1 pound ground beef
1/4 cup chopped onion
1 can (16 ounces) refried beans
1 can (16 ounces) mild chili beans, undrained
1 can (14-1/2 ounces) Mexican stewed tomatoes, drained
1 cup salsa
1 can (4 ounces) chopped green chiles
1 envelope reduced-sodium taco seasoning
1 teaspoon dried oregano
1 teaspoon ground cumin
1/4 teaspoon garlic powder
1-1/4 cups shredded Monterey Jack cheese
1-1/4 cups shredded part-skim mozzarella cheese
3/4 cup 4% cottage cheese
1-1/4 cups sour cream, divided
9 lasagna noodles, cooked, rinsed and drained

Steps:

  • In a Dutch oven, cook beef and onion over medium heat until meat is no longer pink; drain. Stir in the beans, tomatoes, salsa, chilies and seasonings. , In a large bowl, combine Monterey Jack and mozzarella cheeses; set aside 1 cup. Stir cottage cheese and 3/4 cup sour cream into remaining cheese mixture. , Spread 1 cup meat sauce into a greased 13x9-in. baking dish. Layer with three noodles, and a third of the cottage cheese mixture and meat sauce. Repeat layers twice (dish will be full). , Cover and bake at 350° for 1 hour. Uncover; spread with remaining sour cream. Sprinkle with reserved cheeses. Bake 10-12 minutes longer or until cheese is melted. Let stand for 10 minutes before serving.

1 (1 1/4 ounce) package taco seasoning
1 (11 ounce) can mexicorn, yellow corn with red and green peppers, drained
1/2 cup water
1 (8 ounce) container soft chive & onion cream cheese
3 cups shredded monterey jack and cheddar cheese blend, divided
4 1/2 cups salsa
9 no-boil lasagna noodles
sour cream
chopped fresh cilantro

Steps:

  • Cook ground beef in a large skillet over medium-high heat, stirring until it crumbles and is no longer pink; drain and return to skillet.
  • Stir in taco seasoning, corn, and 1/2 cup water.
  • Cook, uncovered, stirring occasionally, 5 minutes or until thickened.
  • Add cream cheese, stirring until melted.
  • Remove from heat, and stir in 1 1/2 cups Cheddar-Monterey Jack cheese.
  • Spread 1 cup salsa evenly in a lightly greased 13- x 9-inch baking dish.
  • Layer with 3 lasagna noodles (noodles should not touch each other or sides of dish), 2 cups ground beef mixture, and 3/4 cup salsa.
  • Repeat layers using 3 lasagna noodles, remaining ground beef mixture, and 3/4 cup salsa.
  • Top with remaining 3 noodles and 2 cups salsa, covering noodles completely.
  • Sprinkle evenly with remaining 1 1/2 cups Cheddar-Monterey Jack cheese.
  • Bake, covered, at 375° for 30 minutes.
  • Uncover and bake 10 to 15 more minutes or until cheese is melted and edges are lightly browned.
  • Let stand 5 minutes.
  • Serve with desired toppings.

1 1/2 pounds lean ground beef
1 yellow onion (chopped)
1/4 cup flour
3 tablespoons chili powder (NOT cayenne pepper (see notes))
1 tsp EACH ground cumin, garlic powder, ground coriander, salt
1/2 tsp EACH smoked paprika, dried oregano
1/4 teaspoon cayenne pepper (will not make it spicy)
1/3 cup tomato paste
4-6 garlic cloves (minced)
3 1/2 cups reduced sodium chicken broth
1 14.5 oz. can fire roasted diced tomatoes, (with juices)
1 4 oz. can mild chopped green chiles
1 teaspoon unsweetened cocoa powder
1 teaspoon sugar
a pinch of cinnamon
1 15 oz. can pinto beans, rinsed and drained (may sub black beans )
1 1/2 cup frozen sweet corn (no need to thaw)
1 6 oz. can chopped black olives (drained)
1/2 tablespoon apple cider vinegar
15 regular lasagna noodles (NOT no boil)
2 cups freshly grated Monterrey Jack cheese
2 cups freshly grated sharp cheddar cheese
1 cup sour cream or Greek yogurt
8 oz. Cream Cheese (softened)
1/2 cup mild salsa verde (I like Herdez)
1/4 teaspoon salt

Steps:

  • SOAK NOODLES: Place lasagna noodles in the bottom of a long pan. Pour hot tap water over the noodles until they are submerged. Let them soak while you prep the filling - at least 30 minutes. Agitate the noodles with your hands occasionally to prevent them from sticking together.
  • PREP: Preheat oven to 350 degrees F. Lightly grease a deep 9X13-inch pan; set aside. Whisk together the flour and all Meat Filling seasonings (through cayenne pepper); set aside.
  • COOK BEEF: Brown beef and onions in a Dutch oven or very large skillet until almost cooked through. Sprinkle in flour/seasonings mixture and cook for two minutes. Reduce the heat to low and stir in the tomato paste and garlic and cook for one minute.
  • FILLING INGREDIENTS: Stir in chicken broth, diced tomatoes, green chiles, cocoa powder, sugar and cinnamon. Bring the sauce to a simmer and continue to simmer, stirring often, until thickened, 10-15 minutes. After the sauce has thickened, stir in beans, corn, olives and apple cider vinegar then remove from heat.
  • CREAMY FILLING: Meanwhile, whisk all of the Creamy Filling ingredients together in a medium bowl, set aside. Combine cheeses in a separate bowl; set aside.
  • ASSEMBLE: Spread 1 cup of meat sauce in the bottom of the prepared pan (layer will be thin). Place 4 noodles lengthwise and part of a 5th noodle on top to cover. Spread ¾ cup Cream Filling evenly over top followed 1 cup combined cheeses. Repeat layers using two cups meat mixture, 4+ noodles, 3/4 Creamy Filling and 1 cup cheeses two more times for a total of 3 complete layers. To finish, top with remaining meat sauce followed by remaining cheese.
  • BAKE: Cover the pan with foil and bake at 350 degrees F for 30 minutes. Remove the foil and bake uncovered for an additional 20 more minutes or until the cheese is melted and casserole is heated through. Remove pan from oven and let stand 15 minutes before serving. Garnish with fresh tomatoes, olives, avocados, cilantro and sour cream if desired.

  • In a large skillet, cook beef and onion over medium heat until meat is no longer pink. Add garlic; cook 1 minute longer. Drain. Stir in the salsa, beans, enchilada sauce, chilies, taco seasoning and pepper; heat through. , Spread 1 cup meat mixture in a greased 13x9-in. baking dish. Layer with two tortillas, a third of the remaining meat mixture and 1 cup cheese. Repeat layers. Top with remaining tortillas and meat mixture., Cover and bake at 375° for 30 minutes. Steps:

  • Preheat oven to 350°. In a large skillet, cook beef over medium heat until no longer pink; drain. Stir in beans, chilies, taco seasoning and hot salsa., In a greased 13x9-in. baking dish, layer a third of the noodles and meat mixture. Sprinkle with 1 cup of cheese. 8 ounces tomato sauce
1/2 teaspoon ground cumin

4 ounces cream cheese, softened
1/2 cup sour cream
12 ounces colby-monterey jack cheese, shredded

Steps:

  • Preheat oven to 350.
  • Coat a baking dish with non stick spray.
  • Brown ground beef and onion. Drain.
  • Add tomatoes and green chilies, tomato sauce, cumin,salt and pepper. Simmer 15 minutes.
  • In a small bowl combine sour cream and cream cheese.
  • Spread cream cheese mixture on top of the 3 tortillas.
  • Layer in the baking dish tortilla, meat mixture then cheese. Repeat 2 more times.
  • Bake 30 minutes.
  • This can be garnished with diced tomato,chopped green onions, shredded lettuce, black olives or guacamole. I didn't use any garnishes and it was very good.

2 pounds ground chicken breast, available in the packaged meats case
2 tablespoons chili powder
2 teaspoons ground cumin
1/2 red onion, chopped
1 (15-ounce) can black beans, drained
1 cup medium heat taco sauce or 1 (14-oz) can stewed or fire roasted tomatoes
1 cup frozen corn kernels
Salt
8 (8 inch) spinach flour tortillas, available on dairy aisle of market
2 1/2 cups shredded Cheddar or shredded pepper jack
2 scallions, finely chopped

Steps:

  • Preheat the oven to 425 degrees F.
  • Preheat a large skillet over medium high heat. Add 2 tablespoons extra-virgin olive oil - twice around the pan. Add chicken and season with chili powder, cumin, and red onion. Brown the meat, 5 minutes. Add taco sauce or stewed or fire roasted tomatoes. Add black beans and corn. Heat the mixture through, 2 to 3 minutes then season with salt, to your taste.
  • Coat a shallow baking dish with remaining extra-virgin olive oil, about 1 tablespoon oil. Cut the tortillas in half or quarters to make them easy to layer with. Build lasagna in layers of meat and beans, then tortillas, then cheese. Repeat: meat, tortilla, cheese again. Bake lasagna 12 to 15 minutes until cheese is brown and bubbly. Top with the scallions and serve.

1 lb sirloin (or Healthy Choice 96% Fat-Free ground beef)
1/2-1 packet lawry taco seasoning (optional)
1 (16 ounce) can fat-free refried beans
1/2 cup chopped green onion, white and part of green
6 ounces reduced-fat sharp cheddar cheese, grated (or use half reduced-fat Monterey Jack and half Cheddar)
9 slices thick lasagna noodles, uncooked
2 cups milk
thick and chunky bottled salsa
1 1/2 cups light sour cream
1/4 cup sliced black olives (optional)

Steps:

  • Cook beef in a nonstick frying pan until nicely browned.
  • Add taco seasoning, if desired.
  • In a small bowl, blend beans with green onions and half of cheese.
  • Pour 1/3 cup salsa on bottom of a 9x9” baking dish.
  • Place dry lasagna noodles on bottom.
  • Cover with bean mixture and 2/3 cup salsa.
  • Lay another three lasagna strips on top and sprinkle beef, the rest of the cheese and 1/3 cup salsa over them.
  • Lay last three lasagna strips on top, then pour the remaining salsa (2/3 cup) evenly over the top.
  • Bake at 350ºF for 60 minutes or until noodles are tender.
  • Spread sour cream over the top and sprinkle with black olives if desired.

2 (14 1/2 ounce) cans diced tomatoes with mild green chilies, undrained
1/2 cup thick & chunky salsa
3 cups cubed cooked chicken
1 (16 ounce) can refried beans
1/2 cup sour cream
12 uncooked lasagna noodles
3 cups shredded colby-monterey jack cheese
1/2 cup chopped green onion
1/4 cup sliced ripe olives, if desired
1/4 cup chopped fresh cilantro

Steps:

  • Spray 15x12 inch sheet of foil and 13x9 inch glass baking dish with cooking spray.
  • In large bowl, mix tomatoes, salsa and chicken. In medium bowl, mix refried beans and sour cream.
  • Spread about 1 1/4 cups chicken mixture in bottom of baking dish. Top with 4 uncooked noodles, breaking to fit if necessary. Spread with half of bean mixture and 1 1/2 cups chicken mixture. Sprinkle with 1 cup of the cheese, and hald of the onions and olives.
  • Repeat noodle, bean, chicken and cheese layers once. Top with remaining 4 noodles, chicken, onions, olives and cheese. (Be sure top noodles are covered.) Cover with foil; refrigerate at least 8 hours or overnight.
  • Heat oven to 350*. Bake covered lasagna 50 minutes. Uncover baking dish; bake 18 to 22 minutes longer or until bubbly and thoroughly heated. Let stand 10 minutes before serving.Sprinkle with cilantro. If desired, garnish each serving with sour cream, chopped tomato and shredded lettuce.
  • NOTE: If you don't have the tomatoes with green chiles, use a 4.5 oz can of chopped green chiles and plain canned diced tomatoes instead.
