18 medium mushrooms (destemmed and stems diced)
Cooking spray
2 tablespoons olive oil
¼ cup minced small onion (minced)
2 garlic cloves (minced)
½ cup walnuts (chopped)
4 sprigs fresh thyme (cleaned, chopped)
½ cup canned chickpeas
½ cup parmesan (divided)
1 tablespoon parsley (chopped)
2 teaspoons balsamic vinegar ((optional))
¼ teaspoon salt
¼ teaspoon black pepper

Steps:

  • Preheat oven to 400°F with a baking tray inside.
  • In a small saucepan over medium heat, heat the olive oil. Add the onions, mushroom stems and garlic and cook until fragrant and slightly reduced, about 5 minutes. Add the thyme and walnuts, and cook to toast the walnuts lightly, about 1 minute. Remove from heat and set aside.
  • In a small bowl, combine the chickpeas, parmesan cheese, parsley, salt and pepper. Use a fork to combine and mash the chickpeas to form a paste-like texture. Transfer the nut mixture on top of the chickpea mixture and stir to combine.
  • Carefully place the mushrooms on the hot tray and spray with cooking spray. Spoon the filling into the mushrooms, and top with the remaining parmesan cheese.
  • Bake the preheated oven uncovered until the mushrooms are cooked through and the cheese has melted, about 15 minutes. Serve warm.

These Italian Vegetarian Stuffed Mushrooms are a great make-ahead recipe for dinner or an appetizer! They're packed with flavor from the fresh herbs, shallots, garlic, and parmesan cheese.

12 whole mushrooms (about 2 inches in diameter (I used small portobello mushrooms))
1/4 cup extra-virgin olive oil (divided)
1/4 cup shallots (finely diced (or onion))
2 cloves garlic (minced)
3 tablespoons fresh parsley (finely chopped, plus more for garnish)
1/2 cup breadcrumbs
1/4 cup parmesan cheese (fresh grated, see notes)
1/2 teaspoon dried oregano (or 1 teaspoon finely chopped fresh)
kosher salt (to taste)
black pepper (to taste)

Steps:

  • Gently wipe off any excess dirt from the mushrooms with a clean kitchen or paper towel. Don't wash them with water, as this will affect their texture.
  • Remove the stems from the mushrooms. Cut off and discard the tough ends. Finely chop the stems.
  • Heat a skillet (I used nonstick) over medium heat. Add 2 tablespoons olive oil.
  • Add the shallots, garlic, mushrooms, and parsley to the skillet with a pinch of salt. Cook until ingredients are softened, stirring occasionally, about 5-7 minutes.
  • In a medium bowl, mix the sautéed mushroom mixture with the breadcrumbs, parmesan cheese, oregano, and salt + pepper to taste.
  • Place the mushrooms in a baking dish. Stuff them with the mixture, pressing down to get as much in as possible. Use ALL the stuffing- some of it may not fit and fall off the sides, this is OK!
  • Drizzle the remaining two tablespoons olive oil on top of the stuffed mushrooms.
  • Cover the baking sheet with foil. (At this point, you can refrigerate the mushrooms for up to a day to be baked later.)
  • Bake at 375 degrees for 20 minutes. Remove foil and bake 10-15 more minutes, until mushrooms are golden and bubbling.
  • Serve hot or warm.

4 tbsp olive oil (divided)
1 onion minced
4 garlic cloves (minced)
16 oz mushrooms (stems removed and gently cleaned)
2 1/4 tsp Tony Chachere's Creole Seasoning (divided)
1/2 cup panko
1/4 cup roasted red pepper (chopped)
8 oz cream cheese (room temp)
1/2 cup parimigiano (grated)
1/4 cup parsley
1/2 cup Tony Chachere's Ranch Dressing

Steps:

  • Begin by adding 2 tbsp of olive oil to a pan and sauté onions with 1/4 tsp Tony Chachere's Creole Seasoning over medium heat for 15-20 minutes or until lightly caramelized. Add garlic and cook for 2-3 minutes then set mixture aside.
  • Preheat oven to 350F degrees.
  • Toss mushrooms with 2 tbsp olive oil and 1/2 tsp Tony Chachere's Creole Seasoning and set aside.
  • In a bowl, mix together panko, caramelized onions and garlic, roasted red peppers, cream cheese, parmigiana, parsley and 1/2 tsp Tony Chachere's Creole Seasoning.
  • Add a spoonful of the mixture into each mushroom cap and place on a parchment lined baking sheet. Bake for 25-30 minutes or until golden.
  • Remove and serve with Tony Chachere's Ranch Dressing.

Steps:

  • Drizzle a heavy large baking sheet with about 1 tablespoon olive oil, to coat. Spoon the filling into the mushroom cavities and arrange on the baking sheet, cavity side up. Drizzle remaining oil over the filling in each mushroom. Bake until the mushrooms are tender and the filling is heated through and golden on top, about 25 minutes. Serve.

2 teaspoons extra-virgin olive oil
12 large white mushrooms, brushed clean, stems removed and reserved
1/2 cup baby spinach, finely chopped
1/2 onion, minced
2 cloves garlic, chopped
1/2 cup cherry tomatoes, finely chopped
2 tablespoons flat-leaf parsley, chopped
1/8 teaspoon salt, plus additional for sprinkling on mushroom caps
Pinch freshly ground black pepper
3 tablespoons grated Pecorino Romano cheese
3 tablespoons panko (Japanese breadcrumbs)

Steps:

  • Preheat the oven to 325 degrees F. Brush a baking sheet with 1 teaspoon of the oil.
  • Finely chop the mushroom stems and set aside. Place the mushroom caps on the prepared baking sheet and bake for 12 minutes.
  • Meanwhile, heat the remaining 1 teaspoon oil in a medium skillet over medium heat. Add the mushroom stems, spinach, onion, and garlic and saute until the spinach wilts, about 6 minutes. Add the tomatoes and cook for 2 minutes more. Turn off the heat and stir in the parsley, salt, pepper and 2 tablespoons each of the pecorino and panko.
  • Preheat the broiler. Divide the spinach mixture evenly among the mushroom caps. Sprinkle each with the remaining 1 tablespoon pecorino and panko, then broil until golden brown, 2 to 3 minutes. Serve warm.

  • Preheat oven to 350°F. Lightly coat a jelly roll pan with cooking spray.
  • Remove mushroom stems from caps and finely chop stems; reserve caps and set aside.
  • Heat oil in a large skillet over high heat. Sauté mushroom stems, onion, pepper and spinach until tender, about 5 minutes. Remove skillet from heat and stir in remaining ingredients until well-combined.

Steps:

  • Bring water and lentils to a boil in a large saucepan. Cover, reduce heat to low, and simmer until tender, 5 to 7 minutes.

¼ cup panko bread crumbs

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C).
  • Melt 1 tablespoon butter in a skillet over medium heat. Add mushroom caps and saute until soft and browned, about 2 1/2 minutes per side. Transfer to a baking dish.

1 teaspoon butter for greasing, or as needed
1 (16 ounce) package cremini mushrooms
2 (8 ounce) packages cream cheese, softened
2 cups shredded Colby-Jack cheese, divided
1 bunch green onions, thinly sliced
2 teaspoons seafood seasoning (such as Old Bay®)
1 teaspoon Creole seasoning (such as Tony Chachere's®)
½ teaspoon garlic powder
1 pound fresh crabmeat
½ cup Italian-seasoned bread crumbs

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13-inch pan with butter.
  • Wash mushrooms and remove stems. Scrape out mushroom caps to make an ample "bowl" for the filling.
  • Mix cream cheese, 1 cup Colby-Jack cheese, green onions, seafood seasoning, Creole seasoning, and garlic powder together until thoroughly combined. Crumble in crabmeat, making sure there are no large chunks so the consistency works well for stuffing. Mix in bread crumbs.
  • Start forming a ball of stuffing and place it in a mushroom cap, making the mushroom cap form-fit the ball.
