Time 1h15m

Yield Makes 12 (8-inch) crepes

Number Of Ingredients 6

1 cup unbleached all-purpose flour
1 tablespoon granulated sugar
1/4 teaspoon kosher salt
1 1/2 cups whole milk, room temperature
4 large eggs, room temperature
3 tablespoons unsalted butter, melted, plus more for brushing

Steps:

  • In a blender, puree flour, sugar, salt, milk, eggs, and butter until smooth, about 30 seconds. Refrigerate for 30 minutes or up to 1 day; stir for a few seconds before using.
  • Heat an 8-inch nonstick skillet over medium. Lightly coat with butter. Quickly pour 1/4 cup batter into center of skillet, tilting and swirling pan until batter evenly coats bottom. Cook until crepe is golden in places on bottom and edges begin to lift from pan, 1 to 1 1/2 minutes. Lift one edge of crepe with an offset spatula, then use your fingers to gently flip crepe. Cook on second side until just set and golden in places on bottom, about 45 seconds. Slide crepe onto a paper towel-lined plate.
  • Repeat with remaining batter, coating pan with more butter as needed, and stacking crepes directly on top of one another. Let cool to room temperature before using, wrapping in plastic wrap and refrigerating up to 5 days, or freezing up to 1 month.

CREPES

Go French with Alton Brown's foolproof Crepes recipe from Good Eats on Food Network. Add veggies for a savory version; use chocolate and berries for dessert.

Provided by Alton Brown

Categories     dessert

Time 1h25m

Yield 17 to 22 crepes

Number Of Ingredients 6

2 large eggs
3/4 cup milk
1/2 cup water
1 cup flour
3 tablespoons melted butter
Butter, for coating the pan

Steps:

  • In a blender, combine all of the ingredients and pulse for 10 seconds. Place the crepe batter in the refrigerator for 1 hour. This allows the bubbles to subside so the crepes will be less likely to tear during cooking. The batter will keep for up to 48 hours.
  • Heat a small non-stick pan. Add butter to coat. Pour 1 ounce of batter into the center of the pan and swirl to spread evenly. Cook for 30 seconds and flip. Cook for another 10 seconds and remove to the cutting board. Lay them out flat so they can cool. Continue until all batter is gone. After they have cooled you can stack them and store in sealable plastic bags in the refrigerator for several days or in the freezer for up to two months. When using frozen crepes, thaw on a rack before gently peeling apart.

BREAKFAST CREPES

Breakfast Crepes image

When she was in her early 20s, my mother worked with a Frenchwoman named Jackie. One day, my mother mentioned that she was looking forward to trying a crêpe recipe that she had found. "Only a French person can teach you how to make crêpes,"

Yield Makes approximately 12-15 crêpes

Number Of Ingredients 13

1 1/2 cups whole milk
3 large eggs
3 tablespoons sugar
1 teaspoon salt
Scant 5 tablespoons unsalted butter, melted
1/2 cup brandy
1 teaspoon vanilla extract
1 cup all-purpose flour
Additional butter for cooking
Additional sugar or clear jelly such as apple or apricot for serving
Special equipment:
Iron skillet or crêpe pan
Flexible metal or plastic spatula

Steps:

  • In a blender, combine milk and eggs. Mix on medium-high speed until foamy, about 10 seconds. Turn blender to low speed and remove feed top. With blender going, add sugar and salt. Replace feed top and blend on high speed for a few seconds, then turn blender back to low. In the same manner, add butter, brandy, and vanilla, replacing feed top and blending for several seconds after each addition. Turn blender off. Add flour all at once and blend until just combined.
  • Place crêpe pan over moderately high heat. With flexible spatula, spread a tiny amount of butter in pan (an alternative method is to brush the pan with melted butter using a pastry brush) and heat until butter just begins to smoke. Pour 1/4 to 1/3 cup batter into the pan. As you pour, quickly tilt the pan in all directions to spread a thin layer of batter across the bottom. Pour in just enough batter to cover the pan.
  • Cook crêpe over moderately high heat until bubbles just begin to form on the exposed surface, about one to two minutes. Lift up the edge to check the cooking process - if the crêpe starts to burn before it is cooked through, turn down the heat. If it is not nicely browned after two minutes, turn up the heat.
  • When underside of crêpe is browned, flip and cook another minute or less, until other side is browned. Remove from pan and keep warm in the oven, loosely covered with foil.
  • Grease pan with a very small amount of butter and repeat process. Continue until all batter is used, stacking cooked crêpes on a plate in the oven. To serve, sprinkle each crêpe with sugar or spread with jelly and fold or roll up.

ORIGINAL FRENCH CRêPES SUZETTE

Original French Crêpes Suzette image

This easy crêpes Suzette recipe features orange crêpes with a buttery Grand Marnier orange sauce. This can be eaten for dessert or breakfast.

Provided by Rebecca Franklin

Categories     Dessert

Time 45m

Yield 8

Number Of Ingredients 15

For the Crêpes:
1 cup all-purpose flour
1/2 cup milk
1/2 cup less 1 tablespoon water
2 eggs
2 tablespoons butter ( melted )
2 teaspoons orange juice
1 1/2 teaspoons orange zest
1/4 teaspoon salt
1 tablespoon butter (for cooking)
For the Orange Syrup:
16 tablespoons butter (divided)
4 tablespoons granulated sugar (divided)
4 ounces Grand Marnier (divided)
Topping: vanilla ice cream

Steps:

  • Gather the ingredients.
  • In a big bowl, vigorously whisk the flour, milk, water, eggs, 2 tablespoons of melted butter, orange juice, orange zest, and salt until the batter is completely smooth. Allow the batter to rest in the refrigerator for at least 20 minutes before making the crêpes.
  • Use some of the remaining melted butter to grease a crêpe pan , large skillet, or nonstick skillet. Heat up over low-medium heat.
  • Add 3 tablespoons of batter to the pan and swirl it until the bottom of the pan is covered with batter.
  • Cook the crêpe for 1 minute, or until the crêpe is slightly moist on top and golden underneath.
  • Loosen the edges of the crêpe, slide a spatula under it, and then gently flip it. If you don't have a spatula, use your fingers, a fork, or carefully flip it in the air using just the pan.
  • Cook for 1 minute and transfer the cooked crêpe to a plate to keep warm. Repeat the process with the remaining batter, lightly greasing the pan with melted butter every time. Set aside.
  • In a large skillet set over medium heat, melt half of the butter until it foams.
  • Remove the skillet from the heat and sprinkle half of the sugar over the melted butter.
  • Carefully add half of the orange liqueur. The mixture will ignite.
  • When the flame goes out, add each crêpe to the pan to coat both sides in the orange syrup.
  • Fold the crêpes into quarters or roll them up.
  • Melt the remaining butter in the same skillet, remove it from the heat, and add the remaining sugar and Grand Marnier.
  • For serving, place 1 or 2 crêpes per person on a plate, top with a scoop of ice cream, and drizzle with orange syrup. Serve immediately.
  • Enjoy.

HOW TO SET UP A CREPE BAR

How to Set Up a Crepe Bar image

Are you searching for an impressive Mother's Day brunch idea? Well, stop right here.

Categories     breakfast     main dish

Time 1h15m

Yield 6 servings

Number Of Ingredients 8

2/3 c. All-purpose Flour
1/8 tsp. Salt
1 1/2 tsp. Pure Vanilla Extract
4 whole Large Eggs
2 whole Large Egg Yolks
1 1/2 c. Whole Milk
2 tsp. Butter, Melted
Extra Butter, For Frying The Crepes

Steps:

  • For the crepe batter:In a large bowl, whisk flour and salt. Whisk in vanilla, eggs and egg yolks until smooth. Gradually pour in milk while whisking, and whisk until well mixed. Whisk in melted butter.Cover and refrigerate for at least 30 minutes, and up to 48 hours. To fry the crepes:Preheat oven to 200ºF (95ºC). Line an oven-proof dish with a large piece of parchment paper. Remove batter from fridge and give it a gentle whisk.Heat an 8-inch cast iron skillet over medium-low heat. Add a small amount of butter to the pan, let it melt, and swirl it to cover the bottom of the pan. Pour a small amount of the batter into the middle of the pan-a small ladle works really well for this job. Immediately tilt the pan to swirl the batter so it evenly covers the bottom of the pan. Cook until the crepe begins to get some color, about 1-3 minutes. Using an offset spatula, loosen the edges of the crepe, lift it, and then use your hands to flip it (be careful not to burn yourself!). Cook until the second side begins to get some color as well, about a minute.Transfer the crepe to the prepared dish, cover with parchment paper, and put in the oven to keep warm.Repeat with remaining crepe batter.Note: If you don't plan to serve the crepes immediately, don't keep them warm in the oven. Instead just keep them in a stack on a plate next to the stove and store in a resealable baggy in the refrigerator once they cool. Reheat in an oven-proof dish, wrapped in parchment paper, in a 200ºF oven for about 20 minutes.

CLASSIC CRêPES

Classic crêpes image

This basic batter recipe for crêpes and pancakes is a versatile foundation for either sweet or savoury fillings

Provided by Good Food team

Categories     Dessert

Time 1h

Yield Makes 12

Number Of Ingredients 4

140g plain flour
200ml whole milk
2 eggs
25g unsalted butter, melted, plus a little extra for greasing

Steps:

  • Sift the flour with a pinch of salt into a medium-size bowl and make a well in the middle. Mix the milk and 100ml of water together. Break the eggs into the well and start whisking slowly. Add the milk and water in a steady stream, whisking constantly and gradually incorporating the flour as you do so.
  • Whisk until the batter is smooth and all the flour has been incorporated. Set the batter aside to rest for 30 mins, then whisk the melted butter into the batter.
  • Heat the pan over a medium heat. Very lightly grease the pan with melted butter. Using a ladle, pour roughly 2 tbsp of batter into the pan and swirl it around so the bottom of the pan is evenly coated. You want to use just enough batter to make a delicate, lacy pancake. Cook the pancake for about 45 secs on one side until golden and then using a palette knife or fish slice, flip the pancake over and cook the other side for about 30 secs until it freckles.
  • Slide the pancake out of the pan and either serve immediately or stack on a plate with baking parchment in between. Continue until all the batter is used up.

HOW TO MAKE CREPES: 10 THINGS YOU NEED TO MASTER THIS ...

From chatelaine.com
Estimated Reading Time 5 mins
  • A basic crepe batter. The batter consists of five simple ingredients: eggs, milk, flour, melted butter and salt. You could whisk the ingredients together by hand, however, for the silkiest batter, a blender is recommended.
  • 30 minutes of resting time. Resting the batter allows the flour to fully absorb the liquid and gives the gluten a chance to relax. While it’s not the end of the world if you skip this step, it is the secret to the most delicate, melt-in-your-mouth crepes.
  • Crepe pan vs. frying pan. A well-seasoned crepe pan is ideal for cooking crepes because the short sides make them easy to flip, while the heavy bottom ensures consistent heat and even cooking.
  • Even, medium heat. Set your heat to medium and let the pan get hot (but not too hot). You might even need to adjust the heat to medium-low as the cooking continues.
  • Fat. Butter is ideal—it will keep the crepes from sticking and add amazing flavour. Use a pastry brush or paper towel to coat the pan very lightly with melted butter.
  • Measure out the portions. For the thin, lacy crepes of your dreams, add only 2 to 3 tbsp of batter to the centre of a standard seven to eight inch pan.
  • The proper technique. Lift the pan from the heat and tilt your wrist so that the batter pours to one side, then swirl it around so it coats the whole pan bottom evenly.
  • Use a rubber spatula. When the crepe looks dry on top and it releases from the pan (this usually takes 1 to 2 minutes), it’s ready to flip. Loosen the edges with a rubber spatula.
  • A clean towel. Stack crepes on a plate or baking sheet and cover with a clean kitchen towel until the whole batch is cooked. They’ll stay quite warm; crepes don’t need to be piping hot when they’re filled.
  • Crepe fillings and add-ons. They can be as simple as your favourite jam with a dusting of icing sugar on top, as elegant as a seafood-rich lobster, shrimp and gruyere main course, or as elaborate as these magnificent crepe cakes.

  • Melt 3 Tablespoons of butter in the microwave or on the stove. Cool for about 5 minutes before using in the next step. The remaining butter is for the skillet.
  • Combine the cooled melted butter, flour, sugar, salt, milk, water, eggs, and vanilla to a blender or large food processor. If you don’t have a blender or food processor, use a large mixing bowl and whisk by hand. Blend on medium-high speed for 20-30 seconds until everything is combined. The mixture will be silky smooth and the consistency of cream. Cover the blender tightly or pour into a medium bowl, cover tightly, and chill in the refrigerator for 30-60 minutes and up to 1 day. (After refrigerating, if the batter looks separated, give it a quick stir before cooking in the next step.)
  • Use the remaining butter for greasing the pan between each crepe. Place an 8-inch skillet over medium heat and generously grease it with some of the reserved butter. If you don’t have a skillet this size, use a larger one but make sure you keep the crepes thin. Once the skillet is hot, pour 3-4 Tablespoons (closer to 3 is best) of batter into the center of the pan. Tilt/twirl the pan so the batter stretches as far as it will go. The thinner the crepe, the better the texture. Cook for 1-2 minutes, then flip as soon as the bottom is set. Don’t wait too long to flip crepes or else they will taste rubbery. Cook the other side for 30 seconds until set. Transfer the cooked crepe to a large plate and repeat with the remaining batter, making sure to butter the pan between each crepe. If desired, separate each crepe with parchment paper so they do not stick together. Though, if using enough butter in your pan, the crepes won’t stick.
