the rolls rise in a warm place until very puffy, though not necessarily doubled in size. Preheat the oven to 350 degrees and bake rolls for 12 to 15 minutes, or until golden brown. Remove from oven, let stand 5 minutes, then brush with additional melted butter and sprinkle lightly with kosher or sea salt. Serve warm or at room temperature.
  • This dough can also be made into parkerhouse rolls or any other rolls you wish.

This apricot crescent cookie recipe was given to me by my cousin back in the late 70's. It's been a must-have for the holidays ever since, and a big hit whenever I serve them at parties.

1 cup unsalted butter, softened
1 (8 ounce) package cream cheese, softened
1 tablespoon sour cream
2 cups all-purpose flour
½ cup powdered sugar
¼ teaspoon salt
½ cup apricot preserves
2 tablespoons powdered sugar, or to taste

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Blend butter, cream cheese, and sour cream together in a large bowl with an electric mixer. Stir in flour, 1/2 cup powdered sugar, and salt until well blended.
  • Wrap dough in waxed paper and chill until firm enough to roll, at least 3 hours, or overnight.
  • Divide dough into thirds. Keep dough in the refrigerator while working on one portion at a time. Roll each portion into a 12 1/2x10-inch rectangle. Cut into 2 1/2-inch squares using a fluted pastry wheel.
  • Place a dot, about 1/4 teaspoon, of preserves in the center of each square. Bring up two diagonal corners to the center, pinching together to seal, or secure with a toothpick. Place on ungreased cookie sheets.
  • Bake in the preheated oven until firm, but not brown, about 12 minutes. Cool on the baking sheet for 1 minute before removing to a wire rack to cool, 8 to 10 minutes more. Sift remaining powdered sugar over the cooled cookies.

1 cup butter
3 egg yolks

Yield Makes 3 dozen 3-inch cookies

1/2 cup (1 stick) unsalted butter, room temperature
2 tablespoons lard, room temperature
1/2 cup sugar
2 large egg yolks
Zest and juice of 1 lemon
2 cups all-purpose flour, plus more for dusting
6 tablespoons raspberry jam

Steps:

  • Put butter, lard, and sugar in the bowl of an electric mixer fitted with the paddle attachment. Mix on medium speed until pale and fluffy. Mix in egg yolks, lemon zest, and lemon juice. Reduce speed to low. Gradually mix in flour. Flatten dough into a disk; wrap in plastic wrap. Refrigerate until firm, at least 1 hour or overnight.
  • Preheat oven to 325 degrees with racks in upper and lower thirds. Let disk of dough stand at room temperature just until soft enough to roll, about 10 minutes. Roll out dough on a lightly floured surface to 1/4 inch thick. Cut out cookies with a 3-inch crescent-shaped cookie cutter. Transfer cut cookies to parchment-lined baking sheets and chill until firm, about 20 minutes. Reroll scraps; cut shapes.
  • Bake, switching positions of sheets and rotating halfway through, until edges turn golden, 12 to 15 minutes. Cool completely on wire racks.
  • Spread flat side of half the cookies with 1 teaspoon raspberry jam each; sandwich with remaining cookies.

1 (8 ounce) can crescent roll dough
2/3 cup brown sugar
2/3 cup butter
1 (6 -8 ounce) bag walnuts, chopped
12 ounces semi-sweet chocolate chips

Steps:

  • Preheat oven to 375.
  • Use 10 x 15 Jelly roll pan, sprayed with PAM.
  • Spread crescent roll dough over pan.
  • Bring butter and brown sugar to a boil for one minute, to make caramel.
  • Spread caramel mixture over dough.
  • Sprinkle walnuts over entire pan.
  • Bake 15 - 18 minutes until dough is golden brown and caramel is bubbly.
  • Remove from oven and pour chocolate chips over pan.
  • Spread some of the chips out, but leave others whole, for a nice presentation.
  • Allow to cool before cutting into bars.
