CZECH CREPES
A Czech interpretation of the crepe. Slightly thicker than a French-style crepe, so they tend to be a little more filling. My family occasionally had these for 'brinner' (breakfast-for-dinner), but they make a great dessert too. In Czech, these are called 'palacinky.'

Steps:
- Combine flour, milk, eggs, sugar, and salt together in a large mixing bowl. Beat using an electric mixer, adding more milk if needed, until smooth and thinner than a cake batter. Whisk in butter.
- Heat oil over medium heat in a heavy skillet. Pour a large ladleful of batter into the middle of the pan; swirl around skillet to coat the bottom of the pan. Cook until underside of crepe is golden brown, 1 to 2 minutes. Run a spatula around the edge of the skillet to loosen crepe; flip crepe and cook until the other side has turned light brown, about 1 minute more. Repeat with remaining batter.
- Lay crepes flat and coat with strawberries, yogurt, strawberry jam, honey, and cinnamon sugar. Roll crepes into logs and serve with whipped cream.

CREPES
This French delicacy is extremely versatile, as it can be filled with virtually anything -- fruits, pudding, mousse for desserts as well as vegetables and meats for dinner. No need to add more oil each time unless the pan begins to stick. Freeze extra crepes for later use.

- In a blender combine eggs, milk, flour, salt and oil. Process until smooth. Cover and refrigerate 1 hour.
- Heat a skillet over medium-high heat and brush with oil. Pour 1/4 cup of crepe batter into pan, tilting to completely coat the surface of the pan. Cook 2 to 5 minutes, turning once, until golden. Repeat with remaining batter.

BANANA GINGER CREPES WITH YOGURT
This is a great "do most of the work ahead of time" recipe. I like to have crepes ready in the freezer for a quick tea time sweet or after Dinner dessert.The combination of ginger, banana & yogurt will keep your guests guessing. The vanilla is optional or you may like some cinnamon in the filling.

Steps:
- Crepes: In your blender or food processor beat the eggs until creamy.
- Add sugar; beat.
- Add milk; beat.
- Slowly add flour and beat until very smooth.
- Wipe a non stick 12-inch skillet with a bit of butter or margarine.
- Pour in enough batter to form a thin layer, tilt the pan to spread it evenly over the bottom.
- Your layer should not be thicker than an 1/8-inch.
- Cook over medium heat, when the bottom is golden flip and cook for another minute Place on a place (light side up) and cover with a piece of wax paper.
- Continue to cook all the crepes.
- Cover the crepes with plastic wrap.
- You may now freeze them for later use or have them ready for the last minute filling and serving.
- Filling: Gently mix all the ingredients.
- Place a crepe on a serving plate (light side up) and spoon on a generous amount of the filling (about 1/4 cup it's up to you).
- Flip up the bottom of the crepe and fold in the sides.
- Sprinkle with pine nuts and if you wish add a sprinkle of confectioners sugar. Allow 2 crepes per serving.
- Serve.
HEALTHY CREPES
A crepe recipe a friend gave me with healthier ingredients. Dress crepes as you wish. I'm a huge fan of FF plain yogurt with jam or nutella with bananas.

- Mix dry ingredients in large bowl.
- Stir in wet ingredients and mix until smooth.
- Preheat pan on med. heat on stove.
- For each crepe, lightly spray pan and pour 1/4 cup of batter into pan. Rotate pan so that crepe is thin and even and flip once crepe is golden brown, depending on your preference. When other side is also golden brown, your crepe is done.

- Place all of your ingredients for the crepes batter into your blender in the order they are listed: 1/2 cup water, 1 cup milk, 4 eggs, 4 Tbsp melted butter, 1 cup flour, 2 Tbsp sugar and a pinch of salt. Blend together for 1 minute or until smooth and well combined.
- Melt a small dot of butter in a good non-stick skillet over medium heat. Add about 3 Tbsp of crepes batter and swirl the pan right away to distribute the batter evenly and form a thin crepe. Cook until golden on the first side (about 1 min) then rotate and cook another 15 seconds on the second side. Repeat with the remaining batter.
- In the bowl of your mixer, cream together 6 oz cream cheese and 1/3 cup granulated sugar. Mix in 1 cup Greek Yogurt and beat on medium/high speed with the whisk attachment, or until smooth and creamy. Set aside until ready to use. Refrigerate if not using right away.
- Spread a thin layer of Greek Yogurt cream over the top of your crepe and roll the crepe or fold each crepe into quarters with the cream on the inside. Top with apricot raspberry sauce and serve with fresh berries.

- Lightly mist an 8-inch skillet with cooking spray and bring it over medium heat. Pour 1/8 cup (2 tablespoons) of the batter into the skillet and lift and tilt the skillet to allow the batter to coat the bottom in a thin layer. Cook for about a minute until the underside is golden. Flip the crepe and cook for another 15-30 seconds and then transfer to a wire rack. Repeat with the remaining batter to make 8 crepes.
- Combine the yogurt, honey, and vanilla in a bowl and stir until well mixed. Spread a tablespoon of yogurt mixture across half of the surface of each crepe (you’ll leave the other half care to fold over the top once filled). Top the yogurt with ¼ cup of berries and fold the bare side over top of the filling. Repeat with the remaining crepes you plain to serve/consume (do not fill any crepes you’ll be storing as leftovers, just store the crepes, yogurt filling and berries separately in the fridge and assemble as needed). Each serving is two filled crepes.
