GREAT-GRANDMOTHER'S PANCAKE/WAFFLE BATTER
Handed down in my family for generations. It's meant to be refrigerated overnight. However, if you must have your pancakes *now*, measure the baking powder in slightly rounded teaspoons instead of leveled off. Let the batter sit on the counter at room temp until it starts bubbling, to be sure that the necessary chemical reaction is taking place. It's very easy to 'draw' simple shapes as you pour the batter. Children adore hearts, stars, their initials, etc. Addendum 4/21/09: I will tell you quite honestly that I've been rather shocked by the recent spate of negative reviews. Frankly, I'm lost. All I can figure out is that those who hated them must have been eating them plain. And in that case, I can understand why they disliked them. These pancakes are meant to be smothered in butter and saturated with syrup. Should you choose to eat them 'naked', all bets are off. :)

Steps:
- Mix dry ingredients well.
- Add wet ingredients one at a time, in order listed, stirring well after each addition.
- Mixture will probably still be a little lumpy-- as long as flour is fully incorporated, this is not a problem.
- Cover batter and refrigerate overnight.
- Preheat ungreased electric skillet or griddle to 400 degrees.
- Spoon pancake batter into skillet.
- (We like them'silver dollar' size-- about 2 tablespoons of batter).
- Cook until bubbles on the top disappear and bottom is nicely-browned and can be lifted easily with a spatula (approximately 3 minutes).
- Flip, and cook on other side until done.
- The batter is also wonderful for waffles-- just follow manufacturer's instructions regarding the setting to use, the volume your waffle iron will hold, etc.
- Serve hot, with butter and syrup (or sugar, or powdered sugar, or molasses, or sorghum, or fruit or whatever turns your tastebuds on).

GRANDMA B'S SUPER WAFFLES
This was my grandma's favorite waffle recipe. It has become a family favorite enjoyed on special occasions not only by her grandchildren but great-great grandchildren as well. The clipping is yellow with age clipped I suspect from the local daily paper many many years ago.

- note: if you do not have sour milk or buttermilk measure 2 tablespoons vinegar into your 2-cup measuring cup and fill to the two-cup mark with sweet milk and let it stand while you prepare other ingredients.
- Sift together: 2 cups all-purpose flour 3 teaspoons baking powder 1 teaspoon baking soda 1 teaspoon salt.
- Combine: 2 cups sour milk or butter milk 4 eggs well beaten Add the milk and eggs to dry ingredients,beat until smooth with a hand mixer or electric mixer on high speed.
- Stir in 3/4 cup melted margarine or salad oil.
- Bake in preheated waffle iron until crisp and golden. For large maker 2 cups for small maker 1 cup batter.
- Serve with your favorite toppings.
GRANDMA JOYCE'S FAMOUS WAFFLES
My grandmother makes the greatest waffles I've ever had - and I think a lot of the flavor has to do with her special touch, knowing exactly how thin the batter should be. This is the recipe she gave me, and it is really tasty, but be wary that the batter s-h-o-u-l-d be kind of thin (like thin pancake batter). I sometimes have to use twice the amount of liquid because it is very dry where I live and humid where she's from, so feel free to thin the batter to your liking with water. Don't worry - you won't mess these delicious, buttery waffles up! Serve with butter and homemade syrup (recipe below).

Steps:
- Sift together flour, baking powder, and salt.
- In a separate bowl, mix together eggs and milk, then stir in melted shortening (you may substitute oil or butter but the resultant texture won't be quite as good!).
- Pour into dry ingredients and mix well.
- *Batter needs to be somewhat thin. Add more water if necessary.
- Waffle iron has to be good and hot before pouring in the batter. Waffles are done when steam stops (if the waffle iron is hot enough, you should be able to hear the waffles steam. You may also see steam around the edges of it. Be careful!).
- Grandma's Famous Syrup!: In a saucepan, bring to a boil the following ingredients: 2 cups white sugar, 2/3 cup water, pinch of salt, 1 Tbs. white corn syrup. Simmer about 5 minutes, then add 1 Tbs. Maple flavoring.

- In a separate bowl beat egg YOLKS and then add milk and butter.
- Combine dry mixture with egg+milk+butter mixture. Beat until smooth.
- Beat egg whites until stiff, but not dry.Slowly add sugar, beating constantly.
- Mix 1/3 of beaten whites with batter then fold remaining whites in carefully.
- Pour around 3/4 cup of batter in waffle iron.

This is a recipe that I got from my grandmother who in turn got it from her mother. GG Blanche was part of a card- playing group and whenever she hosted would make these waffles for the group she played with. Doubles and freezes wonderfully.

Steps:
- Using whisk or whisk attachment for mixer, beat egg whites until they form stiff, white peaks and set aside.
- Shift together all dry ingredients.
- In separate bowl beat egg yolks and add milk.
- Using paddle attachment for mix or by hand, mix together egg whites, dry ingredients and yolk/milk mixture.
- Once completely mixed, cook in waffle iron per manufacturer's directions.
